- In a large skillet, heat the butter, brown sugar and water to boiling. Reduce heat to simmer. , Meanwhile, combine the dumpling ingredients; add apple if desired. Drop by tablespoonfuls into the simmering sauce. Cover tightly and simmer for 20 minutes. Do not lift lid. If desired, serve warm with vanilla ice cream.

RICH CARAMEL DUMPLINGS
This was my great aunt's recipe and it was originally called "Caramel Pudding". Puddings may have evolved into something different from what they were 100 years ago and I didn't want to cause any confusion, so I changed the title to reflect the outcome. This is so easy and really rich. A little bit goes a long way!

Steps:
- Boil the syrup ingredients in a saucepan for 10 minutes.
- Blend the dry ingredients together.
- Cut the butter into the dry ingredients until grainy[I just pinch everything until it all feels about the same size grains].
- Add the milk and stir lightly until mixed.
- Pour the syrup into a medium baking dish (9"x9") and drop soup spoonfuls of the dumpling mixture into the syrup.
- Bake at 350°F for 30 minutes.
- When it is done, flip the dumplings over so the crispy side will soak up more of the yummy stuff.

HOMEMADE APPLE DUMPLINGS WITH CARAMEL SAUCE
When our apples become ripe, it's not unusual for me to make as many as 30 of these fruity dumplings! I've relied on the recipe for more than 50 years.

- In a large bowl, combine the flour, 2 teaspoons sugar and salt; cut in shortening until crumbly. In a small bowl, combine 1 egg, water and vinegar; gradually add to crumb mixture, tossing with a fork until dough forms a ball. Divide into seven portions. , On a lightly floured surface, roll each portion into a 7-in. square. Place an apple on each pastry square; place 1 tablespoon butter in the center of each. Combine cinnamon and remaining sugar; sprinkle over apples., Bring up corners of pastry to center; pinch edges to seal. Beat remaining egg; brush over pastry. Place in a greased 13-in. x 9-in. baking dish. Bake at 350° for 15 minutes., Meanwhile, in a large saucepan, combine the sauce ingredients. Bring to a boil; cook and stir until smooth and blended. Pour over apples. Bake 35-40 minutes longer or until apples are tender and pastry is golden brown, basting occasionally with sauce. Serve warm.

DUMPLINGS IN CANADIAN MAPLE SYRUP
A very Canadian recipe using Pure Canadian Maple Syrup #1 Light. Do not use imitation Maple Syrup. This recipe came from one of Canadas main producers/suppliers of Maple Syrup in Quebec Canada.

- In a bowl, sift flour, measure and re-sift with baking powder and salt. Add shortening and mix well until shortening is fine. Add milk, blend. Dough will be quite firm.
- Heat 2 cups of maple syrup in a frying pan; bring to a boil over medium to high heat. Lower heat so that the syrup is not boiling and drop spoonfuls of dough into the syrup. Cover and poach for 12 to 15 minutes, making sure syrup is not boiling.
- Serve hot with remaining maple syrup.

EASY RAISIN SAUCE FOR HAM
This recipe came from my mother. Has always been one of my favorites! VERY easy...and inexpensive too! This is wonderful added to the top of the ham the last 30 minutes of the cooking time, or you can simply serve it with the ham in a small bowl. I hope you enjoy it.

- Preheat oven to 400°F. Using melon baller, core apples, leaving bottoms intact. Place in glass pie dish, spacing apart. Microwave uncovered at 50 percent power until tender, about 10 minutes. Refrigerate 5 minutes to cool.
- Meanwhile, mix brown sugar and cinnamon in small bowl. Transfer 3 tablespoons cinnamon sugar to small saucepan. Add raisins and 3 tablespoons heavy cream and stir over low heat until sugar dissolves. Combine 3 tablespoons cinnamon sugar and remaining heavy cream in medium bowl and whisk to peaks. Cover and refrigerate. Roll out each biscuit on floured surface to thin 8-inch round; brush lightly with egg. Place apple in center of each round; fill apples with raisin mixture, overfilling slightly. Pull 4 sides of dough up to top of apple (from 3, 6, 9, and 12 o'clock positions) and twist in center, making apple stem shape. Using fingertips, press seams tightly to seal. Transfer dumplings to baking sheet. Brush dumplings with egg; sprinkle with remaining cinnamon sugar.
- Bake dumplings until golden, about 18 minutes. Serve with cinnamon whipped cream.
PECAN DUMPLINGS WITH CARAMEL RAISIN SAUCE 1968 (ONTARIO CDA)
This is an oldie but always great for family and friends. The dumpling part can be doubled also to make 16 dumplings, just use a skillet with lid so they all fit over the sauce ingredients.

Steps:
- Place all sauce ingredients into a pot and bring to a boil. Reduce to a nice even simmer.
- I get the sauce going so it can start to thicken while you are preparing the dumplings.
- In a bowl add dry ingredients and combine well.
- In a cup measure the milk and butter and simmer in microwave until the butter has melted.
- Pour warm milk onto the dry ingredients and combine with the nuts, mix well, and knead three times.
- Roll into balls, if too sticky just drop 8 portions onto the simmering sauce.
- Cover with lid and cook at an even simmer 10 to 12 minutes until done.
- Uncover slightly and let sit four minutes on low, just to continue thickening the sauce underneath.
- Remove to bowls and serve with some sauce and raisins and a small portion of pouring cream on top.
