Provided by Jamie Oliver

Categories     Quick fixes     Fruit     Dinner Party     Desserts     Puddings & desserts     Baking

Time 45m

Yield 4

Number Of Ingredients 10

4-5 small sweet eating apples
½ lemon, juice of
80 g butter
4 sheets filo pastry
150 g pecan nuts, chopped
ground cinnamon
150 g dark muscovado sugar
60 g caster sugar
1 handful dried cranberries
good-quality vanilla ice cream, to serve

Steps:

  • Preheat the oven to 180°C/350°F/gas 4.
  • Peel and slice the apples thinly, and put them in a bowl of cold water with a little lemon juice to stop them going brown. Melt the butter in a small saucepan over a low heat and keep warm.
  • Carefully cut the filo pasty into 30 x 50cm sheets with a knife. Mix the pecans, cinnamon and dark muscovado sugar together.
  • Lay the first sheet of filo pasty on a clean tea towel on your work surface and brush with melted butter. Sprinkle over a third of the pecan mixture. Lay another sheet of filo pastry on top, brush with butter and sprinkle again with a third of the pecan mixture. Repeat with the third sheet and top everything with the fourth sheet.
  • Drain your apples well and toss with the caster sugar and drained cranberries. Spread them out along one edge of the top sheet of filo pastry. Brush the opposite edge with a little water. Starting at the edge with the apple mixture on, gently lift the edge of the tea towel and use it to help you roll the pastry up lengthways like a Swiss roll - the apples will end up at the centre. Once it's all rolled up, press your strudel together gently.
  • Place it on a baking try and bake in the preheated oven for about 20 minutes or until golden brown. Serve with some good vanilla ice cream.
  • Try making the strudel with a little ground ginger and cloves for a lovely twist.

BLUE CHEESE AND PECAN STRUDEL

Blue Cheese and Pecan Strudel image

Provided by Food Network Kitchen

Categories     appetizer

Time 2h

Yield 8 servings

Number Of Ingredients 9

1 stick unsalted butter
1 large egg white
4 ounces cream cheese, at room temperature
Freshly ground pepper
2 ounces Roquefort or other blue cheese, crumbled (about 1/2 cup)
1/2 cup chopped candied pecans
6 sheets frozen phyllo dough, thawed
1/4 cup breadcrumbs
Honey, for drizzling

Steps:

  • Make the clarified butter: Melt the butter in a small saucepan over medium-low heat and cook until the bubbling starts to slow down; remove from the heat and let cool. Skim the white foam off the surface and discard. Spoon the remaining butter into a bowl, discarding the solids at the bottom of the saucepan.
  • Whisk the egg white, cream cheese and 1/4 teaspoon pepper in a medium bowl until smooth. Gently fold in the blue cheese and candied pecans with a rubber spatula.
  • Lay out 1 sheet of phyllo on a large cutting board or work surface with a long side in front of you. (Keep the remaining phyllo covered with a slightly damp towel to prevent it from drying out.) Brush the phyllo lightly with some of the clarified butter. Sprinkle evenly with 2 teaspoons breadcrumbs. Repeat to make 5 more layers (phyllo, clarified butter, breadcrumbs), stacking the phyllo as you go. (Reserve some clarified butter to brush on the strudel before baking.)
  • Spoon the cheese mixture in a strip down the length of the phyllo, about 1 inch from the long side closest to you. Starting from that side, roll up the phyllo to make a thin log. Wrap the log in plastic wrap or cover with a towel and refrigerate until the filling is firm, at least 1 hour.
  • Position a rack in the lower third of the oven and preheat to 400 degrees F. Place the phyllo roll seam-side down on a parchment-lined baking sheet. Brush all over with the remaining clarified butter. Sprinkle with pepper. Bake, rotating the pan halfway through, until the phyllo is crisp and golden brown, about 25 minutes. Let cool about 15 minutes, then transfer to a cutting board to slice. Lightly drizzle the slices with honey and serve warm or at room temperature.

APPLE AND PECAN STRUDELS

Apple and Pecan Strudels image

Provided by Aaron McCargo Jr.

