Sweet nuggets of ripe pear and chocolate will surprise your taste buds in these delicious pear muffins.

2 eggs
1/2 cup granulated sugar
1/2 cup brown sugar
2 teaspoons vanilla
1/4 cup canola oil
1/2 cup plain Greek yogurt
2 cups diced pears
1/2 cup unsweetened cocoa powder
1 cup all purpose flour
1/2 cup white whole wheat flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder

Steps:

  • Preheat the oven to 350°Prepare a 12 tin muffin tray with cooking spray. Using a mixer beat the eggs, sugars, oil, yogurt and vanilla making sure there are no lumps from the brown sugar.
  • In a separate bowl, add in the flour, cocoa powder, salt, baking soda and baking powder until well mixed.
  • Add the wet ingredients to the dry ingredients and mix until combined.Add in the pears after mixing. Fill each muffin tin with batter.
  • Bake for 20 minutes then cool the muffins completely before removing from the tin. Serve or freeze for later.

Number Of Ingredients 15

2 cups all-purpose flour
1/2 cup packed brown sugar
2 teaspoons ground ginger
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 large egg, room temperature
1 cup plain yogurt
1/2 cup vegetable oil
3 tablespoons molasses
1-1/2 cups finely chopped peeled pears (about 2 medium)
1/2 cup raisins
1/3 cup chopped walnuts

Steps:

  • In a large bowl, combine the first eight ingredients. In another bowl, beat the egg, yogurt, oil and molasses until smooth. Stir into dry ingredients just until moistened. Fold in pears, raisins and walnuts. , Fill greased or paper-lined miniature muffin cups two-thirds full. Bake at 400° for 10-12 minutes or until muffins test done. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

4 -5 firm ripe pears, peeled, cored, and coarsely chopped (2 lb.)
1 cup walnuts, coarsely chopped

Steps:

  • Preheat oven to 350°.
  • Grease 14 standard muffin cups with butter or butter-flavored nonstick cooking spray; fill the unused cups 1/3 full with water to prevent warping.
  • Topping--stir together the sugar, walnuts, and cinnamon in a small bowl; set aside.
  • Muffins--in a bowl, stir together the flour, sugar, cinnamon, nutmeg, baking powder, baking soda, and salt.
  • In another bowl, whisk together the eggs, oil, buttermilk, and vanilla until blended.
  • Add the dry ingredients, stirring just until evenly moistened.
  • The batter will be slightly lumpy.
  • Using a large rubber spatula, gently fold in the pears and walnuts just until evenly distributed, no more than a few strokes.
  • Take care not to break up the fruit; no not overmix.
  • Spoon the batter into each muffin cup, filling it level with the rim.
  • Sprinkle the muffins with the topping, dividing it evenly.
  • Bake until golden, dry, and springy to the touch, 20-25 minutes.
  • A pick inserted into the center of a muffin should come out clean.
  • Transfer the pans to a wire rack and let cool for 5 minutes.
  • Unmold the muffins; serve them warm or at room temperature, with butter.

1 cup raisins (dark or golden)
2 cups all-purpose flour
3 eggs
1 1/2 cups sugar
1 teaspoon pure vanilla extract
1 cup vegetable oil
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon each ground cloves and ground allspice
2 cups peeled pear chunks (from about 3 pears)
1 cup chopped walnuts
1/2 cup maple syrup
1 1/2 cups confectioners' sugar

Steps:

  • Heat the oven to 350 degrees F. Place the raisins in a bowl and toss them with 2 tablespoons of the flour until lightly coated (this will prevent them from sinking in the cake batter during baking).
  • To make the cake: Beat the eggs and sugar in a mixer fitted with a whisk attachment (or using a hand mixer) until fluffy. With the mixer running, slowly pour in the vanilla and the oil. In a separate bowl, mix together the flour, salt, baking soda, cinnamon, cloves, and allspice. Mix into the egg mixture. Mix in the pears and nuts, then stir in the raisins by hand, distributing them evenly in the batter. Spoon into a 10-inch tube pan and bake about 45 to 60 minutes, until springy and dry in the center. Let cool in the pan on a wire rack, then turn it out. Freeze until ready to use or just wrap and store for up to 2 days.
  • To make the glaze: Stir the maple syrup and sugar together in a bowl. Glaze the cooled cake by spooning the glaze around the top of the cake and letting it drip down the sides.

300g self-raising flour
1 tsp baking powder
2 tsp ground cinnamon
85g golden caster sugar
250ml milk
2 eggs , beaten
100g butter , melted
2 ripe pears , peeled and cut into small chunks
100g soft toffee , chopped into pieces
25g flaked almond

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Line a 12-hole deep muffin tin with paper cases. Tip the flour, baking powder, cinnamon and a pinch of salt into a large bowl, then stir in the sugar. Mix together the milk, eggs and melted butter in a large jug and pour into the dry mix all at once, along with the pears and a third of the toffee pieces. Stir briefly until just beginning to combine - the batter should still be quite lumpy and have streaks of flour.
  • Divide the mixture between the cases, then sprinkle with the remaining toffee and the flaked almonds. Bake for 25-30 mins until the muffins are risen, golden and feel firm when pressed (the molten toffee will be extremely hot so be careful not to touch it). Remove from the tin to a wire rack to cool.
