- Cream the butter, brown sugar, and sugar in a mixing bowl until light
- and fluffy, using an electric mixer at medium speed.
- Beat in the egg and vanilla.
- Blend in the peanut butter.
- Sift the flour, baking soda and salt together.
- Stir the dry ingredients into the creamed mixture, blending well.
- Stir in the oats.
- Spread the mixture in a greased 13 X 9 X 2-inch baking pan.
- Sprinkle with the chocolate chips.
- Bake in a 350 degree F.
- oven for 25 minutes or until done. Cool in the pan on a rack.
- While still warm drizzle with the vanilla glaze. When cooled, cut into 48 (2 X 1 1/2-inch) bars.
- VANILLA GLAZE: Combine all of the ingredients in a bowl and beat, with an electric mixer set to high speed, until smooth.

- In a medium bowl, mix together the butter or margarine, graham cracker crumbs, confectioners' sugar, and 1 cup peanut butter until well blended. Press evenly into the bottom of an ungreased 9x13 inch pan.

- Preheat oven to 350°. Grease two 13x9-in. baking pans., In a large bowl, cream butter, sugar and peanut butter until light and fluffy. Add eggs, one at a time, beating well after each addition. - In a large non-stick skillet (or saucepan) on medium heat, add the butter, peanut butter, and butterscotch chips (in that order) to the pan, whisking frequently until the mixture is completely melted and uniform in texture.
- Remove from heat and let it cool for at least 30 minutes* (see first note). It should be cool enough for you to be able to place your hand on the bottom of the skillet.
- After the peanut butter mixture is cooled, stir in three cups of marshmallows, making sure to thoroughly coat the marshmallows with the mixture.
- Grease and line a 8-inch square pan with parchment paper. Then pour the mixture into the pan. Top with the remaining marshmallows, pressing down lightly so that comes in contact with the sticky peanut butter mixture.
- Cover and chill in the refrigerator for at least 2 hours or until firm. Cut into pieces and enjoy.

- Position an oven rack in the middle of the oven. Preheat the oven to 350 degrees F.
- Spray a 7 by 10 3/4-inch nonstick baking pan with vegetable cooking spray. Lay a 6 by 18-inch piece of parchment paper in the pan, allowing the excess paper to hang over the sides. Spray the parchment paper lightly with cooking spray.
- In a medium bowl, using a hand beater, beat the egg white until frothy. Stir in the peanut butter, brown sugar, and honey. Add the melted butter, oats and almonds. Stir to combine, then add the chocolate chips.
- Using a rubber spatula, spread mixture into the prepared baking pan, pressing lightly to form an even layer. Bake until the edge of the mixture begins to brown, about 15 minutes. Remove from the oven and let cool for at least 1 hour. Cut into 1 1/2-inch squares and serve.
- *Cook's Note: To toast almonds, arrange in a single layer on a baking sheet. Bake in a preheated 350 degree F oven until lightly browned, about 8 to 10 minutes.

- Place the oats in a food processor or blender and pulse 10-15 times or until oats are broken down a little. Some of the oats may remain partially whole.
- In a medium bowl combine the oats, cereal, protein powder, flax, salt, peanut butter, honey, coconut oil, and vanilla. Stir to combine well or mix with hands. The dough should stick together easily. If not, add 1-2 teaspoons of water at a time until dough sticks together.
- Line an 8×8-inch pan with parchment paper so that paper overlaps edges. Transfer the dough to the pan. Spread the dough out evenly and with your hands press dough very firmly into the pan.
- Place the pan in the freezer for at least 30 minutes (this can be done the day before or even a few days before).
- For the chocolate drizzle: combine the chocolate chips and coconut oil in a small saucepan over low heat. Stir continuously until smooth and drizzly. You may also use a microwave at 50% power for 30-second increments stirring between each increment until smooth and drizzly.
- After bars have been in the freezer, remove the bars from the pan by grabbing onto the parchment paper flaps, lift out, and place on a cutting board.
- Drizzle the chocolate evenly over the bars. The chocolate should harden quickly since the bars are cold.
- With a sharp knife, cut the bars into 24 small bars (6 rows x 4 rows). Serve and enjoy!
- Store in the fridge in an airtight container for up to 2 weeks or in the freezer for up to 3 months.

- Preheat the oven to 350 degrees, and line your baking pan** with parchment paper or non-stick tin foil. Set aside.
- With a standing mixer or a hand mixer, cream the unsalted butter and peanut butter together, until light and fluffy.
- Next, add in the brown sugar and the granulated sugar. Cream the mixture until well combined.
- Next, add in the egg and mix until combined.
- Add in the vanilla extract. Mix until combined.
- Finally, add in the salt, baking soda, and all purpose flour. Mix until all ingredients are combined.
- Press 2/3 of the peanut butter cookie dough into an even layer in the bottom of the prepared baking dish.
- Next, spread the jam/jelly over the top of the cookie dough in an even layer (or as even as possible).
- Next, if adding fresh berries, sprinkle them over the top of the jam.
- Take the remaining peanut butter cookie dough and spread it over the top of the jam. Take a little dough at a time, flatten it into your hand, and then place it on top of the jam.
- (It's okay if not all of the jam is covered, but flattening the dough will help to cover more of the jam as well as help the cookies to bake more evenly.)
- Sprinkle the top with peanuts.
- Bake for 40-45 minutes, or until the tops of the cookie bars are golden brown and the center is set. If the bars are browning too quickly, tent a piece of non-stick foil over the top of the bars and continue cooking.
- Allow to cool before cutting and serving.
- Store leftovers in an airtight container at room temperature or in the fridge.
PEANUT BUTTER OAT BARS (GF OPTION!)
Steps:
- Line a rectangular baking tin with baking paper.
- Place all of the ingredients except the chocolate in a food processor and blitz until the mixture comes together, scraping down the side as you go. The mixture should stick together when pressed with your hands. If the mixture is too dry, add water a teaspoon at a time. If it's too wet, add an extra tablespoon of oats.
- Transfer the mixture to the prepared tin and press down gently so it's evenly spread out.
- Place in the freezer for at least 1 hour to set. Once set, remove from the freezer.
- Roughly chop the chocolate and place in a heatproof bowl. Microwave for 30 seconds at a time, stirring after each time, until melted and smooth. Alternatively, use the double-boiler method on page 73.
- Drizzle the chocolate all over the chilled mixture and return to the freezer for a few minutes to set.
- Once the chocolate has set, carefully remove from the tin and slice into 12 bars. Store in an airtight container in the fridge for up to 5 days.

- Add the peanut butter, honey, and coconut oil to a large, microwave-safe bowl. Microwave for 1 minute.
- Stir together the peanut butter mixture until it is smooth and thick. Add the vanilla and stir to combine.
