1/2 cup creamy peanut butter
1/3 cup honey
1/4 cup soy sauce
3 tablespoons canola oil
1 garlic clove, minced
1 teaspoon curry powder
2-1/2 pounds chicken wings

Steps:

  • In a large bowl, combine the peanut butter, honey, soy sauce, oil, garlic and curry powder until blended. Cut chicken wings into three sections; discard wing tips. Add wings to peanut butter mixture; stir to coat. Cover and refrigerate for 2 hours., Transfer to an ungreased 13 x9-in. baking dish. Bake, uncovered, at 375° for 35-45 minutes or until chicken juices run clear.

1 pound chicken wings, cut into segments, tips removed and discarded
1 tablespoon salt
1 tablespoon freshly cracked black pepper
2 tablespoons soy sauce
1/4 cup honey
2 teaspoons lime zest
3 tablespoons lime juice, from 1 lime
1/4 cup orange juice, from 1/2 orange
1 tablespoon freshly grated ginger
1 teaspoon chili garlic paste
1/2 teaspoon sesame oil
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon granulated garlic
1 tablespoon oyster sauce

Steps:

  • For the wings at home:
  • Preheat the oven to 350 degrees F.
  • Season the wings with salt and pepper. Arrange the chicken wings on a baking sheet in a single layer. Put in the preheated oven and cook for 45 minutes.
  • Remove the wings from the oven to a bowl and allow to cool. Cover and refrigerate until ready to finish at the event on the barbecue.
  • For the Asian sauce at home:
  • Combine all of the ingredients in a resealable gallon-size plastic bag and combine well.
  • For the wings tailgaiting:
  • Preheat a grill to 350 degrees F, prepared for indirect heat. Add all the wings and cook for 10 to 15 minutes to reheat and get some grill marks, turning after 7 minutes. Remove the wings from the grill to a serving bowl. Add the sauce and toss to combine.

2 1/2 lbs chicken wings, separated at joint, tips discarded
1 cup teriyaki sauce, divided
4 garlic cloves (minced or pressed)
1/4 cup peanut butter
1 tablespoon rice vinegar

Steps:

  • In a 9" x 13" baking dish, stir together 3/4 c teriyaki sauce and 3 cloves of garlic. Add the wings and stir until evenly coated. Set aside 10 minutes while oven preheats to 475 degrees.
  • Put remaining 1/4 c teriyaki sauce and remaining clove of garlic into a food processor; add peanut butter and rice vinegar. Whirl until smooth. Pour into a small bowl.
  • Spread wings on a sheet pan and bake for 15 to 20 minutes, until firm and nicely browned. Serve with peanut sauce for dipping.

SPICY SATAY WINGS WITH PEANUT SAUCE



Spicy satay wings with peanut sauce image

These chicken wings are marinated, then baked until crisp and golden, served with a fiery, crunchy peanut sauce - the ultimate party buffet food

1.6kg whole chicken wings
sweet chilli sauce
1 cucumber , deseeded and cut into sticks, to serve
1 tbsp vegetable oil
1 tbsp light soy sauce
2 heaped tsp turmeric
2 heaped tsp ground cumin
4 garlic cloves , crushed
2 tbsp coconut cream
3 tbsp golden caster sugar
1 tbsp sunflower oil
3 garlic cloves , crushed
knob of ginger , finely grated
1 lemongrass stalk, bruised
1 Thai chilli , pricked all over with the tip of a knife (see tip, top left)
1 tsp ground cumin
4 tbsp crunchy peanut butter
1 tbsp golden caster sugar
2 tbsp coconut cream
100ml chicken stock (see 'Tip')

Steps:

  • Using a sharp knife or kitchen shears, snip the wing tips from the wings at the first knuckle. Discard the tips or use to make stock (see above left). Cut the remaining wing through the joint. Put the wings in a large non-metallic bowl or a food bag. Mix together the marinade ingredients and pour over the wings, toss well to coat, then chill for at least 4 hrs or overnight.
  • For the sauce, heat the oil in a pan, then add the garlic, ginger, lemongrass and chilli, and fry for 30 secs until aromatic. Stir in the cumin, toast for a few secs, then stir in the remaining ingredients. Simmer just long enough to make a slightly thickened sauce. Spoon into a bowl, cover and leave to cool. Can be made up to 3 days ahead and chilled.
  • Heat oven to 200C/180C fan/gas 6. Spread the wings over a large baking tray, sprinkle with a little salt and roast for 40-45 mins, turning halfway, until crisped and golden. If a large amount of juice has collected in the tray at the halfway point, pour it away before continuing to roast. Just before serving, warm the peanut sauce gently and remove the lemongrass and chilli. Serve with the wings, sweet chilli sauce and cucumber sticks.

