Number Of Ingredients 8

3 dried pasilla or guajillo chiles (about 1 1/2 oz.), stemmed and seeded
2 dried ancho chiles (about 1 1/2 oz.), stemmed and seeded
3/4 cup chopped white onion
3 cups boiling water
1 cup unsalted dry-roasted peanuts
1 tablespoon light brown sugar
1 1/2 teaspoons kosher salt
1 1/2 cups water

Steps:

  • Heat a large skillet over medium-high. Add chiles; cook 90 seconds or until fragrant. Place chiles in a heatproof bowl; add onion. Cover with 3 cups boiling water; let stand 30 minutes. Drain well; place in blender. Add peanuts, sugar, salt, and 1 1/2 cups water; process until smooth, stopping to scrape down sides.

This creamy peanut chipotle salsa recipe is quick and easy to make, and full of the most irresistible savory, smoky and sweet flavors. Serve as a dip, sauce, spread, or whatever sounds good!

1 (15-ounce) can diced tomatoes, drained
2 cloves garlic
1 large chipotle in adobo sauce
1 cup chopped fresh cilantro
1/2 cup natural peanut butter,* homemade or store-bought
1/2 cup diced white onion
2 tablespoons lime juice
1/2 teaspoon fine sea salt
1/2 teaspoon ground cumin
pinch of dried oregano

Steps:

  • Combine all ingredients in a food processor or blender and pulse until smooth.
  • Taste and season with extra salt (or any other ingredients you might like to increase) as needed.
  • Serve immediately with tortilla chips or use in your favorite recipe and enjoy!

CHIPOTLE, PEANUT AND SESAME SEED SALSA



Chipotle, Peanut and Sesame Seed Salsa image

This nutty, spicy salsa with the tang of vinegar is from Veracruz, Mexico, where it's called salsa macha. It has long been a favorite of Pati Jinich, the Mexican-born chef who lives in Washington, D.C. Her version comes together fast, and offers a lot of character and versatility. Use it to liven up roasted vegetables or grilled meats. It's especially great on lamb chops and skirt steak, or even baked potatoes served with sour cream and cheese. The salsa lasts for a couple of weeks in the refrigerator; the solids will sink to the bottom, leaving a deeply flavored oil that can add a little muscle to sauces or a finishing touch to other dishes. You can use other nuts in place of the peanuts, or a mix of nuts and sunflower or pumpkin seeds.

Number Of Ingredients 8

1 1/2 cups olive oil
1/2 cup raw unsalted peanuts (or use pecans, hazelnuts or walnuts)
4 garlic cloves, peeled
2 tablespoons sesame seeds
2 ounces dried chipotle chiles (1 1/2 to 2 cups), stemmed and seeded
1 teaspoon kosher salt, or to taste
1 tablespoon brown sugar, or to taste
3 tablespoons distilled white vinegar

Steps:

  • Heat the oil over medium heat in a 12-inch skillet until it is very hot but not smoking. Add the peanuts and garlic, then cook for about 30 seconds, stirring constantly. The peanuts should just begin to turn color. Be careful to not let them scorch, which can happen quickly.
  • Add the sesame seeds and chiles, and continue to stir and fry for a minute or until the chiles are lightly toasted.
  • Remove the pan from the heat and transfer the contents, including all of the oil, to a food processor or blender. Add the salt, sugar and vinegar, and blend until almost smooth. (The salsa should be uniform but have a little texture to it.)
  • Pour into a container and let cool. Refrigerate the salsa if you are not using it the day you make it.

2 cups avocado oil or grapeseed oil
1 medium white onion, quartered through stem end, layers separated
12-14 garlic cloves, smashed
8 serrano chiles, halved lengthwise, seeds and ribs removed
2 Tbsp. unsalted, sugar-free creamy peanut butter
1 tsp. vegetable bouillon concentrate (preferably Better Than Bouillon)
½ tsp. kosher salt, plus more
Chopped salted, dry-roasted peanuts (for serving; optional)

Steps:

  • Heat oil in a medium Dutch oven or other heavy pot over high. Add onion, garlic, and chiles. Reduce heat to maintain a low simmer and cook, stirring occasionally, until onions are translucent, chiles are blistered, and garlic is golden around the edges, about 10 minutes. Using a slotted spoon, transfer vegetables to a blender or food processor and let cool 10 minutes.
  • Add peanut butter, bouillon, and ½ tsp. salt to blender and purée. Remove small inset lid from top and, with the machine on the lowest setting, slowly pour in half the cooking oil (1 cup). Blend until salsa is velvety and emulsified. (Discard remaining oil or strain and reserve for another use, such as frying eggs or cooking the mushrooms for these tacos). Taste salsa and season with more salt if needed.
  • Transfer to a small bowl and top with peanuts just before serving.
  • Do ahead: Salsa (without peanut topping) can be made 2 weeks ahead. Cover and chill.

Mother-daughter team Lane and Elizabeth McCloud came up with the recipe just days before the competition. One 4- to 5-pound boneless pork shoulder (Boston butt), fat cap removed
Kosher salt and freshly ground black pepper
2 tablespoons ground cumin
Two 15.5-ounce jars salsa (mild, medium, or hot, however you like it)
1/2 cup peanut butter
Garlic Mashed Potatoes, for serving, recipe follows
1/2 stick (4 tablespoons) unsalted butter
2 cloves garlic, minced
One 24-ounce package prepared Yukon gold garlic mashed potatoes, preferably Good & Gather
2 scallions, thinly sliced

Steps:

  • Sprinkle the pork butt generously with salt, black pepper and about a tablespoon ground cumin. Place in a slow cooker.
  • In a medium bowl, whisk together the salsa, peanut butter and remaining tablespoon cumin. Pour into the slow cooker over the pork butt. Cook on low for 8 hours, or until fork tender.
  • Remove the pork butt from the slow cooker and shred with 2 forks. Serve in bowls over the Mashed Potatoes, topped with a ladle of the cooking liquid from the slow cooker.
  • Add the butter to a medium pot and place over medium-low heat. Once melted, add the garlic and cook until the garlic flavor is infused into the butter, 2 to 3 minutes. Add the mashed potatoes and mix to combine. Cook until the mashed potatoes are heated through, about 5 minutes. Top with the scallions and serve.

3/4 cup kraft asian sesame dressing
1/2 cup salsa (we use spicy)
1/4 cup chopped fresh basil
2 teaspoons peanut butter
1 teaspoon sesame oil
3 sprigs green onions, chopped

Steps:

  • Preheat oven to 400 degrees F. Spray a 9x13 inch pan with nonstick spray. Arrange chicken in a single layer.
  • Combine dressing, salsa, basil, peanut butter, and sesame oil in a bowl. Pour over chicken and make sure all pieces are well covered with sauce.
  • Bake uncovered for 35-40 minutes or until sauce is bubbly and chicken is not pink in the centre.
  • Sprinkle with green onion.
  • Serve with rice.
