1 pound penne pasta (or spaghetti, if you prefer)
1/4 cup olive oil
2 cloves garlic (peeled and finely minced)
Crushed red pepper (to taste, or, 1 to 2 fresh hot chile peppers, stemmed, seeded, and finely sliced)
2/3 pound plum tomatoes (peeled, seeded, and chopped, or use a drained 1-pound can of tomatoes)
5 to 6 fresh basil leaves (chopped)
Fine sea salt (to taste)
1 1/4 cups grated Pecorino Romano cheese (or, if you find it too sharp, 2/3 cup each of grated Parmigiano-Reggiano and Pecorino Romano, mixed)
Optional: 1 medium onion (peeled and finely chopped)

3 tablespoons olive oil, divided
1 medium red onion, thinly sliced
2 to 3 dried hot chiles, finely chopped
4 garlic cloves, minced
1 can whole plum tomatoes, undrained
1 package (16 ounces) uncooked penne pasta
1 teaspoon red wine vinegar
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons dry bread crumbs
Optional: fresh minced thyme and crumbled goat cheese

Steps:

  • In a large skillet, heat 2 tablespoons olive oil over low heat. Add onion, chilies and garlic; cook and stir until fragrant, 2-3 minutes. Add the tomatoes, gently breaking up with the back of wooden spoon; cook until tender over medium heat, about 10 minutes., Meanwhile in a large saucepan, cook penne according to package directions for al dente. Drain pasta, reserving 1/2 cup pasta water. , Add vinegar to thickened tomato sauce; season with salt and pepper. To make breadcrumb topping, heat remaining olive oil over medium heat in second skillet. Add breadcrumbs and fresh thyme, if desired; fry until crispy, 2-3 minutes. Remove from heat., Add drained pasta and reserved pasta water to tomato sauce; toss to coat. Top with fried breadcrumbs. If desired, drizzle with additional olive oil and garnish with fresh herbs and cheese.

This, Mario Batali wrote in 2013 in The Times, is one of his late-night favorites. Its uncomplicated nature lends itself to an after-midnight feast. It's basically pasta with tomato sauce and cheese, but red pepper flakes give the sauce a delicious kick.

3 tablespoons kosher salt
4 tablespoons extra-virgin olive oil, plus 4 more tablespoons
1/2 cup tomato paste
1 tablespoon hot red-pepper flakes
1 1/2 cups chopped tomatoes, like Pomì
1 pound penne
Maldon or other flaky sea salt
Freshly grated Parmigiano-Reggiano for serving

Steps:

  • Bring 6 quarts of water to a boil in a large pot, and add 3 tablespoons kosher salt.
  • Meanwhile, put 4 tablespoons olive oil in a large sauté pan over medium heat, and then add the tomato paste and pepper flakes; reduce the heat to low and stir just until fragrant, about 4 minutes. Stir in the tomatoes, and remove from the heat.
  • Drop the pasta into the boiling water, and cook until al dente. Drain the pasta, reserving 1/4 cup of the pasta water.
  • Add the pasta and the reserved pasta water to the tomato sauce, stir and toss over medium heat until the pasta is well coated. Season with salt if necessary, then add the remaining oil, tossing well. Serve immediately, with grated Parmigiano-Reggiano on the side.

1 pound ground beef chuck
½ cup panko bread crumbs
¼ cup chopped flat-leaf parsley
1 egg white
salt and ground black pepper to taste
1 tablespoon vegetable oil
3 ½ fluid ounces extra-virgin olive oil
¾ cup sliced white button mushrooms
5 cloves garlic, minced
1 ½ teaspoons red pepper flakes
1 (15 ounce) can diced tomatoes
2 fresh tomatoes, diced
salt to taste
2 teaspoons white sugar
1 (16 ounce) box penne pasta
¼ cup chopped flat-leaf parsley

Steps:

  • Mix beef, panko, 1/4 cup parsley, egg white, salt, and black pepper in a large bowl until combined. Form mixture into 12 meatballs.
  • Heat vegetable oil in a large skillet; pan-fry meatballs in hot oil until browned on all sides, about 7 to 10 minutes. Remove meatballs from heat.
  • Heat olive oil in a 6-quart Dutch oven or a large skillet over medium heat. Cook and stir mushrooms in hot oil until tender, about 5 minutes. Reduce heat to medium-low and add garlic and red pepper flakes. Cook and stir until garlic is golden, about 5 minutes more. Stir canned and fresh tomatoes into mushrooms and season with salt.
  • Drop meatballs into tomato sauce and stir in sugar; bring to a boil over medium heat. Reduce heat to medium-low and simmer uncovered until sauce is reduced and meatballs are no longer pink in the center, about 45 minutes.
  • Meanwhile, fill a large pot with lightly salted water and bring to a boil. Stir in penne and return to a boil. Cook pasta uncovered, stirring occasionally, until cooked through but still firm to the bite, about 11 minutes. Reserve 1 cup cooking water, then drain pasta.
  • Stir penne pasta into meatball sauce; toss to coat. Stir pasta water into mixture if sauce becomes too dry. Sprinkle with remaining 1/4 cup parsley to serve.

One thing I learned in my years living in the Canarsie section of Brooklyn, NY was how to cook a good Italian meal. Here is a recipe I created after having this dish in a restaurant. Enjoy!

