Pecan Crescents image

Pecan wedding cookies rolled in confectioner's sugar.

Number Of Ingredients 6

1 cup butter
½ teaspoon salt
2 cups chopped pecans
1 tablespoon vanilla extract
2 cups all-purpose flour
½ cup confectioners' sugar

Steps:

  • Preheat oven to 325 degrees F (170 degrees C).
  • Cream butter or margarine, gradually adding confectioners' sugar and salt. Cream until light and fluffy.
  • Stir in pecans and vanilla. Add flour gradually. Mix well. Shape dough into crescents using a teaspoon full for each crescent. Place on ungreased cookie sheet and bake 15-30 minutes. Do not brown. Let cool slightly, then roll cookies in additional confectioners' sugar.

1 package yellow cake mix (regular size)
1/2 cup butter, softened
1 large egg
FILLING:
1 can (14 ounces) sweetened condensed milk
1 large egg
1 teaspoon vanilla extract
1 cup chopped pecans
1/2 cup brickle toffee bits

Steps:

  • Preheat oven to 350°. In a large bowl, beat cake mix, butter and egg until crumbly. Press onto the bottom of a greased 13x9-in. baking pan., In a small bowl, beat milk, egg and vanilla until combined. Stir in pecans and toffee bits. Pour over crust., Bake 20-25 minutes or until golden brown. Cool on a wire rack. Cut into bars.

1 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg
1 tablespoon grated orange zest
2-1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups white baking chips
1 cup dried cherries, coarsely chopped
1 cup chopped pecans

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and orange zest. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Fold in the chips, cherries and pecans. , Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 10-12 minutes or until edges are golden brown. Cool for 2 minutes before removing to wire racks.

The first time I made this was for a friend's birthday party and everyone had to bring something fattening. This proved to be very popular.

1 package yellow cake mix
1/3 cup margarine or 1/3 cup butter, softened
1 egg
1 can sweetened condensed milk
1 egg
1 teaspoon vanilla
1 cup chopped pecans
1/2 cup crushed hard toffee

Steps:

  • Heat oven to 350 degrees F.
  • Grease 13x9 inch pan.
  • In large bowl, combine cake mix, margarine and egg.
  • Mix at highest speed until crumbly.
  • Press into prepared pan.
  • In small bowl, beat milk, egg and vanilla until blended.
  • Stir in pecans and toffee bits chips.
  • Pour over base in pan; spread to cover.
  • Bake at 350 degrees for 25-35 minutes or until light and golden brown.
  • Center may appear loose but will set upon cooling.
  • Allow bars to cool completely before cutting.

COCONUT PECAN DREAMS COOKIE

This is an old recipe from my Mother-In-law

1 c butter, softened
1 egg
1 c sugar
3 c coconut
2 3/4 c flour,sifted
1/2 tsp baking soda
additional coconut for rolling

Steps:

  • 1. Cream butter well. Add sugar and continue to beat until fluffy. Add the egg and then the coconut. Add the flour and baking soda.
  • 2. Separate in 6 portions and forming rolls about 1-inch wide then roll into more coconut. Wrap in wax paper gently to keep them as round as possible. Keep in refrigerator until firm. Slice 1/2-inch thick.
  • 3. Brush top of each slice with egg yolk beaten with 1 TBSP.milk. Place a whole pecan on each cookie.
  • 4. Bake at 325 degree oven on a greased cookie sheet till golden brown. Bake 30 minutes.

¼ teaspoon salt
⅛ teaspoon baking powder
½ cup butter, softened
½ cup white sugar
1 teaspoon vanilla extract
24 whole pecans

Steps:

  • Sift cake flour, salt, and baking powder into a medium bowl.
  • Combine butter, sugar, and vanilla extract in a large bowl; beat with an electric mixer until smooth and creamy. Add dry ingredients and mix thoroughly. Shape dough into a 1-inch diameter log, wrap with plastic wrap, and place in the refrigerator until firm, 1 hour to overnight.
  • Preheat the oven to 275 degrees F (135 degrees C). Line 2 cookie sheets with parchment paper.
  • Remove dough from the refrigerator and slice into 24 slices. Place on the prepared cookie sheets and press a pecan firmly into each slice.
  • Bake in the preheated oven until edges are golden, about 40 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

  • Add the butter and sugar to the bowl of a stand mixer or use a hand mixer. Mix on medium speed until combined, then mix on high speed until very light and creamy, about one minute. Add the vanilla and mix to incorporate. Add the flour and pecans and mix just until flour is incorporated.
  • Using a small cookie scoop, place a scoop of cookie dough in your hand and roll it into a ball and place the ball on an ungreased large cookie sheet. Repeat until all of the dough is rolled into balls. Bake for 30 minutes or until the cookies are just lightly browned on the bottoms and remove from oven.
  • Allow cookies to cool for 2 to 3 minutes, then roll the cookies, one at a time, in the powdered sugar and transfer to a piece of waxed paper. Once cookies have completely cooled, re-roll the cookies one more time in the powdered sugar. You might have to use a little bit more powdered sugar.
  • Store cookies in an airtight container. These cookies will stay fresh for several days and they are an excellent cookie for making ahead and freezing.
