Time 9h

Yield 20

Number Of Ingredients 10

¼ cup butter, cut into 1/4-inch cubes
½ cup brown sugar
1 (29 ounce) can pear halves, cut lengthwise into 4 slices
1 (1 pound) loaf sourdough bread, cut into 1-inch cubes
2 ½ cups eggs
1 ½ cups milk
2 tablespoons white sugar
1 teaspoon vanilla extract
½ teaspoon almond extract
¼ cup sliced almonds

Steps:

  • Evenly distribute the butter cubes into the bottom of a 10x14-inch baking dish. Sprinkle the brown sugar over the butter. Arrange the pear slices into the bottom of the dish. Arrange the bread cubes into a single layer over the pears.
  • Mix the eggs, milk, sugar, vanilla extract, and almond extract together in a bowl until fully blended; pour evenly over the bread cubes, assuring all pieces are evenly covered. Cover the dish with aluminum foil and chill overnight in refrigerator.
  • Preheat an oven to 350 degrees F (175 degrees C). Remove the casserole from the refrigerator and allow to warm while the oven preheats.
  • Bake in the preheated oven until the top of the bread is golden brown and the eggs have solidified, 45 to 60 minutes. Top with the sliced almonds to serve.

COCONUT-ALMOND FRENCH TOAST CASSEROLE

Coconut-Almond French Toast Casserole image

The buttery coconut-almond crust makes this French toast casserole truly special and offsets the creamy, fluffy texture of the bread. You'll want to assemble the dish the day before to give the bread time to soak in the custard.

Provided by Food Network Kitchen

Time 8h15m

Yield 8 servings

Number Of Ingredients 16

Unsalted butter, for greasing dish
9 slices Texas Toast or other thick-sliced bread
6 large eggs
3 1/2 cups half-and-half
5 tablespoons granulated sugar
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
Pinch of salt
1/2 cup plus 3 tablespoons sweetened coconut flakes
1/3 cup plus 1/4 cup sliced almonds
5 tablespoons granulated sugar
5 tablespoons all-purpose flour
Pinch salt
6 tablespoons unsalted butter, softened
1 large egg plus 1 large egg yolk
Confectioners' sugar and berries, for garnish, optional

Steps:

  • Preheat the oven to 300 degrees F. Lightly butter a 9-by-13-inch casserole dish.
  • For the French toast: Lay the bread slices in one layer (it's OK if they overlap a little) on a baking sheet. Bake the slices (to dry them out a little) for 6 minutes, then flip and bake for 6 minutes more. Set aside to cool.
  • Whisk together the eggs, half-and-half, granulated sugar, vanilla, cinnamon and salt in a large bowl. Dunk each bread slice in the egg mixture to coat thoroughly and shingle the slices in the buttered casserole dish. Pour any remaining egg mixture over the bread. Cover the dish with plastic wrap and refrigerate for at least 6 hours or overnight.
  • For the coconut-almond crust: Put 1/2 cup of the coconut, 1/3 cup of the almonds, granulated sugar, flour and salt in a food processor and process until very fine. Add the butter, egg and egg yolk and process well to form a smooth paste.
  • To assemble the casserole: Preheat the oven to 350 degrees F. Spread the coconut-almond mixture evenly over the soaked bread slices. Top with the remaining 1/4 cup sliced almonds and 3 tablespoons coconut and bake until puffed and lightly golden and the custard is set (the center of the casserole will no longer jiggle when shaken), 45 to 50 minutes. Allow to cool for 1 hour before serving, or serve at room temperature.
  • Serve with a sprinkling of powdered sugar and berries if using.

ALMOND FRENCH TOAST

Almond French Toast image

This is one of my family's favorites brunches. Because of the baking powder the slices really "puff" up when fried, and the French toast is light and so fluffy! Prep time includes one hour refrigeration time. Also the bread slices need to be refrigerated for 1 hour.

Categories     Breakfast

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 12

2 cups cups slivered almonds (can use more or less)
3 eggs
1 cup half-and-half cream (or full-fat milk)
3 tablespoons flour
1/8-1/4 teaspoon salt
1/2 teaspoon baking powder
1/4-1/2 teaspoon almond extract
1 1/2 teaspoons vanilla
10 -12 slices thick French bread
3 tablespoons oil (more as needed)
4 tablespoons butter (more as needed)
confectioners' sugar (optional)

Steps:

  • Place the almonds in a small saucepan; toss occasionally until lightly browned (about 5-8 minutes) careful not to overbrown; set aside.
  • In a large bowl, whisk together eggs, half and half or milk (if using) flour, salt, baking powder, almond extract and vanilla.
  • Soak the bread slices in the egg mixture until soaked.
  • Place in a shallow glass dish.
  • Cover with plastic wrap and refrigerate the bread slices for about 1 hour.
  • Heat the oil and butter in a skillet (I do this on my large electric frypan).
  • Doing one slice at a time, press one side of the soaked bread slice into the toasted almonds to coat.
  • Fry the bread slices on both sides until golden.
  • Sprinkle with confectioners sugar if desired.

INSTANT POT CHOCOLATE ALMOND FRENCH TOAST CASSEROLE

Instant Pot Chocolate Almond French Toast Casserole image

A chocolatey twist on a holiday morning classic. It's perfect for breakfast or brunch, but can also be a great dessert.

Provided by Jonathan Melendez

Categories     Breakfast

Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 14

1 cup water
6 large eggs
1 1/2 cups chocolate milk
1/2 cup heavy cream
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1 (14 ounce) brioche bread, cut into cubes or 1 (14 ounce) challah, loaf cut into cubes
1/4 cup sliced almonds
1/4 cup powdered sugar, for serving
1/2 cup maple syrup, for serving
1 pint raspberries, for serving

Steps:

  • Grease a 7-inch round baking dish with butter or cooking spray. Place a trivet inside your Instant Pot and pour in the water.
  • In a large bowl, whisk together the chocolate milk, cream, sugar, vanilla, almond extract, cinnamon and salt until well combined. Add the cubed brioche and stir until combined. Allow to sit for 5 minutes so that the bread soaks up the mixture. Transfer to the prepared baking dish, top with almonds cover tightly with aluminum foil.
  • Place the baking dish inside the Instant Pot and lock the lid in place, making sure the valve is set to seal. Pressure cook on high for 30 minutes and then follow the manufacturer's instructions for quick release. Carefully open the lid and remove baking dish from Instant Pot, uncover and let cool 10 minutes.
  • Dust with powdered sugar, cut and serve with maple syrup and raspberries.

CARAMELIZED PEAR AND TOASTED ALMOND SALAD

Caramelized Pear and Toasted Almond Salad image

This is one of my favorites. My aunt served roasted pear and walnut salad at her wedding, and this is my version of it. It looks and sounds fancy, even though it's pretty simple, so I whip it out at parties every once in a while. I also like to sprinkle mozzarella over the top.
