Ice cream
1 1/2 cups whipping cream
1 cup half and half
3/4 cup sugar
5 large egg yolks
1 pound peaches, peeled, sliced
1/4 cup light corn syrup
1/2 teaspoon vanilla extract
Compote
4 large peaches, peeled, sliced
1/2 cup Essencia (orange Muscat wine) or late-harvest Riesling
1/2 cup sugar
2 teaspoons fresh lemon juice

Steps:

  • For ice cream:
  • Bring 1 cup cream, half and half, and 1/2 cup sugar just to simmer in medium saucepan. Whisk yolks in medium bowl; gradually whisk in cream mixture. Return mixture to saucepan. Stir over medium heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 4 minutes (do not boil). Strain into bowl. Refrigerate custard until cold, about 3 hours.
  • Place peaches, corn syrup, and 1/4 cup sugar in medium saucepan. Stir over medium heat until peaches are heated through, about 4 minutes. Mash to coarse puree. Cool completely. Stir into custard along with vanilla and 1/2 cup cream.
  • Process custard in ice cream maker according to manufacturer's instructions. (Ice cream can be made 3 days ahead. Cover and freeze.)
  • For compote:
  • Mix all ingredients in medium bowl. Let stand 10 minutes and up to 1 hour, tossing occasionally.
  • Serve ice cream with compote.

2 cups half-and-half cream
3-1/2 cups sugar
3/4 teaspoon salt
6 large eggs, lightly beaten
4 cups heavy whipping cream
2 teaspoons vanilla extract
6 to 8 medium peaches, peeled and sliced or 4 cups frozen unsweetened peach slices

Steps:

  • In a large saucepan, heat half-and-half to 175°; stir in the sugar and salt until dissolved. Whisk a small amount of hot cream mixture into the eggs. Return all to the pan, whisking constantly. Cook and stir over low heat until the mixture reaches at least 160° and coats the back of a metal spoon., Remove from the heat. Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes. Stir in whipping cream and vanilla. Press plastic wrap onto surface of custard. Refrigerate for several hours or overnight., Place peaches in a blender, cover and process until pureed. Stir into the custard. Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions., Refrigerate remaining mixture until ready to freeze, stirring before freezing each batch. Allow to ripen in ice cream freezer or firm up in the refrigerator freezer for 2-4 hours before serving.

8 (1 g) envelopes Equal sugar substitute (sugar substitute)
1 1/2 cups 1% low-fat milk

Steps:

  • In food processor/blender, puree peaches (peeling the peaches is optional).
  • Blend peach puree and all ingredients until very smooth.
  • Chill ice cream mix until cold, about 1-2 hours.
  • Pour mix into your ice cream machine and process according to manufacturer's directions.
  • It may be necessary to continue the"chill/beat" cycle for 15-30 minutes after the first cycle stops.
  • Note: Since fresh Peach Ice Cream is very soft, it maybe necessary to let it"ripen" in your ice cream maker for an additional 45 minutes (or place in a bowl in freezer) if you prefer a firmer ice cream.

2 tablespoons sugar
1/4 teaspoon salt
1/8 teaspoon baking powder
1/4 cup margarine or 1/4 cup butter, softened
1 1/2 cups sliced fresh peaches (about 3 medium)
1/3 cup sugar
1 teaspoon ground cinnamon
2 egg yolks
1 cup whipping cream

Steps:

  • Heat oven to 400 degrees F.
  • Stir together flour, 2 tablespoons sugar, the salt and baking powder.
  • Work in butter until mixture is crumbly.
  • Pat mixture firmly and evenly in bottom and halfway up sides of ungreased square pan, 8 x 8 x 2 inches.
  • Arrange peaches in pan.
  • Mix 1/3 cup sugar and the cinnamon.
  • Sprinkle over peaches (it may seem like a lot, but it's not).
  • Bake 15 minutes.
  • Blend egg yolks and whipping cream.
  • Pour over peaches.
  • Bake 25 to 30 minutes or until custard is set and edges are light brown.
  • Serve warm with vanilla ice cream.
  • Refrigerate any remaining dessert.
