I can't recommends these attractive nutty spirals highly enough. Cream cheese makes the cookies rich and tender and the sweet filling showcases chopped pecans. -Wanda Rascoe, Shreveport, Louisiana

2 cups butter, softened
2 packages (8 ounces each) cream cheese, softened
2 teaspoons vanilla extract
4 cups all-purpose flour
1/2 teaspoon salt
2-1/4 cups finely chopped pecans
1-1/3 cups sugar

Steps:

  • In a large bowl, cream butter and cream cheese until light and fluffy. Beat in vanilla. Combine flour and salt; gradually add to creamed mixture and mix well. Divide into three portions. Wrap each in plastic; refrigerate for 2 hours or until easy to handle., On a lightly floured surface, roll each portion into a 16x9-in. rectangle. Combine pecans and sugar; sprinkle over dough to within 1/2 in. of edges. Roll up each rectangle tightly, jelly-roll style, starting with a long side. Wrap in plastic; refrigerate for 2 hours., Unwrap and cut into 3/8-in. slices. Place 2-in. apart on lightly greased baking sheets. Bake at 400° for 12-14 minutes or until lightly browned. Remove to wire racks to cool.

18 1/2 ounces yellow cake mix
1/8 cup water
2 eggs
1 teaspoon vanilla
3/4 cup caramel ice cream topping
1/2 cup pecans, chopped
3 tablespoons flour

Steps:

  • Generously grease and flour a 10-inch bundt cake pan.
  • In a large mixer bowl, combine dry cake mix, water, eggs, and vanilla.
  • Blend until moistened.
  • Beat as directed on package.
  • Measure 1 cup batter into a small mixing bowl.
  • Add the caramel topping, nuts and flour; mix well.
  • Pour half the yellow cakebatter into prepared pan; pour caramel mixture over batter in pan.
  • Cover with remaining batter; swirl lightly.
  • Bake at 350F for 40 to 50 minutes until toothpick inserted in center comes out clean; cool upright in pan 15 minutes.
  • Remove from pan.
  • Cool completely.

  • In a medium bowl, combine the yeast with the warm water and 1 teaspoon of the sugar and let stand until foamy, about 5 minutes. Whisk in the 6 eggs. In the bowl of a standing mixer fitted with the dough hook, mix the 4 1/2 cups of sifted flour with the salt and the remaining 1/4 cup of sugar. Add the egg mixture and beat at medium speed until the dough is just moistened and very stiff. Add the butter a few cubes at a time, waiting until it is partially kneaded into the dough before adding more. Continue kneading until the butter is fully incorporated and the dough is silky, 8 to 10 minutes. Transfer the dough to an oiled bowl, cover with plastic wrap and refrigerate until chilled and slightly risen, at least 2 hours or overnight.
  • Preheat the oven to 350°. Spread the pecans in a pie plate and toast for about 8 minutes, until fragrant and browned. Let cool, then finely chop the pecans. Transfer to a medium bowl and stir in the brown sugar and cinnamon.
  • In a medium bowl, using an electric mixer, beat the confectioners' sugar with the butter, heavy cream and vanilla extract until thick and smooth. Spread the sugar glaze on the hot cinnamon rolls and let cool for 20 minutes before serving.
