PEANUT BUTTER SANDWICH CHIPPERS
Enjoy these delicious peanut butter, oats and miniature chocolate chips filled sandwich cookies that are baked using refrigerated peanut butter cookies for an anytime dessert idea.

Steps:
- Heat oven to 350°F. In large bowl, break up cookie dough. Stir or knead in oats and chocolate chips. Work with half of dough at a time; refrigerate remaining dough until needed.
- Drop dough by slightly rounded measuring teaspoonfuls 1 inch apart onto ungreased cookie sheets. Repeat with remaining dough.
- Bake 7 to 10 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets. Cool completely, about 10 minutes.
- Meanwhile, in small bowl, mix remaining ingredients until well blended.
- For each sandwich cookie, spread 1 teaspoon peanut butter mixture on bottom of 1 cookie. Top with second cookie, bottom side down; press together gently. Let stand until filling is set up, about 30 minutes. Store in loosely covered container.

- In a small bowl, cream the butter, peanut butter and sugars until light and fluffy. Beat in egg and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in chocolate chips. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 11-14 minutes or until golden brown. Remove to wire racks.

- Preheat oven to 350 degrees F.
- Cream the butter and peanut butter together in a large mixer on high. Add the sugar, brown sugar and vanilla and continue to beat until the mixture is fluffy. Add the egg and beat until combined. Mix the flour, baking soda, baking powder, and oats together in a separate bowl and add to the butter mixture. Mix until well combined.
- Place the batter onto a sheet pan by the tablespoonful, leaving about 2 inches between each cookie. Bake in the top half of the oven until the cookies are golden, about 10 minutes. Remove and let cool.
- When the cookies are completely cool, put a teaspoonful of the butter cream or simply just some peanut butter and strawberry jelly, or chocolate-hazelnut spread into the center of half of the cookies. Top with the remaining cookies, pressing down until the filling squeezes out a bit. Refrigerate until ready to serve.
- Pinch salt Cream the butter and peanut butter together using an electric mixer. Add the sugar and molasses and beat until thick and creamy, about 2 minutes. Add the heavy cream and salt and beat one additional minute. Spread on the cookies immediately.
PEANUT BUTTER, JELLY, AND CHIP SANDWICH
My younger brother and I would always take our potato chips and put them inside our PB&J sandwich. We loved the crunch! And, the saltiness of the chips really off-sets the sweetness of the sandwich. I think we got the idea from an episode of the Cosby Show after seeing Cliff Huxtable line his hoagie with potato chips and wash it all down with grape soda!

My family eats them so quickly.I found this recipe in a Pillsbury cookie cookbook. The original recipe uses a store bought refrigerated roll cookie dough but I made my own dough. So, I am including the homemade cookie dough in this recipe for you.

- Preheat oven to 350 degrees.
- In a large bowl, cream butter and the 1/2 peanut butter together; add the sugars, egg, and vanilla.
- In a separate bowl stir together the flour, baking powder,and baking soda; gradually beat into the creamed mixture.

- Drop by rounded teaspoonfuls 2" apart on ungreased cookie sheets.
