- Bring 1 ? cups water to a boil over high heat. Add rice and 1 teaspoon salt. Stir and cover. Reduce to low and steam until rice is very tender, about 20 minutes. Let sit an additional 5 minutes. Uncover and fluff with a fork.
- Cut twelve 5-inch squares of parchment. Center one square over the cup of a 12-cup muffin tin. When rice is cool to the touch but still warm, spoon 2 rounded tablespoons into paper. Using wet fingers, press rice on the bottom, against, and up the sides of the muffin tin to form a rice cup. Repeat with remaining rice and additional pieces of parchment. You should use entire portion of steamed rice.
- Combine ahi tuna, cucumber, avocado, scallions, and rice wine vinegar in a large bowl. Gently fold to combine. Divide mixture among rice cups. Top with sesame seeds and toasted nori, and serve immediately, with soy sauce, wasabi, and ginger.

MASAMAN, MASSAMAN, MUSSUMAN CURRY TOFU
While Masaman Curry is commonly served with beef, I love the texture tofu adds to this spicy-sweet dish. You can use any protein you like, other common meats are chicken or shrimp. I use Mae Ploy Masaman Curry found at Asian grocery stores or higher-end grocery stores. Why spend $9+ on a single serving when you can make it at home for cheap and feed an army? I love this dish! Just typing the word 'curry' makes my mouth water. As an authentic alternative to sugar and lime juice use 1 T. sugar and 1 T. tamarind juice

Steps:
- In a saucepan, stir fry curry paste with half the can of coconut milk until combined. Add remaining coconut milk and heat until boiling.
- Add remaining ingredients (except sugar and lime juice) and cook until potatoes and carrot soften and start to absorb flavors. About 20 minutes.
- Remove bay leaves and cinnamon stick, add sugar and lime juice and gently stir until combined.
- Serve over jasmine rice and top with crushed peanuts.
- *Note: For a variation try one small potato and one small sweet potato.

BAKED CURRY TOFU
Tofu is a wonderful food that picks up flavors very well. In this case, the curry sauce is strong and bakes into the tofu which yields not only great flavor but also a nice chewy texture. Serve with sauteed spinach and basmati rice for a balanced meal. Leftovers can be used as sandwich filling with a little chutney.

Steps:
- Preheat oven to 425 degrees.
- Combine orange juice, lime juice and curry powder in a 9 x 13 glass or ceramic baking dish.
- Drain tofu.
- Cut block of tofu horizontally into three pieces.
- Then, with pieces stacked on top of each other, cut tofu on the diagonal from one corner to the other.
- Repeat the cuts on the other two corners.
- You should have 12 triangles of tofu.
- Place tofu pieces in a single layer in the baking dish and turn to coat with the marinade.
- Bake the tofu for about 25 minutes, turning once, until the marinade is absorbed and the tofu is browned.
- Serve immediately or use cold or at room temperature as a sandwich filler.

Steps:
- Heat oven to 350 degrees.
- Lightly spray 12 small muffin cups.
- Melt 1 tablespoon of butter and lightly brush each wonton pastry before pushing into muffin cups.
- Saute green onions.
- Melt cheeses and mayonnaise in pan.
- Add seasonings and lemon juice.
- Add filling (could be crab, shrimp, mushrooms) to heat only.
- Scoop into wonton cups.
- Bake 12-15 minutes until wontons are golden brown.
