GRANDMA'S PECAN PIE RECIPE
A tried and true classic, this Pecan Pie recipe is truly the best! It tastes just like the one Grandma used to make and with less than 10 ingredients, it's incredibly easy too. Perfect for both Thanksgiving and Christmas!

- Preheat oven to 350°F
- Place the pre-made pie crust in a 9 inch pie pan and crimp the edges. Lightly prick bottom of the crust with a fork. Place in the fridge and chill until firm, at least 30 minutes (or freeze no longer than 10 minutes).
- Melt the butter in a small heavy saucepan over medium heat. Add the sugars, whisking until smooth. Remove from heat and whisk in corn syrup, vanilla, zest (optional), and salt. Lightly beat eggs in a medium bowl, then combine with the corn syrup mixture.
- Place the pecan halves in the chilled pie shell and then pour the filling mixture evenly over them.
- Cover your pie with aluminum foil and bake in preheated oven for about 30 minutes.
- Remove the foil and bake for an additional 20 minutes or until center is set and not overly wiggly. Check it often.
- Remove from the oven when done and set on a wire rack to cool for about 1 hour, then refrigerate until firm, about 4 hours.
- Pie can be made 1-2 days ahead and refrigerated until ready to serve.

- Heat oven to 400°F.
- Chill the unbaked pie crust for at least 20 minutes in the refrigerator or freezer. Use parchment paper or aluminum foil to line the inside of the chilled crust, shaping it gently around the inner edges to form a mold of the crust. Fill the bottom of the crust with pie weights or dried beans. Bake for 15 minutes. Remove the pie pan from the oven, carefully lift out the foil/parchment and weights, and set them aside. Decrease the oven heat to 350°F.
- In a medium bowl, whisk together sugar, corn syrup, vanilla, salt and cinnamon. Add eggs and whisk until smooth. Melt butter in a small saucepan over medium heat for about 4-5 minutes, stirring often, until the butter turns brown and fragrant. Slowly pour butter into the sugar mixture, and whisk to combine. Chop 2 cups of the pecans, then stir them into the butter and sugar mixture until combined.
- Pour the entire filling into the prepared pie crust. Line the top of the filling with the remaining pecans (about 2 cups, more or less).
- Bake the pie for 40-50 minutes, or until the top is lightly browned. After the first 20 to 25 minutes of baking time, you are welcome to loosely tent a piece of aluminum foil over the top of the whole pie if the crust or pecans seem to be browning too quickly. The pie will be ready to go once the top has puffed up into a dome (which will sink to become flat again, once the pie has set and cooled). Transfer the pie to a wire rack and let it rest until it reaches room temperature.
- Slice and serve pie at room temperature (or you can refrigerate and chill the pie, if you prefer), garnished with a dollop of whipped cream if desired. Cover and store leftover pie at room temperature for 1-2 days or in the refrigerator for 4-5 days.
PECAN PIE - MY GRANDMOTHER'S RECIPE
Another recipe from my grandmother. She could not cook a main course to save her life (other than chop suey) but she could make wonderful desserts.

Steps:
- Combine syrup, sugar, salt, butter, and vanilla. Mix well. Add slightly beaten eggs. Pour in pecans and fold into mixture.
- Put pie shell on a cookiing sheet in oven (to avoid spilling liquid going from counter to oven). Pour ingredients into shell. Bake in 350 degree pre-heated oven for 45 minutes. (keep cooking sheet under pie to avoid spilling over onto oven floor).
- **Note** My grandmother made her own pie crust but I just save time and buy the prepared ones. They are better then I can make.

SOUTHERN GRANDMA'S PECAN PIE
My dad's favorite thing to eat in the world. My grandmother has been making this pie for so many years and it has been a favorite of many, many people. This recipe was published by her church's cookbook- The Cherokee Hills Baptist Church, Cookbook IV, Our Favorite Recipes- Women's Ministry, 2007.

Steps:
- Heat oven to 400.
- Beat eggs.
- Add sugar and flour until sugar is dissolved.
- Add syrup, melted butter, pecans and vanilla. Mix well.
- Pour into pie shell.
- Beginning at outer edge of filling, place a row of pecan halves around top. Continue with other rounds until top is covered.
- Carefully place pie in oven.
- Bake at 400 for 15 minutes. Reduce heat to 350.
- Make a tent of aluminum foil; place over pie. Be careful not to touch filling!
- Bake around one more hour, or until filling is set.
- Remove from oven.
GRANDMOTHER'S PECAN PIE
My Grandmother use to make this pie every Thanksgiving and Christmas. She would shell her own pecans, and later in her life she wouldn't get all the shells out sooo....when eating you chewed carefully because you didn't want to break a tooth. Bless her heart; she loved to make them for us.

GRANDMOTHER THORNTON'S PECAN PIE
My husband's grandmother had a pecan tree in her yard. She was famous for her pecan pie. Soon after we married, we went to visit and she presented me with her much guarded recipe. It was a beautiful gesture of inclusion which I cherish to this day.

- Add sugar and mix thoroughly.
- Stir in salt and vanilla. Let stand about 5 minutes.

This is the recipe for the pie my grandma would always bring to special occasions, it's really easy to make and absolutely delicious! I found that the filling was too much for the pie crust, but I imagine you could fill some tarts with the excess...I haven't tried it yet though!

- Cream together butter and brown sugar.
- Beat in eggs, one at a time.
- Stir in corn syrup, vanilla and pecans. (You can add a bit more if you want!)
- Bake for 50 to 60 minutes. I would suggest putting the pie on a lined cookie sheet, it may overflow.
