CHICKEN & PENNE WITH BASIL PARMESAN CREAM SAUCE

1 ½ pounds boneless skinless chicken breasts
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 tablespoons extra virgin olive oil
6 tablespoons butter
4 ½ tablespoons all-purpose flour
3 cups heavy cream
3 bay leaves
1 ½ cups freshly grated Parmesan cheese
½ teaspoon kosher salt
½ teaspoon white pepper
8 large leaves fresh basil*
¼ teaspoon fresh nutmeg
½ teaspoon dry mustard
Large pinch red pepper flakes
1 pound penne pasta
Additional chopped fresh basil for garnish
Additional grated Parmesan cheese for garnish

Steps:

  • Fill a large pot of salted water and heat to a boil but do not cook the pasta yet.
  • Butterfly the chicken breasts so they are the same thickness. (See How to Butterfly a Chicken Breast)
  • Coat both sides with the salt and pepper.
  • Heat a deep wide saute pan with the olive oil over medium high heat.
  • Once hot, add the chicken breasts and count 30 seconds, then cover, lower heat to the lowest flame and continue to cook chicken, flipping once the first side is cooked, until no longer pink inside. Depending on the thickness of the chicken, this should take 5-10 minutes to cook on low.
  • Remove cover and place the chicken breasts on a cutting board. Pour off but save liquid in the pan.
  • Over medium heat add the butter and once melted, add flour and cook for three minutes, stirring often.
  • Slowly add the cream whisking as you add.
  • Add bay leaves, Parmesan cheese, salt, pepper, whole basil leaves, nutmeg, mustard and pepper flakes. Bring to a bubble then lower to a simmer and simmer ten minutes, stirring often.
  • While cream sauce cooks, add Penne pasta to the hot water and cook to just short of al dente. Still should be a little bit chewy.
  • Strain the cream sauce through a fine sieve and discard the solids. Taste and salt if needed. Pour the sauce back into the pan, reserving one cup that will be drizzled over each portion when serving.
  • Slice the cooked chicken breast into strips and add to the sauce. Add the liquid that you saved after you cooked the chicken.
  • Use a spider or strainer and scoop out and add the pasta to the sauce, but do not discard the pasta water yet.
  • Stir the mixture over low to medium heat until the pasta is fully cooked. Add a little pasta water if it starts to dry out a little.
  • Serve with the reserved sauce, chopped basil and grated Parmesan cheese.

1 bunch fresh basil (about 1 cup packed), divided
1/2 cup chopped walnuts, divided
2/3 cup fat-free chicken broth, divided
4 cloves garlic, peeled
12 oz. penne pasta (about 4 cups), uncooked
1 Tbsp. olive oil
3/4 lb. boneless skinless chicken breasts, cut into strips
2 cups broccoli florets
2 cups red pepper strips (about 2 small peppers)
2 Tbsp. HEINZ Balsamic Vinegar

Steps:

  • Cut enough of the basil into thin slices to measure 2 Tbsp.; set aside. Place remaining basil in blender container. Add 1/4 cup of the walnuts, 1/3 cup of the chicken broth and the garlic; cover. Blend 30 to 1 min. or until smooth.
  • Cook pasta according to package directions. Meanwhile, heat oil in large skillet on medium-high heat. Add chicken, broccoli and peppers; cook and stir 5 min. or until chicken is lightly browned. Add remaining 1/3 cup broth; cook an additional 6 to 8 min. or until chicken is cooked through and vegetables are crisp-tender, stirring occasionally.
  • Drain pasta. Add to ingredients in skillet along with the basil sauce; stir until well blended. Drizzle with the vinegar; mix lightly. Sprinkle with the reserved sliced basil and remaining 1/4 cup walnuts.

2 tablespoons canola oil
1/4 large Spanish onion, finely diced
4 cloves garlic, crushed with a sprinkle of kosher salt and finely chopped to a paste
One 28-ounce can plum tomatoes
8 ounces penne pasta
Kosher salt and freshly ground black pepper
3/4 cup grated Parmigiano-Reggiano, plus 3/4 cup, for garnish
1/4 cup fresh flat-leaf parsley, finely chopped
12 fresh basil leaves, torn
1/4 to 1/2 teaspoon Calabrian red chile flakes
Extra-virgin olive oil, for drizzling
1/2 cup fresh ricotta, for garnish

Steps:

