PEANUT BUTTER CANDY
A quick and easy candy that is very rich.

Steps:
- Butter an 8x8x2 inch square pan. Set aside.
- In a 2 quart saucepan with a candy thermometer inserted, cook sugar, light corn syrup, milk, and salt, until thermometer reads 234 degrees F (112 degrees C). Remove from heat and stir in vanilla and peanut butter.
- Put peanut butter mixture in a large mixing bowl and beat until mixture begins to thicken. Pour into prepared pan. Chill until completely cooled. Cut into squares.

OLD FASHIONED PEANUT BUTTER CANDY

Steps:
- Mix all ingredients in a large bowl.
- Place waxed paper on the counter and put half the dough onto the paper.
- Roll out (like playdough!) into a long snake. Repeat with the second half of the dough.
- Wrap in the wax paper and refrigerate for 20 minutes (this is optional).
- Optional: roll the peanut butter roll in powdered sugar. You can also add tiny chocolate chips as a mix-in when making this recipe!)
- Slice the candy and wrap each piece in a square of wax paper.

- Spoon peanut butter and cream cheese frosting into a microwave-safe bowl; heat in microwave on high for 30 seconds. Stir mixture and heat again in microwave for 30 seconds; stir again until completely blended.
- Pour mixture into the prepared baking pan. Refrigerate until chilled, about 1 hour.

- In a large bowl with an electric handheld mixer or an electric stand mixer with a paddle attachment beat the peanut butter, cream cheese, and unsalted butter together. Make sure to scrape the sides of the bowl down to ensure everything is evenly combined.
- Sift the powdered sugar into the bowl and gently mix (if you mix too fast you will create a powdered sugar storm and a huge mess!). The mixture will look crumbly, you don't want to add to much sugar because you want to be able to press the peanut buter clumps togther. If it is too sticky add 1 tablespoon more powdered sugar at at time.
- Line a baking sheet with a silpat liner or wax paper and use a small cookie scoop ( I use this Cookie Scoop 0.5 Tablespoon) to make evenly sized peanut butter balls. Place each ball on the sheet, ensuring no balls are touching each other. Place tray in the fridge for 20 minutes or the freezer for 10 minutes.
- In a bain-marie, double boiler, or in the microwave melt the chocolate and oil together. Make sure to not over heat the chocolate, when in doubt take it off of the heat and let the residual heat melt the rest of the chocolate. When chocolate burns there is no going back.
