Steps:
- Heat oven to 350°F.
- Combine butter and 2/3 cup brown sugar in bowl. Beat at medium speed until creamy. Add all remaining crust ingredients; continue beating until well mixed.
- Press half of crust mixture onto bottom of ungreased 13x9-inch baking pan. Bake 9-11 minutes until edges are lightly browned.
- Combine all pear mixture ingredients in bowl. Toss to combine and coat chopped pear; set aside.
- Combine all filling ingredients except egg in bowl; beat at medium speed until well mixed. Add egg; continue beating until well mixed. Pour filling over partially baked crust. Spoon pear mixture over filling. Crumble remaining crust mixture evenly over pears; press down lightly.
- Bake 28-33 minutes or until top is golden brown and center is set. Cool completely; cut into bars. Store bars refrigerated.

- Heat oven to 350 degrees and line a 9x9-inch baking dish with parchment paper.
- Prepare filling: Peel, core and chop the pears into 1/2-inch pieces. You should have about 2 1/2 cups of chopped pears. Add pears, cranberries, sugar and orange juice to a heavy-bottomed skillet or saucepan. Bring the mixture to a boil and cook over medium-high heat, stirring occasionally until pears soften, cranberries burst, and juices are thickened and jammy, 7 to 10 minutes. Add vanilla, orange zest and fresh ginger and stir to combine. Remove from heat and let cool while you prepare the crust.
- Prepare crust and crumble: In a large bowl, combine flour, brown sugar, almond flour, oats and salt. Stir to combine. Add butter and almond extract, and stir until crumbs are well moistened.
- Reserve about 2 1/2 cups/360 grams of the mixture for the topping. Pour remaining crumbs into prepared dish and press them into an even layer. Bake the crust until golden, 10 to 15 minutes.
- Spoon filling (it's O.K. if it's still warm) evenly over the hot crust, top with reserved crumbs, and return pan to oven. Bake until golden, 20 to 25 minutes. Let the bars cool slightly before cutting and serving.

- Preheat the oven to 350*.
- Peel, quarter, and core the pears.
- Cut them into 1/2" slices and mix with the water, butter, maple syrup, cinnamon, and nutmeg in a heavy 12-inch skillet.
- Cook, covered,over moderate heat, until the pears are tender but not mushy-about 5 minutes.
- Uncover and cook until all of the liquid has evaporaed and the pears have started to caramelize-4 minutes longer.
- Remove from the heat and set aside.
- To prepare the custard: In a medium-size bowl or 2-quart maeasuring cup, whisk the eggs, milk, maple syrup, vanilla, and salt.
- Distribute the pears among four 6-ounce or six 4-ounce flameproof custard cups.
- Pour the custard over the pears.
- Set the cups in a baking pan and pour hot water into the pan until it comes halfway up the sides of the cups.
- Bake, uncovered, for about 35 minutes or until a knife inserted midway between the rim and the center comes out clean.
- Transfer the cups to a wire rack and cool to room temperature-30 to 40 minutes.
- Cover with plastic wrap and refrigerate for at least 2 hours.
- Will keep for up to 3 days.
- Preheat the broiler.
- Sprinkle the cold custards with the pecans.
- Whisk togerher the butter, maple syrup, and cream; spoon the mixture over the custards.
- Broil 6 inches from the heat for about 3 minutes or until the topping bubbles.
- Serve immediately.

- Preheat oven to 375°F (190°C). I don't line my baking sheet when I make these, but you absolutely can with parchment or a silicone baking mat.
- Cut pears in half, then cut a small sliver off the underside so the pears sit flat when placed upright on the baking sheet. See video above for visual. Using a large or medium cookie scoop or melon baller (or even a teaspoon), core out the seeds. Arrange pears, facing up, on the baking sheet.
