MINI PENNE WITH SWEET PEPPERS AND PARMIGIANO-REGGIANO

Steps:
- Bring a large pot of water to boil. Season water with salt to taste (optional).
- In a large skillet, gently saute chopped onions in olive oil for five minutes over medium heat.
- Meanwhile dice the peppers into 1/2 inch squares, add to the skillet and saute for three minutes over medium heat.
- Season with salt, pepper and add the broth. Keep cooking until sauce is reduced.
- Meanwhile cook pasta according to package directions, drain and toss with the sauce.
- Stir in chopped basil and cheese before serving.

SUMMER PENNE PASTA
This is an excellent recipe by itself but can easily be personalized. Try different combinations of vegetables or experiment with different pasta shapes.

Steps:
- In a large pot cook penne pasta in boiling salted water until al dente. Drain the pasta, leaving it slightly wet.
- While pasta is cooking, wash the bell peppers and cut them into 1/4 inch strips. In a large skillet over medium heat place 2 tablespoons of olive oil and saute the pepper until soft. Do not allow peppers to brown.
- To the skillet, add the sliced zucchini and yellow squash and saute for 2 minutes. Add chopped mushrooms and minced garlic and saute an additional 2 minutes, stirring frequently. Add the chopped tomatoes and remove from heat.
- Dish pasta portions onto warmed plated. Add sauce to top. Sprinkle with salt and pepper to taste.

- Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
- Heat oil in a large skillet over medium heat, and cook and stir sausage, onion, green bell pepper, red bell pepper, orange bell pepper, and mushrooms until vegetables are tender, about 10 minutes.

Steps:
- Bring a pot of 1 1/2 cups of lightly salted water to a boil, add pasta, and cook for about 10-12 minutes, or until pasta is al dente; drain.
- Heat oil in a saucepan on a medium flame, add the onions and saute until soft and translucent.
- Now add the diced tomatoes and bell-pepper strips, salt, basil, oregano and saute for about 5 minutes until the bell-peppers soften a bit.
- If you like it crispier, saute only for a couple of minutes.
- Remove from heat, toss well with cooked pasta and serve hot with a sprinkling of cheddar cheese!

PENNE PASTA WITH MULTI-COLORED PEPPERS
Which in Canada is Salade de pates au poivron, or so they say. I haven't tried this yet because I'm posting it for the WT 06. In the original recipe by Debra Weber, she says you can use 20 small Nicoise or the Kalmata olives, but it would not let me post that so I'm putting it here. This really sounds good.

- Cook the pasta according to the pasta directions.
- Drain and toss with 2 tablespoons of the olive oil.
- Cool at room tenperature.
- Heat 2 tablespoons of olive oil in a large saute pan, add the pepper slices and cook for about 10 minutes.
- Drain them on paper towels and reserve.
- Put the basil and garlic in the bowl of a food processor.
- Add the rest of the olive oil, salt and pepper and puree.
- Pour the basil "sauce" over the pasta and toss.
- Add the reserved peppers and olives and toss together.
- To serve divide the penne/pepper salad among 4 plates and garnish each with reserved basil leaves.

- Heat 1/3 cup of olive oil in a large skillet over medium heat.
- Add pancetta and cook, stirring, until golden, 2 to 3 minutes.
- With a slotted spoon transfer pancetta to a plate.
- Place skillet back on medium heat.
- Add onion, cook, stirring, 2 to 3 minutes then add peppers.
- Cook, stirring, until peppers begin to color and soften, 5 to 6 minutes.
- Return pancetta to skillet, add tomatoes and season with salt and pepper.
- Reduce heat to medium-low and cook uncovered, stirring occasionally, until peppers are tender and juices in skillet have thickened, 15 to 20 minutes.
- Add a little water or broth if juices should reduce too much.
- Taste and adjust seasoning and turn heat off. Makes 2 and 1/2 to 3 cups of sauce.
- Cook pasta in plenty of salted boiling water until 'al dente'.
- Put skillet back on medium heat.
- Add remaining olive oil.
- Stir to blend.
- Drain pasta and add to skillet with sauce.
- Season lightly with salt.
- Mix quickly over low heat until pasta and sauce are well combined.
- Taste, adjust seasoning and serve.
- That's it!
