- If using the sugar (which will make a sweeter sangria than if you omit), dissolve the sugar in two tablespoons of water over a low flame to create a clear simple syrup. Let cool.
- Wash the oranges and cut off thick pieces of rind before juicing the oranges.
- Juice the oranges.
- Wash the lemon and cut off pieces of rind before juicing the lemon.
- Juice the lemon.
- In a large pitcher or bowl, stir together the wine, simple syrup, orange juice, lemon juice, and brandy (if using), and add in the pieces of lemon and orange rind. If making a truly traditional Spanish sangria, simply add the cinnamon stick and let sit at least two hours (preferably overnight) before serving over ice. This allows the sangria to take on the aromas of the fruit rind and cinnamon stick.
- If you want to make a slightly more modern version (still not anything too crazy!) add in chopped up chunks of green apple and peach. For the modern version you can also top off with a carbonated beverage (lemon soda, orange soda, or soda water) right before serving for some bubbles.

- Mix together the sugar and whiskey in a jug, along with a little of the wine as needed to help the sugar dissolve.
- Thinly slice the apple and peaches and roughly chop the mint. Put all in the jug and top up with the remaining wine. Chill until needed, ideally at least an hour or two or overnight.
- When ready to serve, spoon some of the fruit into each glass, top up with the wine blend to around 3/4 full then top up with soda water/sparkling water.
- Notes: The wine is really personal taste. I used a moscato as it's fruity and slightly sweeter. A voignier also has fruity edge that but is less sweet. Traditionally it would be white rioja, much drier but with a well-rounded flavor. Choose as you prefer and you may want to adjust sugar accordingly.

- Place all ingredients, including fruit, but excluding sugar syrup and ginger ale (or citrus soda pop), in a pitcher and stir to mix. You may leave out some fruit (especially if you have too much of it, and it won't fit with others in the pitcher) and freeze it and use it for ice when serving!
- NOTE: You might not need to add sugar syrup to the pitcher at all. Taste and see if you need to add it to sweeten the sangria up to your tastes. In deciding how sweet you want your sangria, keep in mind that after it's been refrigerated and cooled, you will also be adding sweet ginger ale or soda pop to each serving glass right before serving - therefore, you might not need sugar syrup at all. Before refrigerating the sangria, I would suggest making a sample drink with ginger ale (citrus soda pop, sparkling water, etc. - whatever you would use to cut the drink) to taste for sweetness and decide whether to add sugar syrup or not.
- If you like, you might freeze some peach slices and add them to the pitcher right before serving.
- Refrigerate at least 8 hours ( up to 12-15 hours) before serving. Serve over ice. Cut the sangria with ginger ale (or citrus soda pop, or sparkling water) right before serving it - pour ginger ale at the bottom of the glasss, about 1/3 and fill the rest with sangria and fruit. Serve over ice.
