PEAR AND OATMEAL CRISP

Pear and Oatmeal Crisp image

Provided by Food Network

Categories     dessert

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 11

4 to 5 ripe Bartlett or Anjou pears
1/4 cup cranberries, fresh or dried
2 tablespoons sugar
1/3 cup all-purpose flour
1/3 cup rolled oats, uncooked
1/4 cup dark brown sugar
1 tablespoon granulated sugar
1/4 teaspoon cinnamon
Pinch nutmeg and salt
1/2 cup or 1 stick unsalted butter, melted
Heavy whipping cream or ice cream, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Peel, core, and thickly slice the pears. Toss them with the 2 tablespoons sugar and the cranberries and turn them into a deep, buttered 2-quart baking dish. The fruit should be at least 2 1/2-inches deep in the pan; add more fruit, if necessary.
  • For the topping, in a bowl, stir together the flour, oats, sugars, cinnamon, nutmeg, and salt. Drizzle in the melted butter tossing the ingredients with a fork to blend. Be careful not to over mix because you want a loose crumbly mixture, not a bound-together ball of topping. Sprinkle the topping over the pears.
  • Bake for 30 minutes, until pears are tender and topping is browned. Serve warm with heavy cream or ice cream.

1 teaspoon ground cinnamon

  • In a saucepan combine the pear nectar with 3/4 cup water. Cook slowly over medium heat just until bubbles appear around the edges. DO NOT boil.

Provided by Jennifer Drummond

Categories     Cookies

½ cup coconut oil
½ cup coconut sugar or brown sugar
1 large egg
1 tsp vanilla extract
½ tsp. baking soda
¼ tsp. salt
1 tsp. cinnamon, ground
¾ cup whole wheat
1½ cup old fashion oats (I used Trader Joe's rolled oats)
1 cup pear, peeled, cored, diced small (1 large pear)

Steps:

  • Preheat oven to 350 degrees.
  • Line 2 baking sheets with parchment paper; set aside.
  • In a large bowl; add coconut oil, coconut sugar, egg and vanilla extract. Mix with a spoon, until well combined.

  • With a large cookie scoop (I used 3 tbsp. capacity scoop), scoop out the dough and pat it into the scoop to form a firm cookie. Place onto prepared baking sheet, spaced about 2" apart. I put 9 cookies per baking sheet. Note: I used my fingers to pat the top of the cookie to flatten a bit and to make sure it is held together.

PEAR CRISP WITH OATMEAL TOPPING

Pear Crisp With Oatmeal Topping image

This pear crisp is made with a classic butter and brown sugar and oat topping. This is a fabulous dessert served warm with a scoop of ice cream.

Provided by Diana Rattray

Categories     Dessert

Time 55m

Number Of Ingredients 10

6 large pears
2 tablespoons lemon juice
1 1/2 cups light brown sugar
1 cup all-purpose flour (divided)
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
3/4 cup quick-cooking oats
1/4 teaspoon baking powder
6 tablespoons melted
Garnish: ice cream or heavy whipping cream

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F. Generously butter an 8-inch square baking pan.
  • Peel the pears, cut out the stems, and scoop out the seeds and the fibers.
  • Slice the fruit thinly and put in a bowl with the lemon juice. Toss to coat with the lemon juice. The lemon juice will keep them from turning brown.

  • In a medium bowl, combine the oats, the remaining 3/4 cup flour, the remaining 3/4 cup brown sugar, baking powder, and the melted butter. Mix with a fork until the crumbs are blended.
  • Sprinkle the oat crumb topping evenly over the pear mixture.
  • Bake for 35 to 45 minutes until the oat topping is browned and the pears are tender.
  • Serve the crisp warm with a generous scoop of vanilla or butter-pecan ice cream or a drizzling of heavy or light cream.

  • Make the Caramelized Pears: Rinse your pear, and thinly slice it, discarding the core. Melt butter in a saucepan over medium heat. Add pears, and cook for 1-2 minutes, stirring occasionally so pears get evenly coated in the butter. Pears should be fork-tender. Add the brown sugar and stir to coat pears evenly. Cook another minute until you see a sort of caramel sauce forming, then sprinkle on the cinnamon, stir to coat pears, and remove pan from the heat.
  • Make your Oatmeal: I recommend doing this second, because oatmeal gets funky pretty quick if you cook it and then let it sit in the pot. Cook oats according to package directions - I use the quick cook oats. Stir in brown sugar and cinnamon if desired. You can also stir in some of the leftover caramel sauce from the pan - YUM.
  • Serve + Store: Add oats to a bowl, top with the pears and walnuts. Enjoy immediately! I DON'T recommend making extra oatmeal and trying to reheat it later - it's one of those things that just needs to be made fresh. Store leftover pears in airtight container in the fridge and reheat in a pan or in the microwave. I use about 1/3 of a pear in my oatmeal, so this should make enough caramelized pears for three breakfast bowls.

  • Start your oats by bringing water to a boil in a small saucepan. Once boiling add a pinch of salt and then your oats. Swirl to coat then cover and turn heat to low. Cook for 15 minutes or until the water is absorbed and the oats are tender.
  • In the meantime, prepare your pears. Heat a medium saucepan over medium heat. Once hot, add olive oil or butter. Once bubbling, add brown sugar and stir. Then immediately add in pears, lemon juice and cinnamon and stir to coat. Cover to steam and soften the pears and cook for 10 or so minutes or until tender and golden brown. Once tender, remove the lid to allow them to caramelize a bit more. Remove from heat.
  • Divide oats between two bowls (as original recipe is written) and top with equal servings of pears. I also added a few pecans, which added a nice crunch and more protein.
