Steps:
- In a large bowl, combine the flour, sugar, baking soda, cinnamon and salt. In another bowl, combine the eggs, oil and vanilla; stir into dry ingredients just until moistened. Fold in the pears and pecans. , Fill paper-lined muffin cups two-thirds full. Bake at 350° for 25-30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

- Heat oven to 375°F. Spray 24 mini muffin cups with nonstick cooking spray.
- Lightly spoon flour into measuring cup; level off. Combine flour, pecans, sugar, baking powder and salt in a medium bowl; mix well.
- In small bowl, beat egg; stir in milk, butter, lemon zest and vanilla until thoroughly mixed. Stir in pears. Add to dry ingredients; stir just until combined. Spoon batter into muffin pans.
- Bake at 375°F. for 10 to 13 minutes or until muffins are golden brown and toothpick inserted in center comes out clean. Serve warm.
