Recipe video above. 3 key tips to ensure your pan fried fish comes out beautifully golden and crispy every time: pat the fish dry, press flour on well but shake excess off well, and heat the pan first before adding the oil or use a heavy duty non stick pan. With a good fish, well seasoned and crispy skin, I don't need a sauce....but I've added a couple in the notes just in case! :)

2 thin fish fillets, around 150g/5 oz each, 1 cm / 2/5" thick, skin on or off ((Note 1))
Salt and pepper
1/4 cup / 35g flour ((plain/all purpose, wholemeal))
1 tsp paprika (, optional (Note 2))
2 - 3 tbsp oil, enough to mostly thinly cover base ((I use vegetable or canola))
Lemon wedges
Finely chopped parsley or dill (, for garnish, optional)

Steps:

  • Use scrunched up paper towels to pat the fish dry on both sides. This is especially important if you are using thawed frozen fish.
  • Season the fish well on both sides with salt and pepper (key!).
  • Mix the flour and paprika on a plate.
  • Coat fish on both sides with flour, pressing down firmly so it adheres, but shake well to remove excess. (Note 2)
  • Heat a heavy based skillet (normal or non stick) over medium high heat until you see wisps of smoke. Add oil and swirl to coat the pan - it will heat within seconds.
  • Add fish - it should sizzle straight away. Shake the pan lightly to move the fish. Cook for 2 minutes until golden and crisp, pressing down gently, then flip. Cook the other side for 2 minutes until crisp then remove.
  • If it's browning too quickly, just remove pan from the stove briefly. If it's stuck, don't move - it will release naturally once golden.
  • Serve fish immediately with lemon wedges and garnished with dill or parsley, if using. It starts to lose crispiness after 5 minutes.

2 eggs
1/2 cup dark beer or water
1 1/2 cups Progresso™ panko crispy bread crumbs
Peanut or corn oil for frying
1 1/2 lb fish fillets (walleye, cod, whitefish or tilapia)

Steps:

  • In shallow dish, mix flour and seasoned salt. In medium bowl, beat eggs and beer with whisk. Place bread crumbs in large resealable food-storage plastic bag.
  • In electric skillet or deep fryer, heat about 2 inches oil to 350°F. Coat both sides of fish fillets with flour mixture, then dip in beer mixture, letting excess drip back into bowl. Place 1 or 2 pieces of fish at a time in plastic bag with bread crumbs; seal bag and shake to coat completely.
  • Fry fish in batches in hot oil about 4 minutes, turning once, until golden brown. Drain on paper towels. Serve hot.

2 -3 lbs fresh fish, of your choice (I prefer Fresh Lake Perch or White Bass)
1 1/2 cups unbleached white flour
1/2 cup wheat flour
3/4 cup cream of wheat
1 tablespoon garlic powder
3/4 teaspoon turmeric
3/4 teaspoon pepper (to taste)
1 teaspoon onion powder
1 teaspoon all purpose Greek seasoning, plus
1/2 teaspoon all purpose Greek seasoning, for batter
1 teaspoon seasoning salt
1 cup milk
1/2 teaspoon hot sauce
1 egg
oil (for frying)

Steps:

  • Rinse fish and pat dry, cut into desired pieces. Mix egg, milk, 1/2 teaspoon of all-purpose Greek seasoning and hot sauce. Soak fish in milk mixture for 5-10 minutes. While fish is soaking mix remaining dry ingredients in bowl. Heat oil for frying or deep frying in large skillet. Drain fish and pat excess moisture from fish. Dip fish in dry mix and shake off excess. Place into hot skillet carefully and cook until brown on one side, flip and cook until brown. Drain fish on paper towels and place on warm plate in warm oven until all fish is done.
  • Serve with pepper rings, onion slices, and slice dill pickles.

  • Combine flour, cornstarch, baking soda, baking powder, Old Bay, salt, and pepper. Add beer and stir. Let rest for 10 minutes. Dredge fish through mixture.

1/4 cup grated Parmesan cheese (about 1-ounce)

1 pound sole, scrod, perch or other mild-tasting fish fillets
Lemon wedges

Steps:

  • Preheat oven to 350 degrees F.
  • Melt the butter in a 9 by 13-inch pan in the oven. While it melts, combine everything else except the fish in a pie pan. Dip the fish around in the melted butter, dip each piece in the crumb mixture, and return it to the baking pan. Bake the fillets for 20 to 25 minutes, or until the fish flakes with a fork. Now I'm from the south. My hubby is a transplant from the north. When we met in Arkansas some 27 years ago, I was boilin' cabbage with bacon in it. This northern guy had to tell me how to fix it. Seems some other southerner had told him. I hope you enjoy it as much as we do.

2 tablespoon(s) bacon grease or real butter, not margarine
1/2 head - cabbage, cored & cut into about 1" square pieces, no smaller
1/2 large onion, cut into slivers
- smidgen (about 1/4 tsp.) sugar
- salt & pepper to taste

Steps:

  • Place all ingredients in 10 3/4" cast iron skillet in the order given. Do not mix up at this time.
  • Start out on high heat for a minute or two, until cabbage starts to "give it up",then reduce heat to low & cover skillet.
  • Give it about 5 minutes before you start to stir it in skillet. Then, for the next 10 min, about, stir occasionally so it won't burn. Leave lid on to cook. Don't over stir it or it will just mush & not brown.
  • Cook until it is starting to get translucent & tender-crisp & brown somewhat, as in picture above.
  • Serve with anything. We had it with hamburger steaks & sauted onions today.

You can use fresh, or canned green beans for this recipe & you will notice the difference over just green beans. The main picture is from fresh green beans (no mushrooms that day)& the other one is from canned green beans. They taste equally as good.

- 6-8 slices thick bacon, cut in 3/4" pieces
- 1/2 onion, slivered
- 1 can mushroom pieces, drained or a handfull of fresh ones, sliced
- 1 quart canned green beans or a mess of fresh ones
- salt & pepper

Steps:

  • Cook bacon & onions in skillet until about 1/2 of the way browned.
  • Add the mushrooms & continue cooking until all is about 2/3 of the way brown. Salt & pepper this.
  • Next, add the green beans & turn heat to low & cover skillet. Leave it alone for about 5 minutes & then you can stir & continue cooking until all is slightly browned.
  • Remove lid & kick up the heat to medium & continue cooking until the beans are done & have a crisper brown , but not burned look. About 30 minutes total. Note: Fresh beans will take a little longer. Also, if you use canned green beans, no need to salt the green beans, but if you use fresh, you can salt them the last few minutes.

8 medium white fish fillets or 4 large white fish fillets
110 g plain flour or 110 g self raising flour
1/4 teaspoon salt
1 egg
1 tablespoon butter, melted
150 ml milk
to taste lemon wedge (to garnish)

Steps:

  • Half-fill a deep pan with melted fat or oil. Heat until a faint haze rises from it (or until a bread cube sinks to the bottom of the pan, rises to the top immediately and turns golden in 50 seconds).
  • Sift the flour and salt into a bowl.
  • Beat to a smooth batter, unbeaten egg, butter and milk. Then add the flour and salt mixture.
  • Coat 2 pieces of fish with batter.
  • Lift into the pan with a fork or kitchen tongs.
  • Fry until crisp and golden, allowing about 6-8 minutes for large pieces and 4-5 minutes for medium.
  • Remove from the pan and drain on absorbent kitchen paper.
  • Repeat with the remaining fish.
  • Garnish with lemon wedges.
