Peking Pork Chops - The tenderness and juiciness of the pork coupled with the sweet, tart and smoky taste of the sauce makes this a perfect dish to serve with steamed rice.

1 lb. (0.4 kg) pork tenderloin or pork spare ribs, cut into 1/2-inch thick slices
oil for deep frying
1 teaspoon toasted sesame seeds, optional
1 egg
1 tablespoon cornstarch
1/2 teaspoon Shaoxing wine
1/2 teaspoon salt
1 1/2 tablespoons tomato ketchup
1/2 tablespoon plum sauce
1/2 tablespoon chili sauce
1/4 teaspoon sweet bean sauce or hoisin sauce
1 tablespoon Worcestershire Sauce
1 1/2 tablespoons black vinegar
1 1/2 tablespoons sugar
1 pinch Chinese five-spice powder, optional
2 tablespoons water

Steps:

  • Pound pork slices with mallet, or with the back of a kitchen knife until tender. Set aside. In a bowl, mix the Marinade ingredients, add in pork slices, mix well, and marinade for 30 minutes.
  • In a separate bowl, mix the Sauce ingredients. You may add more or less sugar, or other sauce ingredients to your own liking. Set sauce mixture aside.
  • Heat up a wok with enough oil, deep-fry pork slices for 5 minutes, or until color changes to golden brown and slightly crispy. Dish up, drain with paper towels and set aside.
  • Bring sauce to a quick boil, add deep-fried pork, and stir until all the meat is well coated with sauce. Dish up and sprinkle the pork chops with some toasted sesame seeds. Serve over a bowl of hot steamed rice.

2 tablespoons garam masala or 2 tablespoons curry powder
1 green onion, finely chopped
2 garlic cloves, minced
1 tablespoon grated fresh ginger
1 tablespoon cooking oil
1/8 teaspoon cayenne pepper
1 lb pork tenderloin, cut into 1 to 1 1/2 inch cubes (I have used other cuts of pork, because it's marinated overnight, can also use lamb, beef, chicken a)
1/2 cup plain yogurt
2 tablespoons snipped fresh cilantro

Steps:

  • Combine garam masala, onion, ginger, oil, and cayenne pepper in a medium mixing bowl.
  • Stir in pork, working spice mixture into meat with fingers.
  • Thread the meat onto metal skewers, leaving 1/4 inch between pieces, cover and refrigerate for 1 to 24 hours.
  • Place pork skewer on the lightly oiled rack of the grill directly over medium heat.
  • Grill for 12 to 15 minutes or until the juices run clear, turning once.
  • Meanwhile, stir together yogurt and cilantro in a small serving dish.
  • Cover and chill until serving.
  • To serve, use a fork to remove grilled pork cubes from skewers.
  • Arrange on a tray around yogurt mixture.
  • Serve pork cubes with toothpicks.

1 lb ground lean pork
1/2 cup fine dry breadcrumb
2 tablespoons hoisin sauce
2 garlic cloves, minced
1 green onion, minced
1 egg, lightly beaten
3/4 cup hoisin sauce
3/4 cup red currant jelly
1 tablespoon lemon juice
2 garlic cloves, minced
1 tablespoon grated gingerroot or 1 teaspoon ground ginger
sesame seeds

Steps:

  • PORK BITES: In a bowl combine ground pork bread crumbs hoisin sauce garlic green onion and egg: mix well.
  • Shape into 1 inch balls.
  • Place meatballs on prepared baking sheet and bake in preheated oven for 20 minutes or until browned.
  • Transfer to slow cooker.
  • PEKING SAUCE: In a 4 cup measure or bowl combine hoisin sauce red currant jelly lemon juice garlic and ginger; mix well and pour over meatballs.
  • Cover and cook on low for 5 to 6 hours.

1/2 red bell pepper, cut in 1/4-inch strips
1/2 green bell pepper, cut in 1/4-inch strips
1/2 onion, cut in 1/4-inch wedges
4 pork chops, 1-inch thick
1 teaspoon grated fresh ginger
1/4 cup soy sauce
2 tablespoons hoisin sauce
1/4 cup brown sugar
1/4 cup ketchup
1 garlic clove, minced fine
salt, to taste
fresh ground black pepper, to taste
1 (8 ounce) can pineapple chunks, drained (packed in juice)

Steps:

  • Place red pepper, green pepper and onion in bottom of a crock pot. Place pork chops on top.
  • Mix together ginger, soy sauce, hoisin sauce, brown sugar, ketchup, garlic, salt and pepper. Pour over pork chops.
  • Cook on low 4-6 hours.
  • Add pineapple chunks and cook 1 hour longer. Serve over cooked white rice.

1 egg
1/3 cup chopped onion
1/3 cup breadcrumbs
4 teaspoons ketchup
salt and pepper, to taste
3/4 lb ground pork
1 (14 ounce) package puff pastry, thawed
1 egg, lightly beaten

Steps:

  • Beat egg and then add next five ingredients. (Add additional spices and hot sauce if desired if these are not for the kids). Mix well.
  • Add ground pork and mix well. Divide into 4 equal portions and shape into 10 1/2 inch long roll. Place on wax paper lined baking sheet. Freeze until firm-approx. 2 hours.
  • Roll out 1/2 of the puff pastry on a floured surface to a 10 inch square. Keep remaining pastry chilled. Cut square into 2 equal rectangles. Place 1 pork roll at the edge of the long side of 1 rectangle. Brush seem with beaten egg and roll up. Brush top with beaten egg then cut into 1 inch slices and arrange slices on baking sheet.
  • Repeat with remaining pastry and filling.
  • Bake at 400°F for 20-25 minutes or until golden.
  • Freezes great!

1 cup white vinegar
1/4 cup soy sauce
1/4 cup ketchup
1/4 teaspoon sesame oil
2 tablespoons dry sherry or 2 tablespoons rice wine
2/3 cup flour
2/3 cup cornstarch
4 cups vegetable oil
6 -8 thin cut pork chops

Steps:

  • In large, deep skillet, bring water to a boil with sugar and vinegar; whisk until sugar dissolves.
  • In small bowl, mix soy sauce, ketchup, and sesame oil until smooth; whisk into vinegar mixture.
  • Bring to boil, then reduce to simmer until syrupy.
  • Mix flour and cornstarch together in medium size shallow dish; set aside.
  • Season pork with salt and pepper.
  • Dredge in sherry (or rice wine).
  • Then dredge in flour mixture. (Dredging process may be repeated if thicker crust is desired).
  • Heat oil in large pot to 350 degrees.
  • Fry two pork pieces at a time about 1-2 minutes on each side; drain on paper towels.
  • Repeat frying process on all pieces and drain again.
  • Transfer meat to sauce and serve.

Tender pork bites swirled among a creamy, tasty sauce ready to be tossed upon a mound of potatoes, pasta or rice for a quick and easy meal. Serve this with green beans, broccoli or a salad. This recipe comes from the Augusta Chronicle and Kelly Calloway. You can use bits of pork sold at your grocery store or cut up a tenderloin. A little finely chopped rosemary would be a good addition to the sauce as would sauteed sliced mushrooms. You can also substitute chicken or beef bites too.
