CHOCOLATE PEANUT BUTTER COBBLER



Chocolate Peanut Butter Cobbler image

This decadent cobbler has a chocolate peanut butter cake and a warm, fudgy sauce underneath. Drizzled with peanut butter and topped with vanilla ice cream, it's a dessert to remember!

1 c flour
2 tsp baking powder
1/2 tsp salt
2/3 c sugar
3 tbsp cocoa powder
2 tbsp butter (melted)
1/2 c milk
1/2 c creamy peanut butter
1/4 c sugar
1/2 c brown sugar
1 tbsp cocoa powder
1 c boiling water
1/4 c peanut butter (melted)

Steps:

  • Preheat oven to 350°F.
  • In a medium sized mixing bowl, combine the flour, baking powder, salt, sugar and cocoa. Then stir in the melted butter, milk and peanut butter. (This makes a thick batter.)
  • Spread the mixture into a greased 1.5 qt casserole dish (or square pan). Set aside.
  • In another bowl, combine the dry topping ingredients (sugar, brown sugar and cocoa). Sprinkle on top of the batter; do not stir.
  • Pour the boiling water on top; do not stir.
  • Bake for 30 minutes, or until the top of the cake is almost set. (There will still be some jiggle as the bottom will be runny). The cake will rise to the top and a pudding will form on the bottom.
  • Drizzle the melted peanut butter (I just put it in the microwave for 20-30 seconds) on top. Serve warm with vanilla ice cream.

2 cups Oreo cookie crumbs
2 tablespoons sugar
1/3 cup butter, melted
FILLING:
1-1/2 cups sugar
1/3 cup cornstarch
2 tablespoons all-purpose flour
1/2 teaspoon salt
6 cups 2% milk
6 large egg yolks, beaten
1 cup creamy peanut butter
TOPPING:
2 cups heavy whipping cream
1 tablespoon confectioners' sugar
6 peanut butter cups, chopped
1/2 cup chopped salted peanuts
2 tablespoons chocolate syrup

Steps:

  • Preheat oven to 375°. Combine cookie crumbs and sugar; stir in butter. Press onto bottom of a greased 13x9-in. baking dish. Bake until set, about 8 minutes. Cool on a wire rack., For filling, in a large saucepan, combine sugar, cornstarch, flour and salt. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes. Remove from heat. Stir a small amount of hot mixture into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes., Remove from heat. Stir in peanut butter until smooth. Pour over crust. Cool to room temperature. Refrigerate, covered, at least 2 hours., In a large bowl, beat cream until it begins to thicken. Add confectioners' sugar; beat until stiff peaks form. Spread over peanut butter mixture. Sprinkle with peanut butter cups and peanuts. Drizzle with chocolate syrup.

1/3 cup peanut butter
1/4 teaspoon salt
3 eggs
1 (12 ounce) can evaporated milk
1 cup water
1/2 teaspoon vanilla
1/8 teaspoon nutmeg

Steps:

  • Cream sugar, salt and peanut butter.
  • Stir in eggs and milk until well blended.
  • Slowly stir in boiling water, then vanilla.
  • Ladle into well buttered custard cups. (6-8 cups).
  • Sprinkle with nutmeg.
  • Place cups in shallow pan.
  • Fill with hot water to within 1 inch of top of cups.
  • Bake in 325 degree oven about 40 minutes or until set.

This custard shows off the way that you can combine different types of carrageenans to create a custardlike dessert with a soft, tender texture that holds its shape beautifully. It gives you the gentle, set texture of a baked egg custard but it can be cooked on top of the stove. Beyond that, if you love peanut butter, you are going to be in hog heaven. It's that good.

Yield makes 8 servings

Number Of Ingredients 6

200 grams maple syrup
1,010 grams whole milk
7.1 grams (0.5%) iota carrageenan (see Sources, page 309)
1.4 grams (0.1%) kappa carrageenan (see Sources, page 309)
200 grams creamy peanut butter
4 grams fine sea salt

Steps:

  • Put the maple syrup in a blender with 112.5 grams of the milk. Turn the blender on low and slowly increase the speed until a vortex forms. Sprinkle in the carrageenans and blend for 30 seconds to disperse them. Add the remaining milk to the blender and pulse to combine.
  • Pour the mixture into a pot set over medium heat. Slowly heat to 185°F (85°C) to hydrate the carrageenans.
  • In a small bowl, microwave the peanut butter for 1 to 2 minutes to warm it through. When the milk reaches the desired temperature, add the peanut butter and salt and stir together. Pour the mixture into a clean blender and puree to fully combine the ingredients.
  • Pour the custard base into eight 6-ounce molds and refrigerate for at least 3 hours. When the custards are completely cool, unmold and serve. Once the custards are completely cool they can be covered and kept in the refrigerator for up to 3 days.

This is a little concoction I came up with to satisfy my sweet tooth and peanut butter cravings, while keeping some healthy aspects in mind such as fruit and fiber.

1/2 cup Fiber One cereal
1 tablespoon flour
1 tablespoon reduced-fat peanut butter
1 teaspoon honey
1 teaspoon brown sugar
1 cup fresh fruit

Steps:

  • Preheat toaster oven to 350.
  • Put fiber one in a sealed plastic bag and crush till it is fine.
  • Add flour, and brown sugar to the bag and mix.
  • Add peanut butter and honey to the dry mixture in bag. Mix ingredients till it is well incorporated. It will be a crumbly mixture but should be able to hold it's form. If necessary, you can add some water to the mix.
  • Press half of the mixture into the bottom of a ramekin and bake for about 10 minutes.
  • Remove the ramekin from the over, add fruit then top with the remaining mixture.
  • Bake for an additional 5 to 10 minutes. Watch to make sure the topping does not burn.

1/4 cup cold butter
1/4 cup milk
1 egg, slightly beaten
1/2 cup chopped walnuts

Steps:

  • Heat oven to 350°F
  • Combine brown sugar, 3 eggs, cornstarch and 1/4 teaspoon salt in small bowl; mix well.
  • Gently stir in pears.
  • Spoon into greased 8-inch square 2 quart baking dish.
  • Set aside.
  • Combine flour, sugar, baking powder and 1/2 teaspoon salt in medium bowl.
  • Cut in butter with pastry blender or fork until mixture resembles coarse crumbs.
  • Stir in milk, 1 egg and walnuts.
  • Drop dough evenly over pear mixture into 9 mounds.
  • Bake for 40 to 45 minutes or until filling is set and biscuits are golden brown.
  • Serve warm.