Categories     dessert

Time 40m

Yield 12 to 15 strudels

Number Of Ingredients 8

1/2 cup chopped pecans
1/2 cup raisins
1 (14-ounce) can apple pie filling (cut apple slices if large)
1 stick butter
1 sprig sage
3 tablespoons turbinado sugar
1 teaspoon ground cinnamon
1 package thawed phyllo dough sheets

Steps:

  • In a small saute pan over medium heat, toast the pecans until golden in color, about 3 to 4 minutes. Turn off the heat and stir in the raisins and the apple filling. Reserve.
  • In a small saucepan over medium heat, add the butter and the sage. When the butter has melted, remove the sage. In a small bowl, combine the sugar and cinnamon and set aside.
  • Unwrap the phyllo sheets and cover with a moist towel. Put 1 sheet on a cutting board and brush with the melted butter, put another sheet on top and brush with butter, then put a third sheet on top and brush with butter. *Cook's Note: Set the phyllo aside, covered with a moist towel until ready to use again.
  • Cut the phyllo stacks into thirds. Put approximately 1 to 2 tablespoons of apple filling at the tip of the strip closest to you. Fold the phyllo into triangles by repeatedly folding to the right, then up to the left, and repeat until you reach the end of the strip, making sure to keep the shape of a triangle. Repeat with remaining 2 strips of phyllo. Brush the last triangle fold with butter to seal. Brush the tops of triangles with butter and sprinkle with cinnamon sugar.
  • Preheat the oven to 450 degrees F.
  • Repeat the process until all the filling has been used. Arrange the phyllo triangles on a sheet pan that has been lined with parchment paper, and bake until well browned, about 6 to 8 minutes. Transfer the strudels to a serving platter and serve.

APPLE STRUDEL

Apple Strudel image

Provided by Food Network

Categories     dessert

Time 1h5m

Yield 7 servings

Number Of Ingredients 12

1 1/4 cups apple juice
2 tablespoons cornstarch
1 1/2 pound apples, peeled, cored and sliced 1/4-inch thick (about 5 cups)
1/2 cup dark seedless raisins
3 tablespoons granulated sugar
1 teaspoon ground cinnamon
1/3 cup chopped pecans
4 sheets phyllo dough
1/3 cup (5 1/3 tablespoons) melted butter
3 tablespoons fine dried breadcrumbs
Confectioners' sugar, for garnish
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
  • In a small bowl, create a slurry by combining 1/4 cup of the apple juice with the cornstarch. Mix until smooth and set aside.
  • In a large saucepan over medium heat, cook the apples with the remaining 1 cup apple juice, raisins, sugar and cinnamon until the apples are tender, 8 to 10 minutes. Stir the cornstarch slurry (it may have settled) and add it to the apple mixture, stirring constantly until smooth and lump free. Simmer for 1 minute more, stirring constantly. Remove from the heat and cool. Stir in the pecans, cover and chill.
  • Lay out 1 phyllo sheet on a clean, flat, lightly floured surface. Brush with some melted butter and sprinkle with 1 tablespoon breadcrumbs. Repeat this procedure with two more layers of phyllo, butter and breadcrumbs. Top with the fourth sheet of phyllo. Spread the apple filling evenly onto the phyllo surface, leaving a 1/2-inch clean edge on all sides. Roll into a log, folding the edges at each end beneath the log and brush with some melted butter. Carefully place the strudel on the prepared baking sheet, seam-side down. Bake the strudel until golden brown, 15 to 18 minutes. Remove from the oven and cool for 15 minutes before cutting into 2-inch slices. Sprinkle with confectioners' sugar just before serving. Serve plain or with ice cream.

Yield Makes six 5-inch pies

Number Of Ingredients 23

3 1/2 cups all-purpose flour, plus more for rolling
1 tablespoon sugar
1/2 teaspoon baking powder
1/8 teaspoon salt
2 1/2 sticks unsalted butter, cut into small pieces, frozen
3/4 to 1 cup buttermilk
6 cups Honeycrisp apples (about 2 pounds), peeled, cored, and sliced 1/8 inch thick, using a mandoline
1 tablespoon lemon juice
1/2 cup granulated sugar
1 cup packed light-brown sugar, divided
1 tablespoon plus 1 teaspoon all-purpose flour
1 teaspoon ground cinnamon
Pinch of salt
1 teaspoon vanilla extract
1/4 cup heavy cream
4 tablespoons unsalted butter
1/2 cup plus 2 tablespoons all-purpose flour
1 tablespoon sugar
1 tablespoon unsalted butter
1 scant cup pecans, roughly chopped
1 large egg white, beaten
1 tablespoon granulated sugar
1/2 teaspoon ground cinnamon

