Peking Pork Chops - The tenderness and juiciness of the pork coupled with the sweet, tart and smoky taste of the sauce makes this a perfect dish to serve with steamed rice.

- Pound pork slices with mallet, or with the back of a kitchen knife until tender. Set aside. In a bowl, mix the Marinade ingredients, add in pork slices, mix well, and marinade for 30 minutes.
- In a separate bowl, mix the Sauce ingredients. You may add more or less sugar, or other sauce ingredients to your own liking. Set sauce mixture aside.
- Heat up a wok with enough oil, deep-fry pork slices for 5 minutes, or until color changes to golden brown and slightly crispy. Dish up, drain with paper towels and set aside.
- Bring sauce to a quick boil, add deep-fried pork, and stir until all the meat is well coated with sauce. Dish up and sprinkle the pork chops with some toasted sesame seeds. Serve over a bowl of hot steamed rice.

Steps:
- Combine garam masala, onion, ginger, oil, and cayenne pepper in a medium mixing bowl.
- Stir in pork, working spice mixture into meat with fingers.
- Thread the meat onto metal skewers, leaving 1/4 inch between pieces, cover and refrigerate for 1 to 24 hours.
- Place pork skewer on the lightly oiled rack of the grill directly over medium heat.
- Grill for 12 to 15 minutes or until the juices run clear, turning once.
- Meanwhile, stir together yogurt and cilantro in a small serving dish.
- Cover and chill until serving.
- To serve, use a fork to remove grilled pork cubes from skewers.
- Arrange on a tray around yogurt mixture.
- Serve pork cubes with toothpicks.

- PORK BITES: In a bowl combine ground pork bread crumbs hoisin sauce garlic green onion and egg: mix well.
- Shape into 1 inch balls.
- Place meatballs on prepared baking sheet and bake in preheated oven for 20 minutes or until browned.
- Transfer to slow cooker.
- PEKING SAUCE: In a 4 cup measure or bowl combine hoisin sauce red currant jelly lemon juice garlic and ginger; mix well and pour over meatballs.
- Cover and cook on low for 5 to 6 hours.

- Beat egg and then add next five ingredients. (Add additional spices and hot sauce if desired if these are not for the kids). Mix well.
- Add ground pork and mix well. Divide into 4 equal portions and shape into 10 1/2 inch long roll. Place on wax paper lined baking sheet. Freeze until firm-approx. 2 hours.
- Roll out 1/2 of the puff pastry on a floured surface to a 10 inch square. Keep remaining pastry chilled. Cut square into 2 equal rectangles. Place 1 pork roll at the edge of the long side of 1 rectangle. Brush seem with beaten egg and roll up. Brush top with beaten egg then cut into 1 inch slices and arrange slices on baking sheet.
- Repeat with remaining pastry and filling.
- Bake at 400°F for 20-25 minutes or until golden.
- Freezes great!

- In large, deep skillet, bring water to a boil with sugar and vinegar; whisk until sugar dissolves.
- In small bowl, mix soy sauce, ketchup, and sesame oil until smooth; whisk into vinegar mixture.
- Bring to boil, then reduce to simmer until syrupy.
- Mix flour and cornstarch together in medium size shallow dish; set aside.
- Season pork with salt and pepper.
- Dredge in sherry (or rice wine).

- Combine flour, garlic salt and pepper on a plate. Toss pork cubes in flour mixture until coated.

- In a large mixing bowl, whisk together the marinade ingredients. Add the pounded pork pieces and toss to completely coat. Cover and marinade for 30 minutes.
