PEAR SUNDAE FRENCH TOAST

Pear Sundae French Toast image

Coming upon this creation in a potluck line, I left with a full plate and the recipe. Now my family "oohs" and "aahs" as soon as I bring out this fruit-topped favorite. It's great for brunch or as a fanciful finish to a meal. -Carol Schumacher, Menoken, North Dakota

Provided by Cassie Best

Categories     Dessert, Treat

Number Of Ingredients 9

85g leftover Christmas pudding or Christmas cake, crumbled
3 tbsp brandy or orange liqueur (or use the juice from the pears)
410g can pear quarters, in juice

ASIAN PEAR CARAMEL SUNDAES

Asian Pear Caramel Sundaes image

Asian pears, sometimes known as apple-pears, are incredibly juicy, sweet and crunchy. They're one of my favorite fruits to eat and to cook with, whether in a savory dish or a dessert. This recipe uses a pear to make a delicious fruit caramel to spoon over ice cream for a fruity sundae that's a perfect end to a meal.

Provided by Food Network

Categories     dessert

Time 15m

Yield 2 servings

Number Of Ingredients 8

1/4 cup granulated sugar
2 tablespoons unsalted butter
2 tablespoons heavy cream
1 large Asian pear, peeled, cored and diced
1/2 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
Ice cream, any flavor, for serving
Whipped cream, for serving

Steps:

  • Place the sugar in a small saucepan and cook over medium heat until it has melted and begins to bubble, 1 to 2 minutes. Continue cooking until it turns light amber in color, 1 to 2 minutes longer, making sure to watch very closely to prevent burning. Immediately add the butter and cream and whisk until combined (it will bubble and boil, but just keep whisking!).
  • Add the diced Asian pear to the caramel and cook until the pear is al dente, 2 to 3 minutes. Stir in the vanilla and salt and serve over your favorite ice cream with a dollop of whipped cream.

  • Preheat the oven to 425°. In a medium saucepan, combine the sugar and water. Boil over moderately high heat, without stirring, washing down any crystals that form on the side of the pan, until a deep amber caramel forms, 6 to 8 minutes. Remove from the heat and stir in the cream; the sauce will bubble up. Pour the caramel into a heatproof cup and let cool slightly. Stir in the balsamic vinegar; keep warm.
  • Heat a rimmed baking sheet in the oven. In a bowl, toss the pears with the melted butter and salt. Spread the pears on the hot baking sheet and roast, stirring once, until golden around the edges and tender, 15 minutes; transfer to a plate to cool.
  • Reduce the oven temperature to 350°. Spread the hazelnuts in a pie plate and toast for 7 minutes; transfer to a cutting board and coarsely chop.
  • Spoon the pears into bowls and top with vanilla ice cream. Pour the balsamic-caramel sauce on top, sprinkle with the hazelnuts and serve.

WONDERING WHAT TO DO WITH OVERRIPE ... - JERSEYVOUCHER.COM

From jerseyvoucher.com
  • Freeze for Smoothies. Do you love to make smoothies? Yes? OK, good, because overripe fruit is perfect for freezing and using in smoothies. Cut off any parts of the pear that have gone bad, cut up the rest, seal it in a zip-close bag and put it in the freezer.
  • Pear Jam. If your pears are just slightly overripe, you can cook them into a pear jam. You need a lot of pears for this recipe — about three pounds — but the only other two ingredients are lemon juice and sugar.
  • Pear Crumble. Pear crumble is not only delicious, it’s also easy to make. Besides pears, the rest of the ingredients are staples you probably already have in your pantry or fridge.
  • Mash Into a Pancake Topping. Kitchn.com suggests mashing your browning pears and using them as a pancake topping or folding them into your batter. Fruit is always a delicious complement to breakfast foods.
  • Blend Them Into a Salad Dressing. Blend them with some olive oil, vinegar and seasoning for a salad dressing that’s a little on the sweet side. Perhaps try out this delicious pear vinaigrette.
  • Bake Into Fruit Leather. This is pretty much a homemade Fruit Roll-Up. Slow-bake your fruit into pear and cinnamon fruit leather. Although it does take a while in the oven (six to seven hours), it’s worth it.
  • Pear Ice Pops. Who doesn’t love ice pops? There’s no baking required for this recipe — these spiced ginger pear frozen pops only require a blender and some ice pop molds.
  • Vanilla Spiced Pear Butter. This vanilla spiced pear butter goes perfectly on toast, muffins, oatmeal and ice cream. This recipe uses seven pounds of pears and yields four pints of butter, but you could halve or quarter the recipe.
  • Pear Muffins and Bread. If you love to bake, use your overripe pears for pear and cinnamon muffins — this one’s fun to make with kids. Much like mushy brown bananas make for delicious banana bread, mushy pears are great for pear bread.
  • Pear Bourbon Cocktail. I’m not one for baking, so I’m not sure I could conquer pear muffins and bread, but this cocktail? It looks too delicious to not give it a try.