Steps:

  • Pastry: Combine flour, sugar, baking powder, and salt in the bowl of a food processor. Add butter and pulse until butter is incorporated, leaving pieces no larger than the size of a lentil. Transfer mixture to the bowl of a stand mixer fitted with the paddle attachment. With machine running on low speed, slowly add 3/4 cup buttermilk. Process until dough just comes together but does not form a ball, adding up to 1/4 cup more buttermilk if needed to bring dough together. Finish by hand, firmly pressing dough together to incorporate wet into dry. When there are still some dry crumbles, divide dough in half. Transfer each half to a piece of plastic wrap. Using the plastic wrap, form each into a disk and wrap well. Chill until firm. Divide each disk into 6 equal pieces. Working with one piece at a time, roll out on a lightly floured work surface into a 7-inch circle. Transfer to a baking sheet and place in freezer until well chilled. Repeat process with remaining dough.
  • Filling: Toss apples to coat with lemon juice in a large bowl. Add granulated sugar, 1/2 cup brown sugar, flour, cinnamon, and salt; toss to combine. Gently stir in vanilla and heavy cream. Melt butter in a large pot over medium heat, and add remaining 1/2 cup brown sugar and apple mixture. Cook, stirring occasionally, until mixture thickens. Let cool and transfer to refrigerator until chilled.
  • Streusel: Combine flour, sugar, and butter in a medium bowl. Mix until coarse crumbs form; add pecans and mix to incorporate. Transfer to refrigerator until chilled.
  • Finishing: Preheat oven to 375 degrees. Fit one dough round into a 5-inch metal pie tin to create a bottom crust. Fill with about 1/2 cup of the apple filling mixture. Sprinkle with 1 tablespoon streusel mixture. Gently brush edges of dough with egg white to moisten. Top with a second round. Gently press to adhere. Trim edges flush to end of pan and crimp, as desired. Brush top with egg white. In a small bowl, combine cinnamon and sugar and sprinkle over pie. Place on a rimmed baking sheet and transfer to refrigerator until chilled. Repeat process with remaining ingredients.
  • Transfer pies to oven and bake until golden brown, 45 to 50 minutes. Let cool on a wire rack. Serve warm or at room temperature.

FRUIT PLAIT

Fruit plait image

Kids will love helping make this easy spiced dessert - similar to an apple and pear strudel, but with ready-rolled puff pastry instead of filo

Provided by Good Food team

Categories     Dessert, Treat

Time 50m

Number Of Ingredients 12

1 ready-made 320g puff pastry sheet
1 tbsp plain flour
1 tsp vegetable oil , for greasing
2 tbsp sultanas
2 eating apples
2 pears
2 tbsp clear honey
3 tbsp apricot jam
pinch of mixed spice
pinch of cinnamon
1 egg
crème fraîche or vanilla ice cream, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Roll out the pastry on a lightly floured work surface into a large rectangle. Transfer to a lightly greased baking tray.
  • Put the sultanas in a small mixing bowl with just enough warm water to cover them, and soak for 10 mins.
  • Core the apples and pears and slice them into even-sized pieces - you don't need to peel them. Put the pieces in a bowl and add the honey and 2 tbsp apricot jam. Drain the soaked sultanas and add them to the mixture. Stir well and add the mixed spice and cinnamon to taste.
  • Spoon the mixture in a thick strip down the centre of the puff pastry. Use a sharp knife to make roughly 8 diagonal cuts down each side of the pastry like a lattice. Fold the pastry strips alternately across the filling like a plait.
  • Crack the egg into a bowl, whisk with a fork and, using a pastry brush, glaze the top of the puff pastry.
  • Place the plait in the oven and bake for 25-30 mins or until the apples are soft and the pastry is golden brown. Serve with crème fraîche or vanilla ice cream.
