1 quart milk
2 ¼ cups uncooked white rice
⅓ cup maple syrup
1 teaspoon grated lemon zest
½ cup pecan halves

Steps:

  • In a medium saucepan over medium heat, bring rice and milk to a boil. Reduce heat, cover and simmer 25 minutes. Stir in maple syrup, lemon zest and pecans. Pour into serving dishes and chill until set.

3/4 cup raisins
3 tablespoons bourbon, such as Makers Mark
3/4 cup white basmati rice
1/2 teaspoon kosher salt
5 cups half-and-half, divided
1/2 cup sugar
1 extra-large egg, lightly beaten
1 teaspoon pure vanilla extract
1/4 cup pure maple syrup, plus extra for serving (optional)
1/2 teaspoon natural maple flavoring
3/4 cup toasted pecans, chopped

Steps:

  • In a small bowl, combine the raisins and bourbon. Set aside.
  • Combine the rice and salt with 1 1/2 cups water in a medium heavy-bottomed stainless steel saucepan. Bring it to a boil, stir once, and simmer, covered, on the lowest heat for 8 to 9 minutes, until most of the water is absorbed. (If your stove is very hot, pull the pan halfway off the burner.)
  • Stir in 4 cups of half-and-half and the sugar and bring to a boil. Simmer uncovered for 25 to 30 minutes, until the rice is very soft and the pudding is thick. Stir often, particularly toward the end. Slowly stir in the beaten egg and continue to cook for 1 minute. Off the heat, add the remaining cup of half-and-half, the vanilla, maple syrup, maple flavoring, and the raisins with any remaining bourbon. Stir well. Pour into a bowl, and place a piece of plastic wrap directly on top of the pudding to prevent a skin from forming. Cool slightly, add the pecans, and serve warm or chilled. Drizzle each serving with extra maple syrup, if desired.

1 1/2 cups milk (I use 2% low fat)
1/2 cup sugar
1 tablespoon butter or 1 tablespoon margarine, melted
1 teaspoon vanilla
5 eggs, beaten
2 cups cooked rice
1/2 cup raisins
1 apple, peeled,cored and chopped
1 dash nutmeg

Steps:

  • Mix all ingredients together (except for nutmeg) in a 2-quart casserole dish.
  • Sprinkle nutmeg on top.
  • Bake at 350-degrees F for 50 minutes to one hour.
  • Test with a table knife by sticking knife in center of dish, if it comes clean pudding is done.

This is one of the Zaar recipes that I adopted. I hope to make this soon as it looks like a dish my family would enjoy. I'll edit the recipe for stove/oven preparation instead of microwave.

1 tablespoon butter or 1 tablespoon margarine
1 large egg, beaten
1/3 cup dark corn syrup
1/4 teaspoon vanilla
2 tablespoons unbleached flour
1/8 teaspoon baking powder
1/4 cup pecans, Chopped
powdered sugar

Steps:

  • In a 15-ounce custard cup microwave the butter or margarine, uncovered, on 100% power for 30 to 40 seconds or just till melted.
  • Swirl the butter in the custard cup, coating sides and bottom.
  • Pour the excess butter from the custard cup into the beaten egg.
  • Stir in the dark corn syrup and vanilla.
  • Stir together flour and baking powder.
  • Stir flour mixture into egg mixture.
  • Gently fold in chopped pecans.
  • Pour the pecan mixture into the buttered 15-ounce custard cup.
  • Micro-cook, uncovered, on 50% power for 3 to 4 minutes or till the pecan mixture is just set, rotating the custard cup a half-turn every minute.
  • Sift a little powdered sugar atop.
  • Serve warm with light cream, if desired.

  • In a bowl, combine pudding mix and milk; beat for 1-2 minutes until well blended. Stir in rice and raisins. Spoon pudding into individual bowls. Chill. Garnish with whipped topping and a cherry.

1-1/2 cups sliced fresh mushrooms
3 green onions, sliced
2 cups uncooked long grain brown rice
1 garlic clove, minced
1-1/2 cups chopped pecans, toasted
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon pepper
1/4 teaspoon ground cumin
3 cans (10-1/2 ounces each ) condensed beef consomme, undiluted
2-1/4 cups water
5 bacon strips, cooked and crumbled
Toasted pecan halves, optional

Steps:

  • Preheat oven to 400°. In a Dutch oven, heat butter over medium-high heat. Add mushrooms and green onions; cook and stir until tender, 3-5 minutes. Add rice and garlic; cook and stir 3 minutes. Stir in pecans, salt, thyme, pepper and cumin. Add consomme and water; bring to a boil., Bake, covered, until liquid is absorbed and rice is tender, 1 to 1-1/4 hours. Transfer to a serving bowl. Top with bacon and, if desired, pecan halves.
