Time 2h30m

Yield 8 to 10 servings

Number Of Ingredients 18

1 sheet refrigerated pie dough (half of a 14-ounce box)
3 tablespoons all-purpose flour, plus more for dusting
1 1/2 pounds assorted pears (such as Bosc or Bartlett)
1 1/2 pounds assorted apples (such as Gala, Honeycrisp or Golden Delicious)
1/2 cup chopped assorted dried fruit (such as cranberries, apricots and cherries)
1/2 cup chopped assorted dried fruit (such as cranberries, apricots and cherries)
1/2 cup honey
1/4 cup granulated sugar
Finely grated zest and juice of 1 lemon
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon salt
3/4 cup rolled oats
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
6 tablespoons cold unsalted butter, cut into small pieces

Steps:

  • Prepare the crust: Roll out the dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate. Fold the overhanging dough under itself and crimp the edge with a fork or your fingers. Refrigerate until firm, about 30 minutes.
  • Meanwhile, make the filling: Peel and thinly slice the pears and apples and transfer to a large microwave-safe bowl; add the dried fruit, honey, granulated sugar, flour, lemon zest and juice, vanilla, cinnamon and salt and toss to coat. Cover with plastic wrap and microwave until the apples and pears are tender and juicy, 5 to 7 minutes. Refrigerate until cold, 10 to 15 minutes.
  • Preheat the oven to 375 degrees F. Make the topping: Whisk the oats, flour, brown sugar, salt and cinnamon in a medium bowl. Using your fingers, work the butter into the oat mixture until small clumps form. Refrigerate until ready to use.
  • Place the pie crust on a baking sheet. Add the filling, slightly mounding it in the center. Press the crumble topping evenly over the filling. Bake until the topping is browned and the filling is bubbling, about 1 1/2 hours. (Tent with foil if the topping browns too quickly.) Transfer to a rack and let cool completely.

AMISH PEAR CRUMB PIE

Amish Pear Crumb Pie image

Simple ingredients go into making this delicious Amish Pear Crumb Pie. Fresh sliced pears mixed with cinnamon and spices, then topped with a sweet crumb mixture, and baked to perfection.

Provided by Lisa

Number Of Ingredients 10

1 - 9 inch deep dish frozen pie shell, thawed according to package directions
7 pears, peeled, cored, and sliced (1/4 inch thick slices)
1/3 cup sugar
1 tablespoon cornstarch
1/8 teaspoon salt
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 cup cold butter, cut into cubes
1 cup flour
1/2 cup light brown sugar

Steps:

  • To make this pear pie, you'll need a 9 inch deep dish frozen pie crust, thawed. I take the crust out when I am ready to peel and slice the pears. It thaws perfectly by the time I need it. If you're using a refrigerated crust, take it out when you are ready to prepare the pears. Once thawed, place crust inside a 9 inch glass pie pan.
  • Line a baking sheet with foil, this will be for easy clean up. Place pie crust pan on baking sheet. Preheat oven to 425 degrees.
  • Peel, core and slice the pears into thin slices, about 1/4 inch thick. Place sliced pears into large bowl. Add the sugar, cornstarch, cinnamon, nutmeg, and salt; gently mix together.
  • Spread into pie crust; set aside. You will have a "mound" of pears in this pie. This is normal, the pears will bake down and be perfect.
  • In a medium bowl, combine the cold butter (cut into small cubes), flour, and brown sugar with two butter knives, pastry knife or clean hands (a small food processor works well, too) until you have coarse crumbs. Sprinkle crumb mixture over the pears. I lightly pack the crumb mixture down so it will stick to the pears and not too much falls off.
  • Bake pie for 15 -20 minutes. Then check to see if the topping is getting too brown. If so, cover with foil and bake another 20 minutes or until pears are tender and cooked through. If the pie isn't brown enough, no need to cover it at this point, but check it after about another 5 minutes.
  • Allow to cool completely on wire rack before slicing. I like to chill the pie once it's cooled before slicing so that the filling sets a bit but it's not required.

  • Heat 45g of butter in a 25cm / 10 inch cast iron skillet, swirling all the time. Once the butter has melted and is bubbling add the spices, stir well. Now add the pears and the soft light brown sugar. Carefully mix well. When the liquid is bubbling around the pears, sprinkle the cornflour over the pears and mix well again.
  • Turn off the heat then take the crumble mixture out of the fridge. Sprinkle all of the crumble over the pears. Place the skillet on the middle shelf in the oven. Bake for 30 minutes turning the skillet around halfway through cooking. The crumble is done when the topping is golden, the juice is bubbling and the pears are tender.

  • For the crust, combine flour, salt, and sugar in a food processor. Add cubed butter and process for 10 seconds, just until the mixture resembles coarse meal. With the food processor running, add 2 tablespoons ice water in a steady stream through feed tube. If needed, add additional ice water 1 tablespoon at a time, and process just until dough holds together in large clumps (no more than 30 seconds). Wrap dough in plastic and flatten slightly to form a disc. Chill in the refrigerator at least 1 hour (or up to 2 days, or place in a freezer bag and freeze up to 1 month).
  • Combine oats, flour, brown sugar, cinnamon, nutmeg, and salt in a medium bowl. Cut in butter with a pastry blender until large crumbs form. Chill until ready to use.
  • Place dough on a floured board and dust dough with flour. Roll out dough (roll dough in one direction, then lift up dough and rotate a quarter turn and roll, then repeat) until dough is a 12 to 13-inch circle. If dough starts to stick, use a bench scraper to lift dough from board. Transfer dough to a 9-inch pie pan (see note below); trim overhang to one inch and crimp edges. Chill in the freezer for 30 minutes. Place a rimmed baking sheet lined with foil in the oven and preheat to 350°F.
  • Whisk together sugar, brown sugar, arrowroot starch, cinnamon, cloves, nutmeg, and salt in a small bowl. Melt butter in a large skillet; add pears and cook over medium-high heat until slightly tender. Use a slotted spoon to transfer pears to a large bowl, leaving the juices behind. Allow the pears to cool for 15 minutes before sprinkling with sugar mixture. Gently toss together until combined.
