GOOEY CARAMEL-PECAN CAKE
A rich, caramel-pecan filling peeks out from tender layers of chocolate cake.

Steps:
- Heat oven to 350°F (325°F for dark or nonstick pans). Grease two 8- or 9-inch round cake pans, or spray with baking spray with flour.
- Make and bake cake mix as directed on box for two 8-inch or 9-inch rounds. Cool 10 minutes. Run knife around sides of pans to loosen cakes; remove from pans to cooling rack. Cool completely, about 1 hour.
- In 1-quart saucepan, heat caramels, butter and whipping cream over medium heat 6 to 8 minutes, stirring frequently, until caramels are melted and mixture is smooth. (Or place caramels, butter and whipping cream in 4-cup glass measuring cup; microwave uncovered on High 1 to 3 minutes, stirring once or twice.) Stir pecans into melted caramel. Cool 30 to 45 minutes or until firm enough to spread without running over edge of cake.
- Place 1 cake layer on plate, round side down. Spread with 1 cup of the pecan filling. Top with second layer, round side up. Spread remaining pecan filling into 4- to 5-inch circle on top of cake. Spread chocolate frosting on rest of top and side of cake. Store loosely covered.

Steps:
- As per package, beat cake mix with milk, oil and eggs.
- Pour into 2 separate 8'' baking dish, bake as per directions on package.
- For the caramel, melt together brown sugar, heavy cream and butter until sugar desolves and becomes creamy. Set aside.
- With a spatula, spread half of vanilla icing on toop of bottom cake, drizzle half of caramel.
- Place second cake on top and spread remaining icing, drizzle caramel on top and sprinkle with chopped chocolate covered caramel candies.

BUTTER PECAN CAKE WITH CARAMEL FROSTING
Steps:
- 1. Melt the 1/4 cup of butter in a skillet over low heat. Add the pecans and toss to coat. Toast, stirring for 5 minutes.
- 2. Add the cake mix to bowl of your mixer. Add the eggs. Add the milk instead of water called for on the box. Add the oil as called for on the box. Add 1 tsp of vanilla. Beat together as on box. During the last 30 seconds of mixing, add the pecans to the batter.
- 3. Pour batter into 2 greased 9 inch cake pans and bake as directed on box.
- 4. Cool layers before frosting.
- 5. FROSTING: In a medium saucepan, melt together butter, cream and brown sugar. Bring to a boil and boil for 1 minute. Remove from heat and add to bowl of stand mixer. Allow to cool for 15 minutes. Add the vanilla and powdered sugar and beat together until combined. Add milk or cream, to get the correct consistency
- 6. Frost the cake.
CREAM-FILLED BUTTER PECAN BIRTHDAY CAKE
Add extra richness to butter pecan cake mix with the addition of whipping cream. Then sprinkle toffee bits onto the fluffy topping.

- Heat oven to 325°F. In 1-quart saucepan, heat butter, 1/4 cup whipping cream and the brown sugar over low heat, stirring occasionally, just until butter is melted. Pour into two 9-inch round cake pans (do not use dark or nonstick pans).
- In large bowl, beat cake mix, water, oil and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Carefully spoon half of cake batter into each pan, starting at outer edge and continuing toward center so brown sugar mixture does not get moved out to sides of pans.
- Bake 30 to 37 minutes or until toothpick inserted in center comes out clean. Run knife around edge of cakes to loosen from pan. Turn upside down onto cooling racks, placing waxed paper under racks to catch drips. Leave pans over cakes 1 minute before removing. Cool completely, about 1 hour.
- In chilled medium bowl, beat whipping cream, powdered sugar and vanilla on high speed until stiff peaks form.
- On serving tray, place 1 cake layer, brown sugar side up. Spread with half of the whipped cream. Top with second layer, brown sugar side up. Spread with remaining whipped cream. Sprinkle with toffee bits. Store covered in refrigerator.

Steps:
- cream butter, add sugar and fresh lemon juice.
- cream until light and fluffy --
- add eggs, one at a time, mixing well after each addition.
- combine baking soda to sour cream; sift flour twice with salt.
- turn mixer onto low speed and alternately add sour cream and flour to batter.
- add flavorings --
- pour batter into a greased and floured bundt or tube pan.and bake at 325* for 1 1/2 hours.
- to prepare icing:.
- in a heavy saucepan, mix 2 cups sugar, beaten egg, butter and milk --
- put on low fire and let come to a slow boil --
- in a small black iron skillet, melt remaining 1/2 cup sugar and let cook until brown and runny.
- add this to sugar mixture and continue to cook until the temperature reaches the soft ball stage.238*.
- you must cook this slowly to prevent the milk from scorching.
- remove from fire and let cool slightly.; then add salt and flavorings.
- beat until icing reaches a spreading consistency.
- ice on cooled cake.
- sprinkle top with chopped pecans.
