1 package (12 ounces) whole wheat penne pasta
1 pound lean ground beef (90% lean)
2 medium zucchini, finely chopped
1 large green pepper, finely chopped
1 small onion, finely chopped
1 jar (24 ounces) spaghetti sauce
1-1/2 cups reduced-fat Alfredo sauce
1 cup shredded part-skim mozzarella cheese, divided
1/4 teaspoon garlic powder
Minced fresh parsley, optional

Steps:

  • Cook penne according to package directions. Meanwhile, in a Dutch oven, cook the beef, zucchini, pepper and onion over medium heat until meat is no longer pink, breaking it into crumbles; drain. Stir in the spaghetti sauce, Alfredo sauce, 1/2 cup mozzarella cheese and garlic powder. Drain penne; stir into meat mixture., Transfer to a 13x9-in. baking dish coated with cooking spray. Cover and bake at 375° for 20 minutes. Sprinkle with remaining mozzarella cheese. Bake, uncovered, 3-5 minutes longer or until cheese is melted. If desired, top with parsley.

8 oz penne pasta
½ lb ground beef
½ medium onion, chopped
1 (24-oz) jar marinara sauce
½ cup sour cream
6 oz sliced Provolone
4 oz shredded or sliced Mozzarella
¼ cup grated Parmesan
chopped parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain.
  • Meanwhile, in a large skillet, brown the ground beef. Add the onion and cook until softened. Add the spaghetti sauce and allow to simmer for 15 minutes. Stir in the sour cream. Add the drained pasta and stir to coat.
  • Preheat the oven to 350F. Spray a 2 quart baking dish with nonstick cooking spray. Pour half of the pasta into the baking dish. Top with half of the Provolone and half of the Mozzarella. Pour the remaining pasta on top and top with the remaining Provolone and Mozzarella, and sprinkle the Parmesan on top.
  • Bake until the cheese is melted and bubbly, about 30 minutes. Sprinkle with chopped parsley before serving.

  • Heat oven to 350°F. In 5-quart Dutch oven, cook beef and onion over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. Stir in cooked pasta, salt, pepper and pasta sauce.
  • In medium bowl, mix ricotta cheese, egg and 3/4 cup of the mozzarella cheese. Spray 13x9-inch baking dish with cooking spray.

1 tablespoon olive oil
1 pound lean ground beef ((may use 1/2 sausage))
salt and pepper
1/2 teaspoon red pepper flakes
1 yellow onion, diced
2 medium carrots, peeled and thinly sliced
1 red bell pepper, chopped
6-8 garlic cloves, minced
1 28 oz. can crushed tomatoes in puree
1 15 oz. can fire roasted tomatoes with seasonings, drained
1 tablespoon tomato paste
1 1/2 tsp EACH chicken bouillon, sugar, dried basil
1/2 tsp EACH dried oregano, dried parsley
3 cups water
12 ounces uncooked penne ((about 3 1/2 cups))
1/2 cup heavy cream
1/2 cup freshly grated Parmesan cheese
1/2 cup freshly grated sharp cheddar cheese
1 cup freshly grated mozzarella cheese

Steps:

  • Heat 1 tablespoon olive oil in a large nonstick, oven proof skillet or Dutch oven over medium high heat. Add meat and season with 1/2 teaspoon salt, 1/2 teaspoon pepper and 1/2 teaspoon red pepper flakes. Add onions and carrots and cook until meat is browned.
  • Add bell pepper and garlic and cook for 1 minute. Stir in crushed tomatoes, fire roasted tomatoes, tomato paste, chicken bouillon, sugar, and all seasonings and bring to a simmer. Simmer gently uncovered for 10 minutes, stirring occasionally.
  • After 10 minutes, stir in the water and pasta. Cover, increase heat to medium-high and cook at a vigorous simmer (you may need to decrease heat), stirring occasionally and replacing lid, just until the pasta is al dente, 12-16 minutes. Taste pasta often as reaches the end of cooking to ensure you don't overcook your pasta.
  • Stir in the cream, Parmesan, and cheddar until well combined. Top the pasta evenly with mozzarella. Transfer the skillet to the oven (on the middle rack) and broil until the cheese is melted and golden, 2-3 minutes. Let sit at least 5 minutes before serving.
  • This makes wonderful leftovers - I think the flavors are even better the next day!

  • Add in all remaining ingredients; bring to a boil and simmer (UNCOVERED) on low heat for about 1-1/2 hours.
  • Season with salt and pepper then remove the bay leaf.
  • At this point you can cool then refrigerate for up to 2 days.

  • Grease a medium casserole dish (or a 13 x 9-inch baking dish).
  • In a large skillet cook the ground beef until well browned, breaking up with a spoon until crumbled; drain fat.
  • To the skillet add in about 5 cups prepared tomato sauce (more is okay, or just go ahead and use the whole amount of sauce if desired more sauce will never hurt lol!) cook for about 15-20 minutes on medium-low heat.
  • Remove from heat and add in 1-1/2 cups mozzarella cheese; stir with wooden spoon to combine.
  • Add in the cooked penne pasta; toss to combine with sauce and cheese.
  • Transfer to baking dish.
  • Bake for about 20 minutes.
  • Remove from oven and sprinkle with Parmesan cheese then about 1/2 cup (or more) mozzarella cheese, return to oven and cook 5-8 minutes more or until the cheese is melted.

Steps:

  • Preheat oven at 400 degrees Fahrenheit. Grease a deep rectangular baking dish (9x13) and set aside.
  • Boil water and cook the penne pasta not more than 10 minutes. Make sure not to fully cook the pasta. Leave a little bit of crunch to it so it won't get overcook when you bake it later.
  • While your pasta is cooking, heat oil in a pan over medium heat. Brown the ground beef. Add onions and garlic. Cook until translucent and fragrant. Get rid of the excess oil - important!
  • Add the marinara sauce. Add salt and pepper to taste. You may add brown sugar to balance the taste (optional).
  • Drain pasta and transfer to the baking dish. Pour in the sauce mixture. Toss. Add 1/2 cup of the shredded cheese. Toss again.
  • Top pasta with the remaining cheese making sure the top is fully covered with cheese. Bake for 10 minutes. You can broil for a minute or 2 before serving.

1 tablespoon butter
12 oz. penne pasta, cooked and drained
1 lb. ground beef
2 cloves garlic, diced
1 small onion, diced
2 (28 oz.) cans of whole tomatoes, drained
1 ( 8 oz.) can tomato sauce
1 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup heavy cream
1 teaspoon sugar
1/4 cup fresh chopped basil

Steps:

  • Cook pasta according to package directions. Drain and put back in the pot. Swirl in 1 tablespoon of butter.
  • While the pasta is cooking, using a large skillet, cook onions in olive oil for about 3 minutes. Add garlic the last 30 seconds.
  • Add the ground beef to the skillet with the onions and garlic. Brown beef breaking up pieces with a spatula as it cooks. Lightly salt and pepper beef while browning. Drain off any extra grease.
  • Drain the tomatoes of liquid and add to the skillet. Break up tomatoes using your fingers or with a spatula. Pull of any hard pieces and the tops of the tomatoes.
  • Add the tomato sauce, oregano, sugar, salt and pepper. Stir well to combine. Bring to a light simmer and cook for 25 minutes, stirring once or twice.
  • Stir in the heavy cream and basil. Add the pasta and toss to combine. Serve with grated Parmesan cheese.