½ cup olive oil, divided
6 cloves garlic, sliced
1 teaspoon red pepper flakes
1 (28 ounce) can diced tomatoes with garlic and olive oil
½ cup tomato sauce
1 bunch fresh basil, chopped
1 (12 ounce) package dried penne pasta
2 eggs
2 cups bread crumbs
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
1 pound thin chicken breast cutlets

Steps:

  • Heat 1/4 cup of olive oil in a large skillet over medium heat. Add the garlic, and saute for a few minutes. Sprinkle in the red pepper flakes, and saute for another minute. Pour in the diced tomatoes and tomato sauce, and add the basil. Simmer for about 20 minutes, stirring occasionally.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Add penne pasta, and cook for 8 minutes, or until tender. Drain.
  • In a small bowl, whisk eggs with a fork. Place bread crumbs in a separate bowl. Stir the garlic powder, salt and pepper into the bread crumbs. Dip chicken cutlets into the egg, then press into the bread crumbs until completely coated.
  • Heat remaining olive oil in a large skillet over medium heat. Fry chicken for about 5 minutes per side, or until the coating is a nice dark brown color.
  • Remove chicken, and cut into slices. Toss the chicken slices into the sauce, and simmer for about 10 minutes. Stir in the cooked penne, simmer for a few more minutes to soak up the flavor, then serve.

1 tbsp extra virgin olive oil
2 garlic cloves, sliced
½-1 tsp chilli flakes
2 x 400g cans chopped tomatoes
300g penne
a handful basil leaves, torn

Steps:

  • Heat the oil in a frying pan over a medium heat and fry the garlic and chilli flakes for 2-3 mins until fragrant and the garlic is lightly golden. Tip in the chopped tomatoes and bring to a simmer. Cook for 10 mins until the mixture has slightly thickened. Season well.
  • Cook the penne in a pan of boiling salted water for 10 mins until al dente. Drain, reserving a mugful of the pasta cooking water.
  • Tip the pasta into the sauce, scatter with most of the basil and toss to combine. Add a splash of the reserved pasta cooking water to help the sauce coat the pasta, if needed. Scatter with the remaining basil to serve.

A delicious pasta dish, with lots of flavor. It has a bit of a kick to it, so you may want to adjust red pepper flakes and chili peppers, to taste, if needed. I received this from a friend at my bridal shower. Note that the time needed to cook is dependent upon how thick you like your sauce, which affects the simmering time.

1 tablespoon olive oil
1 cup onion, diced
1 -2 garlic clove, diced
1/2 teaspoon salt
1 teaspoon red pepper flakes
1/2 cup red bell pepper, diced
1/2 cup dry white wine
1 (28 ounce) can crushed tomatoes, with juice
ground black pepper, to taste
1 tablespoon sun-dried tomato pesto or 1 tablespoon sun-dried tomato puree
1 tablespoon tomato paste (optional, use if you want to thicken sauce)
1 -2 fresh whole red chili pepper
1 tablespoon fresh basil, chopped and divided
1 tablespoon fresh parsley, chopped and divided
fresh parmesan cheese, grated, to taste (for garnish)
16 ounces penne pasta

Steps:

  • Heat olive oil in skillet over medium heat. Saute onion, garlic, and salt until tender, about 5 minutes.
  • Stir in red pepper flakes and bell pepper, and cook for about 2 minutes.
  • Add wine and reduce, scraping up any bits on the bottom of the pan and mixing them inches.
  • Pour in crushed tomatoes and juice, pepper, sun-dried tomato pesto or puree, and the optional tomato paste, if desired.
  • Bring sauce to a boil, add the whole red chili peppers, and reduce to a simmer.
  • Stir occasionally, until sauce has reduced to desired thickness. I usually simmer about 30 minutes.
  • Meanwhile, prepare penne according to package directions.
  • Remove chili peppers from sauce when ready, and stir in half of the basil and parsley.
  • Spoon sauce over top of pasta to serve, and garnish with remaining basil, parsley, and fresh Parmesan.

Angry penne - the spicy favourite of the Italian cuisine.

Number Of Ingredients 12

3 tsp oregano
1 tsp thyme
3 tsp dried basil
3 garlic cloves, chopped
2 dried chilli peppers
400g tin of cherry tomatoes in sauce
2 tbsp balsamic vinegar
handful of fresh basil
handful of grated parmesan cheese
pinch of salt and black pepper to taste
olive oil
300g penne or other short pasta

Steps:

  • Heat 2 or 3 tbsp of olive oil in a tall pan, add the dried oregano and thyme, chopped garlic and crushed chilli peppers. Fry for few minutes. Don't let the garlic turn brown.
  • Add the tin of cherry tomatoes into the pan. Simmer uncovered for about 8 minutes and let the excess water evaporate.
  • Reduce the heat, cook for another few minutes, stirring occasionally and crushing the tomatoes into the sauce.
  • Add pinch of salt and black pepper to taste. Add both dried and fresh basil; 1 tbsp of olive oil and 2 tbsp of balsamic vinegar. Stir.
  • In the meantime, cook the penne according to the packet instructions.
  • Mix the pasta with sauce and garnish with fresh basil leaves and handful of grated parmesan cheese.

This is my all-time favorite pasta dish, especially since it's non-dairy. I like it hot, but you can adjust the red pepper flakes to make it as hot or mild as you like.

1 (28 ounce) can crushed tomatoes
1 clove garlic, minced
1 small onion, chopped
2 tablespoons olive oil
salt & pepper
1/2 teaspoon oregano
1/2 teaspoon chopped fresh basil
1/2 teaspoon chopped fresh parsley
1 teaspoon red pepper flakes
1 lb penne (or other favorite pasta)

Steps:

  • Saute garlic and onion in olive oil until transparent.
  • Add crushed tomatoes and spices and cook over low heat, stirring occasionally, about 30 minutes.
  • Cook pasta in lightly salted, boiling water until cooked el dente.
  • Drain pasta and place back in the pot and add some of the sauce and gently toss until coated.
  • While serving, add additional sauce if desired and top with freshly grated Parmesan cheese.
  • Left over sauce can be refrigerated or frozen and reheated.
  • Use a bit more red pepper if you prefer it hotter.