  • Heat the canola oil in a large high-sided saute pan or saucepan over high heat until it begins to shimmer. Add the onions, garlic and tomatoes with the juice. Mash the tomatoes with a potato masher in the pan and bring to a boil. Reduce the heat to a simmer and cook until the tomatoes begin to soften, about 20 minutes.
  • Meanwhile, bring a large pot of water to a boil, add the penne and 2 tablespoons salt and cook until al dente, 8 to 10 minutes. Reserve 1 cup of the pasta water. Drain the pasta.
  • Mash the tomatoes again until coarsely chopped. Add 1/4 to 1/2 cup of pasta water to thin out the sauce and continue to cook, stirring occasionally, until thickened, about 20 minutes; season with salt and pepper. Thin with additional pasta water if necessary.
  • Transfer the pasta to the sauce; season with salt and pepper. Add some of the Parmigiano-Reggiano to the pan and combine. Cook the pasta in the sauce for 1 to 2 minutes, adding more grated cheese as the pasta cooks. Add some of the basil and parsley and the chile flakes and then drizzle with olive oil. Season with salt and pepper.
  • Transfer the pasta to a large shallow serving dish and top with freshly grated cheese. Top with the ricotta and drizzle with 2 tablespoons olive oil. Garnish with the remaining basil and parsley; serve immediately.

1 large bunch fresh basil
2 cloves garlic
1/4 cup pine nuts
1/2 cup extra-virgin olive oil
1/2 cup freshly grated Parmesan
1/2 teaspoon kosher salt, plus more for seasoning
Freshly ground black pepper
1 pound penne rigate or other ridged small tube pasta

Steps:

  • Meanwhile, pluck the basil leaves from the stems (you should have about 2 cups leaves). Wash the leaves in a large bowl of cold water and dry in a salad spinner or pat dry with paper towels. Smash and peel the garlic.
  • Put the basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped. With the processor running, gradually add the olive oil and process until the pesto is smooth. Transfer the pesto to a large bowl and stir in the cheese. Season with the salt and some pepper.
  • Bring a large pot of cold water to a boil over high heat and salt it generously. Add the penne and boil, stirring occasionally, until al dente, about 8 to 10 minutes. Drain in a colander and save about 1/4 cup pasta cooking water. Add the pasta to the bowl. Use tongs and toss with enough of the cooking water so the pesto coats the pasta evenly. Season with salt and pepper. Serve warm.
  • Upgrades: a. Make the pesto creamy by adding 1/4 cup ricotta cheese when processing the basil, garlic, and pine nuts. This is great with tortellini or ravioli. b. Top dressed pesto pasta with 1/2 pound diced large or halved small fresh mozzarella balls (bocconcini), 3 medium tomatoes cut in large chunks, and 1/2 cup pitted black olives, (we like kalamata for this), roughly chopped. c. Add cooked 1 to 2 cups chicken or shrimp.
  • Twists on Pesto: In place of basil, try the following combination: 1 cup parsley, 1 cup fresh spinach leaves, 2 tablespoons fresh rosemary leaves, 2 tablespoons fresh thyme leaves. Substitute walnuts for the pine nuts

PENNE WITH CHICKEN AND FRESH HERB SAUCE

This recipe is adapted from cooking pleasures magazine. Please use fresh herbs in this, dried just won't give the intended result. Originally, this was entered as a private recipe until basil came into season and I was able to try it myself. I just made this for dinner tonight, and it was really good. Although the garlic sounds like a lot, I could barely taste it, so don't be afraid to of the amount called for. This sauce is fairly mild, so I'd advise tasting it as it's warming, and adding whatever you think will please your family's tastes. After sampling this recipe once, I plan to make it again with different herbs, as they are in season. One combination that comes to mind in basil, thyme and organo. Please note any combinations you try in your review, so that we all have a dish that's not just for the middle of the summer. Last note, this calls for making the sauce in a blender - I can't find mine so I used the food processor, which worked perfectly.

3 tablespoons all-purpose flour
3 tablespoons butter
2 cups skim milk
1 pinch white pepper
1 1/2 teaspoons italian seasoning

2 yellow bell peppers, chopped or 2 orange bell peppers
1 zucchini, chopped
12 ounces fresh broccoli, chopped

Steps:

  • Preheat oven to 350 degrees.
  • In a pan cook chopped chicken with garlic and other seasonings you like. (I used a little Jamaican Jerk seasoning.).
  • Prepare the white sauce. Place butter in small saucepan (preheated) over medium heat. Once the butter foams, add flour and stir for 1 minute (try not to let it turn brown). Add milk to the mix and continue stirring until it starts to bubble. Reduce heat; simmer for 10 minutes. Add and stir in pepper, Italian seasoning, and parmesan cheese.
  • While white sauce is simmering, boil water for penne. Cook penne about 8-9 minutes and for the last minute add the chopped broccoli.
  • In a large bowl, combine pasta, broccoli, chicken and chopped veggies. Stir white sauce inches Pour all into a large casserole dish. Sprinkle on cheese. Cover with foil or lid. Bake for 20-30 minutes.
