Steps:
- Cream the butter, brown sugar, and sugar in a mixing bowl until light
- and fluffy, using an electric mixer at medium speed.
- Beat in the egg and vanilla.
- Blend in the peanut butter.
- Sift the flour, baking soda and salt together.
- Stir the dry ingredients into the creamed mixture, blending well.
- Stir in the oats.
- Spread the mixture in a greased 13 X 9 X 2-inch baking pan.
- Sprinkle with the chocolate chips.
- Bake in a 350 degree F.
- oven for 25 minutes or until done. Cool in the pan on a rack.
- While still warm drizzle with the vanilla glaze. When cooled, cut into 48 (2 X 1 1/2-inch) bars.
- VANILLA GLAZE: Combine all of the ingredients in a bowl and beat, with an electric mixer set to high speed, until smooth.

CAFETERIA PEANUT BUTTER BARS
These were the peanut butter bars that our school cafeteria used to sell for 25 cents a bar. I am sure they had to make multiple pans a day, these were so good! Very easy to make and really tasty! No baking required. Prep time does not include refrigeration time.

Steps:
- 1. Mix the sifted powdered sugar, brown sugar and melted butter together well. Fold in the creamy peanut butter until blended.
- 2. Spread the peanut butter mixture into a buttered pan; 9x13 for thicker bars, cookie sheet for thinner bars.
- 3. Melt the chocolate chips and 1/2 cup butter and pour over the peanut butter mixture. Spread around to make it even.
- 4. Refrigerate for 1 hour, until chocolate has solidified most of the way, and cut into bars with an unserrated knife.
- 5. Return to the refrigerator over night until set. (I return to the freezer for faster set time).

These bars are a sweeter, gooey-er, more lunchbox-friendly version of the classic sandwich. They'll hold up much better and much longer-without the risk of soggy bread and unwanted crusts.

- Preheat the oven to 350 degrees F. Cut a piece of foil 9 by 20-inches. Butter the corners and sides of a 9-by-13-inch baking pan. Line the pan with the foil so that the excess hangs over at each of the short sides of the pan.
- Whisk the flour in a medium bowl with the baking powder, baking soda and salt. Whisk in 1/2 cup peanuts.
- Put the melted butter in a large bowl and use a rubber spatula to stir in the sugars. Stir vigorously, mashing the brown sugar lumps with the spatula, so that the mixture is well combined and creamy. Using the rubber spatula, stir in the peanut butter, again making sure the mixture is well combined. Stir in the eggs and vanilla. Fold in the flour mixture until just combined.
- Scrape the batter into the prepared pan. Press the back of a spoon or a curved rubber spatula into the batter to make little wells all over the batter, making sure not to push down to the bottom of the pan. Spoon the jam into the wells, making sure the jam is distributed evenly across the pan. Use a knife to pull the jam through the peanut butter mixture-it won't exactly ribbon, you will end up with some chunks of jam throughout. Sprinkle the remaining 1/2 cup chopped peanuts over the top.
- Bake until a toothpick inserted in the center of a non-jammy spot comes out clean, about 35 minutes. Cool completely on a rack, about 1 hour.
- When the bar has cooled completely, place a lightweight cutting board or a baking rack over the top of the pan. Flip and set on the counter. Gently pull the pan from the foil and the foil from the pan to remove. Gently peel the foil off the bar. Place another lightweight cutting board on top, and flip the bar right-side-up. For easier slicing, wrap with plastic wrap, and let sit at room temperature overnight. Cut into forty eight 1 1/2-inch squares.

- Melt the butter and peanut butter in a small sauce pan, remove from heat.
- Mix peanut butter mixture with graham cracker crumbs and powdered sugar until completely blended. Press evenly into the bottom of an ungreased 9x13 inch pan.
- In a metal bowl over simmering water, or in the microwave, melt the chocolate chips with 4 tbsp of peanut butter, stirring occasionally until smooth. Spread over the prepared crust. Refrigerate for at least one hour before cutting into squares.

My mom always makes these for the 4th of July, but they are good anytime! Perfect for potlucks, parties, and dessert trays. The baking time may vary due to altitude or humidity. Bars are ready when golden brown and toothpick comes out clean when inserted. Layers from bottom up: cookie bar, 1 cup peanut butter, chocolate frosting. Prep and cooking time do not account for cooling time.

Steps:
- Cream butter, peanut butter, and sugars.
- Add vanilla and eggs. Mix.
- Add remaining ingredients and mix until you reach cookie dough consistency.
- Press dough into a large, lightly-greased jelly roll pan.
- Bake at 350F for approx 10 minutes or until lightly brown and firm.
- Beat 1 cup of peanut butter and smooth over hot cake.
- Cool completely.
- To make frosting: beat first 4 ingredients together until smooth.
- Alternately add evaporated milk and powered sugar until you reach your desired consistency and taste. You might find that you do not use all the milk or powdered sugar called for. Frosting should be fairly thick.
- Frost cooled cake with chocolate frosting.
- Cut into squares and enjoy!
