SAUSAGE AND PEPPER PENNE

Sausage and Pepper Penne image

This recipe is the best when made using farmer's sausage, but any sausage links will do. Add the red pepper flakes at the end for a little kick, or leave them out if spice isn't for you.

PENNE WITH COLLARDS,SAUSAGE, AND MUSHROOMS

Penne With Collards, sausage, and Mushrooms image

Adapted from Southern Living. The type of sausage you need is the kind that comes in a long link that you can slice into thin rounds. You may use any flavor of smoked sausage you like - you may even use a chicken or turkey sausage if you prefer.

Provided by HeatherFeather

Categories     One Dish Meal

Time 45m

Yield 8 serving(s)

Number Of Ingredients 9

1 lb spicy smoked sausage, sliced into rounds (such as a spicy Kielbasa)
1 (8 ounce) package fresh mushrooms, sliced
2 garlic cloves, minced
2 teaspoons olive oil, as needed
2 (10 ounce) packages frozen collard greens, chopped, thawed, drained very well
1 tablespoon dried Italian seasoning
2 (14 1/2 ounce) cans chunky tomatoes seasoned with basil garlic & oregano, undrained
1 lb penne pasta, cooked & drained
freshly grated parmesan cheese, to taste

Steps:

  • Prepare pasta according to package directions and plan to have it cooked& ready to go by the end of the cooking process.
  • Brown sausage slices in a large deep pot until browned on each side; remove sausage slices from the pan and drain off any fat.
  • Add oil to the same pot, heat over medium briefly, then add garlic and mushrooms, stirring constantly until mushrooms are tender (be careful not to burn the garlic)- this will take only a few minutes.
  • Return the sausage slices to the pan along with collards, Italian seasoning, and tomatoes with their juices.
  • Cook, stirring as needed, for about 10 minutes.
  • Add the cooked pasta and toss well.
  • Serve with grated Parmesan cheese sprinkled over each serving to taste.

CREAMY SAUSAGE PENNE

Creamy Sausage Penne image

This luscious pasta dish is one I've avoided making recently; it's not exactly a lowfat dinner and I feel guilty serving it to my husband -- neither of us should be eating such a high calorie meal. But it's so, so good! Even though I can't claim it's part of a healthy diet, I hope you try it at least once -- it's a fast, easy dish, after all! I serve this with a simple green salad.

Time 30m

Yield 6 serving(s)

Number Of Ingredients 13

1 lb penne pasta (fusilli or ziti could also be used, but I prefer penne)
3 tablespoons olive oil (preferably extra-virgin)
3 cloves garlic, minced
1 pinch cayenne pepper
1 lb sweet mild Italian sausage
1 cup heavy cream
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon freshly grated nutmeg
3 tablespoons unsalted butter (cut into small bits)
1/2 cup freshly grated parmesan cheese
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh flat leaf parsley

Steps:

  • Bring a large pot of salted water to boil and cook the penne until al dente; drain well and do NOT rinse.
  • After you put the water on to boil, remove sausage meat from the casings, crumble, and set aside.
  • In a large skillet, heat olive oil over medium-high heat.
  • Add garlic and cayenne and saute for approximately 30 seconds, then add sausage meat to skillet.
  • Cook until sausage meat is no longer pink (about 5 minutes or so).
  • Add cream, salt, pepper and nutmeg to skillet and turn heat to high to bring mixture to a boil.
  • Reduce heat and simmer, gently, until the cream reduces and the sauce thickens a bit; it takes about 10 minutes.
  • Place cooked penne in a large serving bowl (it's nice if you warm it first) and pour sauce over; add butter and cheese to bowl and combine all well.
  • Taste; add more salt and/or pepper if you wish.
  • Sprinkle chopped herbs over top and serve.

  • Cook the pasta according to the package directions (boil for 7-10 minutes, or until al dente). Drain the pasta in a colander.
  • While the pasta is cooking, add the sausage links to a large pot along with one tablespoon of olive oil. Cook the sausage over medium heat for about five minutes, or until they are slightly browned and firm enough to slice.
  • While the sausage is cooking, mince the garlic and dice the onion. Remove the sausage from the pot and add the onion and garlic in its place. Sauté the onion and garlic in the pot for 2-3 minutes, allowing the moisture to dissolve the brown bits from the bottom of the pot. Meanwhile, slice the sausage into medallions. Once the onions are soft and transparent, add the sliced sausage back to the pot and cook for about 5 minutes more, or until the sausage is cooked through.
  • Add the can of crushed tomatoes, tomato paste, basil, salt, pepper, and brown sugar to the pot. Stir until the tomato paste is evenly combined with the tomato sauce.
