1/4 cup lemon juice
1/3 cup shredded mint
3 ripe pears (1 1/2 pounds), Bartlett, Comice or Bosc, whichever is least expensive

Steps:

  • Mix the corn syrup, lemon juice, and mint together in a bowl.
  • Peel the pears and cut the flesh into 1-inch pieces. Add to the mixture, and refrigerate until cold.
  • Serve the pears in wine glasses with some of the syrup and mint.

3 medium ripe pears
1 cup sugar
1 cup water
2 drops green food coloring
1/8 to 1/4 teaspoon mint extract
Fresh mint sprigs

Steps:

  • Peel pears and cut in half lengthwise; remove cores. In a large skillet, bring sugar and water to a boil. Reduce heat; add food coloring and extract. Carefully place pears in syrup. Simmer, uncovered, for 5 minutes or until tender. , Place pears in a deep bowl; pour syrup over pears. Make sure pears are completely covered in the syrup to prevent browning. Refrigerate for at least 1 hour or until serving. Garnish with fresh mint.

One 750-ml bottle Moscato wine or other sweet dessert wine
2 cups Simple Syrup, recipe follows
1 cinnamon stick, broken in 1/2
2 tablespoons honey
One 3/4-inch piece fresh ginger, peeled, and finely chopped
1 vanilla bean, split lengthwise
6 small, firm, ripe Anjou pears, peeled
Serving suggestion: Vanilla ice cream or gelato
2 cups sugar
2 cups water

Steps:

  • In a saucepan large enough to hold all the pears, combine the wine, Simple Syrup, cinnamon stick halves, honey, and ginger. Scrape in the seeds from the vanilla bean and add the bean and seeds to the saucepan. Bring the mixture to a simmer, stirring occasionally, until the honey has melted. Add the pears and simmer for 15 to 20 minutes, turning occasionally, until the pears are tender. Remove the pears from the liquid and allow to cool.
  • Continue to simmer the liquid until it thickens and is reduced by half, about 15 to 20 minutes. Cool to room temperature. Remove the cinnamon stick halves and the vanilla bean and discard.
  • Place each pear on a small serving plate with a scoop of vanilla ice cream. Drizzle with the honey, ginger and cinnamon syrup. Serve immediately.
  • In a small saucepan, combine the sugar and water over medium heat. Bring to a boil, reduce heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool.

1 large lemon
1/2 cup sugar
6 Bosc pears (about 2 pounds)
1 regular tea bag (orange pekoe or another tea to your liking)
1/3 cup shredded fresh mint leaves or 1 mint-flavored tea bag
1 teaspoon cornstarch dissolved in 2 teaspoons water

Steps:

  • Pour 2 cups water into a stainless steel saucepan. With a vegetable peeler, peel the surface of the lemon, removing long strips of peel. Cut the lemon in half and press it to extract the juice. You should have 2 to 3 tablespoons of lemon juice. Add the lemon peel and juice to the water with the sugar, and mix to combine.
  • Peel the pears and cut them into quarters. Remove the cores and place the pear wedges in the saucepan. Add the ordinary tea bag and, if fresh mint is not available, the mint-flavored tea bag. Bring the mixture to a boil over high heat, cover, reduce the heat to low and cook gently for about 20 minutes, until the pear pieces are tender when pierced with the point of a knife or with a fork. Remove from the heat.
  • Immediately add the dissolved cornstarch to the saucepan and stir it into the juices to thicken them slightly. Let the pears cool in the syrup.
  • When ready to serve, remove the tea bag and discard. If using fresh mint, stir it gently into the syrup. Divide the pears among six plates, about 4 wedges per plate. Spoon some of the syrup over the pears and serve.
