1 ¼ cups chocolate cookie crumbs
¼ cup white sugar
¼ cup butter
1 (8 ounce) package cream cheese, softened
1 cup creamy peanut butter
1 cup white sugar
1 tablespoon unsalted butter, softened
1 teaspoon vanilla extract
1 cup heavy whipping cream

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine 1 1/4 cup cookie crumbs, 1/4 cup sugar, and 1/4 cup butter; press into a 9-inch pie plate. Bake in preheated oven for 10 minutes. Cool on wire rack.
  • In a mixing bowl, beat cream cheese, peanut butter, 1 cup sugar, 1 tablespoon butter, and vanilla until smooth. Whip the cream, and fold into the peanut butter mixture.
  • Gently spoon filing into crust. Garnish pie with chocolate or cookie crumbs if desired. Refrigerate for several hours before serving.

1 (8 ounce) package cream cheese, softened
½ cup creamy peanut butter
½ cup confectioners' sugar
1 (16 ounce) container frozen whipped topping, thawed
15 miniature chocolate covered peanut butter cups, unwrapped

Steps:

  • Mix the cream cheese, confectioners' sugar and peanut butter together until smooth. Fold in 1/2 of the whipped topping. Spoon the mixture into the graham cracker crust.

25 chocolate wafer cookies (such as Nabisco Famous) (from 1 [9-oz.] pkg.)
1/4 cup (2 oz.) unsalted butter, melted
8 ounces cream cheese, softened
1 cup creamy peanut butter
3/4 cup (about 3 oz.) unsifted powdered sugar
2 cups heavy whipping cream
2 tablespoons chopped salted dry-roasted peanuts

Steps:

  • Place cookies in a food processor; pulse until finely crumbled, 12 to 15 pulses. Add butter; pulse until crumbs are moistened, about 6 pulses. Transfer crumbs to a 9-inch pie dish, pressing firmly into bottom and up sides. Refrigerate for 1 hour.
  • Place cream cheese, peanut butter, and powdered sugar in bowl of a stand mixer fitted with a whisk attachment. Beat on medium-high speed until light and fluffy, 2 to 3 minutes. Transfer to a large bowl, and set aside. Clean mixer bowl and whisk attachment, and wipe dry.
  • Add whipping cream to cleaned mixer bowl; beat on medium-high speed until medium peaks form, 2 to 3 minutes. Gently fold 2 cups of the whipped cream into peanut butter mixture. Transfer filling to prepared piecrust, and gently smooth top using a rubber spatula. Top with remaining whipped cream. Refrigerate at least 3 hours or up to 8 hours (or overnight).
  • Sprinkle top with peanuts, and serve.

Steps:

  • In a small bowl, add the confectioner's sugar and 1/2 cup of the peanut butter. Cut sugar into peanut butter with a fork until mixture is crumbly. Place half of mixture in bottom of baked pie shell, reserve remainder for top.
  • In large sauce pan, add the egg yolks, milk, sugar, peanut butter, vanilla, salt, and cornstarch. Cook over medium low heat until thick, stirring constantly (I used a whisk). Pour over peanut butter crumbles in the pie crust.
  • Beat egg whites until foamy, add sugar. Continue beating until soft peaks form. Spread over top of pie, being careful to seal at edges. Sprinkle remainder of peanut butter crumbles over top of pie.
  • Bake at 325 for thirty minutes.
  • Refrigerate for several hours before serving.

20 chocolate sandwich cookies
1/4 cup unsalted butter (melted)
1/3 cup granulated sugar
3 Tbsp cornstarch
1/4 tsp salt
3 egg yolks
2 1/2 cups milk
1/2 tsp vanilla extract
1/2 cup creamy peanut butter
8 oz container whipped topping
1/4 cup peanuts (chopped)

Steps:

  • Preheat oven to 350 degrees and spray a 9" pie dish with cooking spray. Crush the chocolate sandwich cookies into fine crumbs then stir together with melted butter until completely combined. Press the crust mixture into the pie dish using a flat-bottomed cup such as a measuring cup. Bake the crust 6 minutes then remove from the oven to cool.
  • Next, add the sugar, cornstarch and salt to a medium-sized saucepan (off the heat). Add the egg yolks and whisk until completely combined and a smooth paste forms. Slowly add the milk, whisking the mixture to completely dissolve the paste.
  • Place the saucepan over medium heat, whisking constantly until the liquid thickens and comes to a bubble. Continually remove the thickened pudding from the bottom of the pan and stir constantly or it will scorch.
  • Once the first bubble appears, reduce the heat to low and continue to cook for exactly 1 minute, whisking vigorously and constantly. Remove the pudding from the heat and whisk in the vanilla and peanut butter until completely smooth and well combined. Transfer the pudding to the pie crust and smooth into an even layer or slightly higher in the center. Cover with plastic wrap and place in the fridge for at least 4 hours or until completely chilled.

1/4 cup sugar
6 tbsp melted butter
8 oz mascarpone cheese (at room temperature)
1 cup peanut butter (creamy or crunchy, up to you)
1 cup confectioner's sugar ((4 ounces by weight))
1 tsp vanilla extract
1.5 cups heavy cream
1/2 cup heavy cream
1 tbsp sugar
chopped peanut butter cups (for garnish (about 6 mini, or 2 regular))

Steps:

  • Preheat oven to 350 degrees F.
  • In a food processor, pulse together the graham crackers and sugar, until ground.
  • Add the melted butter, and pulse until evenly moistened, about 10 times.
  • Press the mixture evenly into a 9" pie plate, pushing the crust about halfway up the sides.
  • Bake for 8-10 minutes, until it looks dry and has lots its sheen, then cool completely on a wire rack.
  • To make the filling, with a hand mixer, beat the mascarpone, peanut butter, confectioner's sugar, and vanilla extract, until fluffy and light, about 2 minutes.
  • In a separate bowl, whip the cream to soft peaks, then gently fold it into the peanut butter mixture in 3 separate installments.

¾ cup salted butter, (sliced into tablespoons)
6 ounces semi-sweet baking bar (chopped)
2 teaspoons vanilla extract
1 ½ cups all-purpose flour
1 cup granulated sugar
1 cup light brown sugar (packed)
¾ cup unsweetened cocoa powder
½ teaspoon baking soda
3 large large eggs
2 cups semi-sweet chocolate chips
8 ounces cream cheese (softened)
¾ cup powdered sugar
½ cup creamy peanut butter
1 teaspoon vanilla extract
8 ounces whipped topping
¼ cup melted chocolate bark (optional)

Steps:

  • Preheat the oven to 350°F. Line a 9x13-inch baking dish with foil and spray with cooking spray, set aside.
  • In a medium-sized bowl add the butter and chopped chocolate. Microwave for 30 seconds, stir. Microwave for another 30 seconds, stir. Start microwaving at 15-second intervals stirring in between until the mixture is melted.
  • Stir in the vanilla and set aside.
  • In the bowl of a stand mixer with the paddle attachment add the flour, sugar, brown sugar, cocoa powder, baking soda and stir to combine.
  • At low speed add in the eggs one at a time until mixed in. Turn the mixer on medium and let it mix for 2 minutes, scrape down the sides.
  • Turn the mixer on low and slowly stream in the melted chocolate mixture until combined.
  • Add the chocolate chips and just mix them in so they are incorporated through the batter. This mixture will be very thick.
  • Press the brownie batter into the bottom of the baking dish. I find using my hands to spread it out easiest.
  • Bake for 25-30 minutes until the top is set, no longer glossy, and the edges slightly puff up. You can take an internal temperature, if the brownies are 165°F they are done.
  • Let cool on a wire rack completely.
  • Once the brownies are cooled, make the topping by placing the cream cheese in a large bowl. With an electric hand mixer, beat it until smooth. Add the powdered sugar, and mix until smooth.
  • Add the peanut butter and vanilla, mix until smooth. Fold in the whipped topping until smooth and there are no streaks left, this can take a couple of minutes.
  • Smooth the peanut butter mixture on top of the brownies. Cover and place in the fridge for at least 4 hours or overnight.
  • Use the foil to help lift the brownies out of the pan.
  • Cut into bars and drizzle with optional melted chocolate bark.
  • Serve as is or with your favorite toppings such as whipped cream, chopped peanuts, chocolate chips, or Reese's pieces!
