WHITE CHOCOLATE AND PECAN BLONDIES



White Chocolate and Pecan Blondies image

Brown sugar and butter are what make blondies so incredibly addictive. Most times, they are made with chocolate chips and sometimes butterscotch chips, but when I tried them with white chocolate and toasted pecans, a new blondie was born. Give them a go and you'll see what I mean.

1 cup (2 sticks/225 grams) salted butter, melted
2 cups (340 grams) light brown sugar
1 tablespoon pure vanilla extract
2 large eggs, at room temperature
2 cups (284 grams) all-purpose flour
1 teaspoon fine salt
1 1/2 cups (9 ounces/ 255 grams) white chocolate chips
1 cup (142 grams) pecans, toasted and chopped

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C). Grease an 8-inch square cake pan and line it with parchment paper.
  • In a medium bowl, stir together the melted butter, brown sugar, and vanilla.
  • Whisk in the eggs one at a time until well combined.
  • Using a large metal spoon, fold in the flour, salt, chocolate chips, and pecans. Pour the batter into the prepared pan.
  • Bake for about 30 minutes, until the top is golden brown and the middle is just set. Don't be tempted to bake them for longer than that, or you won't get gooey centers. Let the blondies cool completely in the pan.
  • Turn the blondies out onto a cutting board and cut into 9 squares. Enjoy warm, or cover and store at room temperature for up to 3 days.

BUTTERSCOTCH PECAN BLONDIES

I first combined pecans and butterscotch in these blondies because they were my mom-mom's favorite flavors. When she loved them, they became a family favorite and I baked them for her every chance I got. They are fantastic when sliced warm and topped with ice cream. They also make the perfect addition to a friendly care package.

Nonstick cooking spray
14 tablespoons unsalted butter
1 1/2 cups packed light brown sugar
1 teaspoon fine salt
1/2 teaspoon baking powder
1 tablespoon pure vanilla extract
1 large egg, plus 1 large egg yolk
1 2/3 cups all-purpose flour
1/2 cup butterscotch chips
1 cup chopped toasted pecans

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-inch square baking pan with nonstick cooking spray, line it with parchment paper, then spray the parchment. Set aside.
  • Place the butter in a medium saucepan and cook over medium-high heat, stirring occasionally, until deep golden, 3 to 5 minutes. Immediately pour into a medium heatproof bowl. Add the brown sugar, salt and baking powder. Whisk to combine. Whisk in the vanilla, whole egg and yolk until smooth.
  • Add the flour to the wet ingredients and stir with a rubber spatula until nearly combined. Reserve about 2 tablespoons each of the butterscotch chips and pecans, then stir the rest into the batter until evenly combined.
  • Spread the batter into the prepared pan. Sprinkle the reserved pecans and butterscotch chips evenly over the top then press into the top of the batter.
  • Bake until golden and a toothpick inserted near the center comes out with a few moist crumbs, 32 to 34 minutes. Let cool in the pan then cut into 16 squares.

2 cup(s) light brown sugar (packed)
2 large eggs
2 teaspoon(s) pure vanilla extract
3/4 cup(s) semisweet chocolate chips
3/4 cup(s) chopped pecans

Steps:

  • Preheat oven to 350 degrees. Prepare a 13 x 9 inch baking pan with butter or parchment paper.
  • Mix flour, baking powder, salt and baking soda in a medium bowl. Melt butter in a large saucepan over low heat and then remove from heat. Add the sugar and whisk until sugar melts and mixture is well blended.
  • Whisk in eggs and vanilla extract. Gradually add flour mixture (batter will be thick). Spread batter in prepared pan. Sprinkle with chocolate chips and pecans. Bake approximately 25 minutes until a toothpick inserted into the center comes out with moist crumbs attached.
  • Cool blondies in the pan on a rack. Cut into squares and serve.

Steps:

  • Preheat oven to 350°F. Butter and flour 13 x 9 x 2-inch baking pan. Mix flour, 1 teaspoon baking powder, 3/4 teaspoon salt and 1/4 teaspoon baking soda in medium bowl. Melt butter in large saucepan over low heat. Remove saucepan from heat. Add sugar and whisk to blend. Whisk in eggs and vanilla extract. Gradually stir in flour mixture (batter will be thick).
