This pear crisp recipe is only a guide. Place the 2 ramekin bowls on a small cookie sheet before putting them into the oven so it won't dirty in your oven.

- Preheat the oven to 375 degrees F (190 degrees C). Grease two small ramekins and place them on a baking sheet.
- Mix pears, honey, and flour together in a bowl. Place equal amounts of the fruit mixture into each bowl.
- Combine graham cracker crumbs, brown sugar, butter, walnuts, cinnamon, and nutmeg together in a small bowl; crumble on top of the fruit.
- Bake in the preheated oven until slightly brown, about 35 minutes. Serve.

- Combine pears with white sugar, lemon juice, and lemon peel.
- Place in greased 8 inch square baking dish.
- Combine oatmeal, brown sugar, flour, cinnamon, and ginger.
- Cut in butter with a pastry blender until mixture is crumbly.
- Sprinkle crumb mixture over pears.
- Bake 25 to 30 minutes, until topping is crisped.
- Serve warm.

- Preheat the oven to 375 degrees F (190 degrees C). Grease a 2 quart casserole dish or 9 inch square baking dish.
- In a medium bowl, stir together the oats, brown sugar, 1/2 cup flour, 1 teaspoon crystallized ginger, and cinnamon. Stir in the butter until the mixture is crumbly with pea sized lumps. Set aside.
- In a separate bowl, stir together the white sugar, 2 tablespoons flour and 2 teaspoons of crystallized ginger. Add the sliced pears, and toss to blend. Transfer to the prepared baking dish. Spread with the oat topping.
- Bake for 30 to 35 minutes in the preheated oven, until pears are soft and topping is golden brown. Cool slightly before serving with vanilla ice cream.

CRISPY PROSCIUTTO CUPS WITH PEAR FILLING
I found this recipe online (several sites have it) and am putting here for safe-keeping. I made this for Thanksgiving 2015, super easy and looked impressive. The prosciutto cups can be made the night before and stored in a plastic bag in the fridge; I also found that when leaving them to cool, the bottoms became a bit soggy (all grease pooled there), so maybe try cooling upside down or flipping them after a few minutes.

- 1) Cut ham into squares large enough to fit into mini muffin tin. Note: the ham will shrink, so it's ok if it sticks out a bit (although try to make it stick up, so it doesn't overlap with neighboring ham cups); I also saw this done with 2-4 strips overlaid in a criss cross.
- Bake at 375 for approx 10 minutes, until warm and stiff.
- Remove cups from oven and place on paper towel to cool and drain grease (see note above).
- Cut up pear into small cubes; mix with lemon juice and fill cups as much as you want.
- Garnish with colorful spices and/or herbs (sweet paprika and chives shown in picture).

- Preheat the oven to 400°F.
- Peel and cut pears into 1/2 to 3/4-inch pieces to yield about 7 cups.
- In a medium bowl combine pears, 2 cups cranberries, 1/3 cup sugar and lemon juice, and toss; pour into a 9x13-inch pan or 3 quart baking dish (or divide into 8 ramekins).

CRANBERRY PEAR CRISP
This yummy fall recipe comes from the food section of the Oregonian newspaper. It is written for fresh or frozen cranberries, not dried. I have increased the amount of orange juice to 1/2 cup based on a review - I made the dish with the new, increased amount, and it was perfect. Because it's somewhat tart, I prefer serving with vanilla ice cream, but sweetened whipped cream is good, too.
