Peco candy is a unique blend of peanuts, sugar and coconut flakes. Considered to be candy decades ago, this is an "airy" treat that is reminiscent of years gone by!

Ingredients

2 cups white granulated sugar
1 cup light corn syrup
1 cup water
2 tbsp butter
2 cups raw peanuts
1 tsp vanilla extract
1 1/4 tsp baking soda
2 cups unsweetened flaked coconut

Steps:

Combine, sugar, corn syrup and water in a large saucepan (4-5 quart) with a heavy bottom.
Stir over medium-high heat until sugar dissolves. Then increase to high heat and bring to boil until thermometer reaches 250°F.
Add butter and peanuts. Continually stir to ensure the peanuts do not scorch.
Bring the temperature up to 300°F.
Once at 300°F, immediately remove from stove and add vanilla and baking soda. Mix together slightly then add coconut.
Stir until combined and pour into greased jelly roll size baking sheet. Do not spread or smooth out the brittle; let is spread on its own.
Let cool completely, then crack and break into pieces.

Ingredients

1 cup flaked coconut
1 cup white sugar
½ cup corn syrup
4 ounces chopped macadamia nuts
1 tablespoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda

Steps:

Spread coconut evenly over a buttered baking sheet.
In a medium microwave-safe bowl, combine sugar and corn syrup. Microwave on high 3 minutes. Stir in nuts and microwave 4 minutes more. Stir in butter and vanilla and return to microwave for 1 minute. Stir in soda until light and slightly foamy. Pour over coconut in pan. Let cool until firm, 1 hour. Break into pieces.

I had this recipe years ago and managed to lose it, but found a friend at work that had it and I am back in the brittle business. It is extremely easy and quick to make. Since most people have the ingredients in their pantry and freezers, it is a recipe that can be made up in a few minutes if unexpected guest show up.

Ingredients

1 cup sugar
1/2 cup white Karo
1 dash salt
1 cup shelled raw peanuts (pecans, walnuts, sunflower seed, etc.)
1 tablespoon margarine
1 1/2 teaspoons baking soda
1 teaspoon vanilla

Steps:

Line baking sheet with wax paper.
Spray wax paper with Pam.
Combine sugar, salt and Karo in a 3 quart microwave safe glass bowl.
Stir in peanuts.
Microwave on high until light brown (8 to 10 minutes) stirring at least 2 times during cooking.
Remove from microwave and stir in remaining ingredients adding baking soda last (mix will be foamy).
Stir quickly and pour onto wax paper.
Spread thin for brittle candy.
Note: You can use any type nuts you prefer or even sunflower seeds (which is my favorite).
