- Preheat oven to 350 degrees F. Lightly coat a 9x9-inch or similarly sized baking dish that's large enough to hold the peach halves in a single layer with nonstick spray. Pick a dish that's sized to where your peaches fit comfortably side by side, but there isn't too much excess room around them. Arrange peaches cut-side up in the dish.
- In a medium mixing bowl, stir together the oil, maple syrup, brandy, coconut sugar, vanilla, cinnamon, and salt. Spoon the mixture over the peaches, filling the center and letting it run over the sides.
- Bake peaches, uncovered, until the peaches are cooked through and fork-tender, about 30 minutes. Serve warm, topped with vanilla ice cream, Greek yogurt, or a pour of heavy cream, as desired.

- Soak grilling plank in water for 1 hour. , In a small heavy saucepan, melt butter. Stir in brown sugar until dissolved; remove from the heat. GRILLED PINEAPPLE WITH RUM SAUCE

- Preheat grill to 400° F. cleaning and oiling the grates well. Peel, cut and core the pineapple into 6-8 rings that are approximately 3/4 - 1 inch thick. Brush the pineapple rings lightly with oil or melted butter.
- While the grill preheats, combine the brown sugar, rum, cinnamon, butter (if using it) and pinch of salt. Bring the mixture to a boil and stir everything together. Reduce the heat to medium-low and let the sauce simmer until it's reduced and thick enough to coat the back of a spoon, about 5 minutes. Pour the sauce into a jar or serving bowl and set aside while the pineapple grills.
- Place the pineapple rings onto the grill and cover with the lid. Grill for 2-3 minutes or until they're golden brown and have grill marks, then flip them over and grill another 2-3 minutes.
- Remove the pineapple from the grill. Serve the pineapple with a scoop of vanilla ice cream, rum sauce and toasted slivered almonds on top.

- 1. Prepare boiling water canner(Or large pot). Heat jars and lids in simmering water until ready for use. Do not boil. Set bands aside.
- 2. Combine peaches, brown sugar, granulated sugar, rum and lemon zest in a large stainless steel saucepan. Bring to a boil over high heat, stirring constantly, until sugar dissolves. Reduce heat and boil gently, stirring occasionally, until thickened, about 20 minutes.
- 3. Ladle hot sauce into hot jars leaving 1/4 inch headspace. Remove air bubbles and re-measure headspace. If needed, add more sauce to meet recommended headspace. Wipe rim. Center lid on jar. Apply band and adjust until fit is fingertip tight.
- 4. Process filled jars in a boiling water canner for 10 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed

- Place the cubed bread in large mixing bowl. In a separate mixing bowl, whisk together the eggs, cream, and milk until yolk and milk is evenly mixed. Whisk in the sugar, cinnamon, rum extract, vanilla extract, melted butter, and nutmeg until evenly mixed.

- In a small sauce pan on low to medium heat, melt the stick of butter and add the brown sugar. Stir until the brown sugar is completely dissolved into the butter (should like caramel). Add the ice cream and stir until the ice cream has dissolved. Allow to simmer for 3-5 minutes while continuously stirring. Remove from heat and add the vanilla extract Serve on top of the bread pudding as desired.

- Fire up. Set up your grill for direct heat cooking on medium high heat. When it is hot make sure to clean the grates thoroughly so there is no meat grease. This is crucial! If necessary, use water to loosen the grease.
- Cook. While the grill is preheating, pour the booze, lemon juice, vanilla, maple syrup, sugar, and salt into a sauce pan and melt them together over high heat, stirring occasionally. Boil the mix for about 10 minutes to drive off some of the alcohol. I know you think this is a waste, but you want the booze to play nice with everybody, not bully them. It really detracts from the taste in this recipe. When it is done, let it cool.
- Cook again. Grill the peaches cut side down until they get some nice golden grill marks but try not to let the sugars burn. Should take about 20 minutes. After about 20 minutes if you stab the skin side with a knife or a fork it should slide in easily. If not, flip them over and cook a bit longer on the skin side until there are grill marks. Remove them from the grill and cut them into slices or chunks.