The humble chicken wing fries up to an irresistibly crisp goodness, as legions of football fans can attest. But in this recipe, Craig Claiborne delivers an Indonesian twist on the old American standby: a soy marinade that sounds a bass note in the deep-fried result, excellent with a spicy dipping sauce on the side. It's a long way from Buffalo, but they're more than fit for game day.

16 large, meaty chicken wings, about 3 1/2 pounds
Salt to taste, if desired
2 teaspoons soy sauce
1 teaspoon sugar
1 teaspoon freshly squeezed lemon juice
1 tablespoon powdered cumin
1 1/2 teaspoons turmeric
Oil for deep frying
1 sweet red pepper, about 1/2 pound
1 tablespoon corn, peanut or vegetable oil
2 tablespoons finely chopped shallots
2 tablespoons curry powder or curry paste
1 cup coconut cream or milk
1/2 cup chunk-style peanut butter
1 teaspoon sugar
Cucumber salad (see recipe)

Steps:

  • Cut the chicken wings into three parts, main wing bone, second joint and wing tip. Discard the tips or use them for soup.
  • Put the chicken pieces into a mixing bowl and add salt, soy sauce, sugar, lemon juice, cumin and turmeric. Blend well. Let stand while preparing the peanut sauce.
  • Preheat the broiler to high and roast the pepper all over until the skin is charred. Place the pepper under cold running water and pull off the charred skin. Split the pepper open and remove the seeds and veins. Chop the pepper coarsely.
  • Heat the oil in a small skillet and add the shallots. Cook briefly, stirring, and add the curry powder or curry paste. Cook briefly and add the chopped pepper and stir. Remove from the heat.
  • Bring the coconut cream to the boil. Pour and scrape the pepper mixture into the cream. Add the peanut butter and sugar and let simmer about five minutes.
  • Pour the mixture into the container of a food processor or electric blender. Blend thoroughly. Return the mixture to a saucepan and bring to the simmer. If desired, the sauce may be thinned with up to one-quarter cup of water.
  • Heat enough oil to cover the chicken pieces well when they are added. It may be advisable to cook only half of the chicken pieces at a time. Heat the oil to a temperature of 360 degrees. Add the chicken pieces and cook until they are crisp and golden brown. Remove the pieces and drain on absorbent toweling. Repeat if necessary until all the pieces are cooked and drained.
  • Serve the hot sauce on the side as a dip for the deep-fried chicken pieces. Serve with a cucumber salad on the side.

1 cup all-purpose flour
2 teaspoons salt
2 teaspoons paprika

SAUCE:

2 teaspoons Louisiana-style hot sauce
1-1/2 teaspoons brown sugar

1/2 teaspoon ground ginger

Steps:

  • Cut chicken wings into three sections; discard wing tip sections. In a large resealable plastic bag, combine the flour, salt, paprika and pepper. Add wings, a few at a time, and shake to coat., In an electric skillet or deep fryer, heat oil to 375°. Fry wings, a few at a time, for 6-8 minutes or until no longer pink, turning once. Drain on paper towels. Transfer wings to a large bowl and keep warm., In a small saucepan, combine the sauce ingredients. Cook and stir over medium heat for 1-2 minutes or until smooth. Pour over chicken wings and toss to coat. Serve immediately.

50 chicken wings
2 (12 ounce) bottles beer
1 cup molasses
1/2 cup creamy peanut butter
1/2 cup fresh lemon juice
1/2 cup Worcestershire sauce
1/4 cup prepared mustard
1 teaspoon salt
2 tablespoons chili powder
1/4 cup chopped fresh parsley, , for garnish
1 -2 lemon, sliced thin,for garnish

Steps:

  • Preheat oven to 450 degrees F.
  • Remove and discard tips from wings and cut each wing in half at joint.
  • Combine remaining ingredients except parsley and lemon slices in a large saucepan.
  • Cook over low heat for about 15 minutes, until reduced and thickened to the consistency of thick gravy.
  • Place wings in a large roasting pan and cover with sauce.
  • Turn until each wing is well coated.
  • Bake for 15-20 minutes.
  • Serve on large platter.
  • Garnish with parsley and lemon slices.
