This rustic peach cobbler is made from sweet peaches, warm spices, and a homemade buttermilk biscuit topping.

3 pounds yellow peaches (7 medium peaches), peeled, pitted and cut into ¼-inch slices
2 tablespoons lemon juice, from 1 lemon
⅔ cup sugar
3 tablespoons cornstarch
1¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
1 cup all purpose flour, spooned into measuring cup and leveled-off with a knife
7 tablespoons sugar, divided
1¼ teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon salt
5 tablespoons cold unsalted butter, cut into small chunks, plus more for greasing the pan
⅔ cup buttermilk (see note)
¾ teaspoon vanilla extract
Vanilla ice cream or sweetened whipped cream

Steps:

  • Preheat the oven to 375°F. Lightly butter a 9-inch square or 2.5-quart baking dish.
  • Make the peach filling: In a large bowl, combine the peaches, lemon juice, sugar, cornstarch, cinnamon, and nutmeg. Mix until well combined and the peaches are evenly coated. Set aside.
  • Make the biscuit topping: In a medium bowl, combine the flour, 6 tablespoons of the sugar, the baking powder, baking soda and salt. Add the butter and rub in with your fingers, or blend with a pastry cutter, until the mixture resembles coarse crumbs. In a liquid measuring cup, combine the buttermilk and vanilla extract. Add the buttermilk-vanilla mixture to the flour mixture and stir with a spoon until evenly moistened. Do not overmix; the batter will look lumpy.
  • Assemble and bake the cobbler: Transfer the peach filling to the prepared baking dish and flatten into an even layer. Drop the batter in 6 large, evenly spaced dollops on top of the peaches. Sprinkle the remaining 1 tablespoon of sugar evenly over the batter. Bake until the fruit is bubbling and the top is golden, 40 to 45 minutes. Let cool for about 1 hour, then serve with vanilla ice cream or sweetened whipped cream.
  • Cover any leftover cobbler loosely with a kitchen towel. (Do not cover with plastic wrap or the biscuit topping will get soggy.) Reheat in a 325°F oven for about 15 minutes.

  • Make-Ahead Instructions: The cobbler can be made one day ahead and kept, covered with foil, at room temperature. Reheat, covered with foil, in 300°F oven for 25 minutes, then remove the foil and continue reheating for 15 to 20 minutes more, or until warmed through.

1 tablespoon cornstarch
Juice of 1 lemon
6 cups blackberries
1/3 to 1/2 cup sugar
1 tablespoon lemon zest
1 2/3 cups all-purpose flour, plus more for dusting
1/2 cup blanched almonds
1/3 cup granulated sugar
1/4 teaspoon fine salt
12 tablespoons (1 1/2 sticks) cold unsalted butter, cut into small dice
3 to 4 tablespoons ice water
Vanilla ice cream, for serving, optional

Steps:

  • Adjust the oven rack to the lowest position; preheat the oven to 375 degrees F. Coat the bottom and sides of a 9-by-13-inch baking pan with cooking spray.
  • For the filling: Dissolve the cornstarch in 2 tablespoons water and the lemon juice. In a large bowl, combine the blackberries, sugar and lemon zest (Depending on the sweetness of the blackberries, start with 1/3 cup sugar and add more as needed.) Pour the cornstarch mixture over the berries; toss to coat. Pour the filling into the prepared baking pan.
  • For the crust: Combine the flour, almonds, sugar, salt and butter in a food processor. Process until the mixture resembles a coarse meal. Add the ice water, 1 tablespoon at a time, pulsing until the dough begins to pull from the sides of the bowl. Gather the dough together on a floured work surface and pat it into a rectangle.
  • Roll out the dough into a 1/4-inch-thick rectangle that measures about 11-by-15 inches. Transfer the crust to the baking pan, laying it directly on the blackberry filling. (Any overhanging crust can be rolled inward.) Prick the crust a couple times with a fork.
  • Bake until the crust is golden brown and the filling is thick, 35 to 45 minutes. If the top starts to get too dark, cover it with aluminum foil and continue cooking.
  • Spoon the cobbler onto plates and serve with vanilla ice cream if desired.

1-1/4 cups buttermilk
1 tablespoon coarse sugar

Steps:

  • In a large bowl, combine the peaches, flour, honey, lemon juice and salt; let stand for 15 minutes. Fold in blackberries. Transfer to a 13-in. x 9-in. baking dish coated with cooking spray., For topping, in a large bowl, combine the flour, sugar, baking powder, salt and baking soda. Cut in butter until crumbly. Make a well in the center; pour in buttermilk. Stir just until a soft dough forms. Drop by tablespoonfuls over fruit mixture; sprinkle with coarse sugar. , Bake at 400° for 40-45 minutes or until filling is bubbly and a toothpick inserted in topping comes out clean. Serve warm.,

10 large firm ripe peaches, skins removed
2 tablespoons lemon juice
1/2 cup sugar
2 tablespoons cornstarch
1 pinch nutmeg
1 pinch salt
1 pinch lemon zest
1 1/3 cups all-purpose flour
1/4 cup sugar
1 1/4 teaspoons baking powder
1/4 teaspoon salt
1/4 cup unsalted butter, cold, cut into cubes
1/2 cup buttermilk or 1/2 cup heavy cream
1/2 cup whole unblanched almond, Coarsely chopped
3 tablespoons light brown sugar, Packed
1/2 teaspoon cinnamon

Steps:

  • For Cobbler: In food processor, combine flour, sugar, baking powder, and salt. Pulse to combine. Add cold butter and pulse until mixture is crumbly.
  • Drizzle most of buttermilk /cream over flour mixture, pulse to combine. If mixture seems dry, add a little more. Dough should be just moist. Gather the dough and spread out onto lightly floured parchment or waxed paper.
  • Patting into a Disc a little less than 1/2-inch thick chill for 1/2 hour.
  • For Fruit: Slice peaches into wedges, toss with lemon juice. In a small bowl, combine cornstarch, spices, pinch of salt and lemon zest. Toss with the peaches and pour unto lightly greased 8-inch baking dish.
  • To assemble: On a lightly floured surface, using a fluted cutter or any shaped cutter, cut out biscuits.
  • Gently re-roll scraps and arrange over fruit, slightly overlapping.
  • Brush biscuits with cream.
  • In a small bowl, combine almonds, brown sugar and cinnamon.
  • Sprinkle over dough.
  • Place in the oven and cook until fruit is bubbling, biscuits are golden, and a skewer poked into the center of the biscuit dough comes out clean.
  • Serve warm with ice cream, heavy cream or creme anglaise.
