- Heat oven to 425 degrees F. Line 9 inch pie pan with pastry for single pie crust. Mix cream cheese until smooth, beat in sugar, eggs and cinnamon until well blended. Spread cheese mixture over bottom of pastry lined pan. Bake 15 to 20 minutes until crust browns. Cool. Top with peach glace. Chill about 2 hours in refrigerator before serving. For Peach Glace: Blend sugar and cornstarch into water in a small saucepan. Stir in one cup of the sliced peaches. Bring to a boil for one minute, stirring constantly. Stir in remaining peaches, which will cool the mixture enough to top the cheese pie filling.

- Preheat an oven to 350 degrees F. Fit the pie crust into a 9-inch pie plate and fold and crimp the edges as desired. Lay a large piece of foil over the dough and fill with pie weights or raw rice. Bake until the dough begins to dry and set but is still very pale, about 12 minutes. Remove the weights and foil and continue to bake until the dough is golden brown, 15 to 20 minutes more. Set aside to cool completely on a rack.
- Put the cream cheese, sugar and 1/4 cup water in a large bowl. With an electric mixer, beat on medium-high until light and smooth, about 2 minutes. Pour into the cooled pie crust and smooth out into an even layer. Top with the peach slices, loosely cover with plastic wrap and refrigerate until chilled, about 2 hours or up to overnight.

- Preheat the oven to 450 degrees F (230 degrees C).
- Line a 9-inch pie plate with pie crust. Press crust firmly against sides and bottom and prick with a fork. Fold excess crust under and press together to form thick edge.
- Bake in the preheated oven until light brown, 10 to 12 minutes. Remove and set aside.
- Meanwhile, combine crushed peaches, 1/2 cup water, and 1/2 cup sugar in a saucepan over medium heat. Mix cornstarch into remaining 1/4 cup water in a small bowl; add to the peach mixture and stir until boiling. Boil until thick, about 5 minutes longer. Remove from the heat, stir in lemon juice, and set aside to cool.
- Combine cream cheese and remaining 1/4 cup sugar in a medium bowl; beat with an electric mixer until smooth and creamy. Spread into the bottom of the cooled pie crust.

- Preheat oven to 350 degrees F (175 degrees C). Grease sides and bottom of a 10 inch deep-dish pie pan.
- In a medium mixing bowl, mix together flour, salt, baking powder and pudding mix. Mix in butter, egg and milk. Beat for 2 minutes. Pour mixture into pie pan. Arrange the peach slices on top of the pudding mixture.
- In a small mixing bowl, beat cream cheese until fluffy. Add 1/2 cup sugar and 3 tablespoons reserved peach syrup. Beat for 2 minutes. Spoon mixture over peaches to within 1 inch of pan edge. Mix together 1 tablespoon sugar and 1 teaspoon cinnamon, and sprinkle over top.
- Bake in preheated oven for 30 to 35 minutes, until golden brown. Chill before serving.

FRESH PEACHES AND CREAM RUSTIC PIE

- Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper or foil.
- Stir together the peaches, brown sugar, flour, cinnamon, nutmeg, and lemon juice in a large bowl until combined.
- On a well-floured surface, using a lightly floured rolling pin, roll out the pie dough into a large circle, about 12 to 14 inches in diameter. Move the dough circle to the prepared baking sheet. Chill the rolled-out dough in the refrigerator until firm, about 15 minutes. Spoon the fruit mixture onto the center of the dough leaving a 1-inch border. Fold the edges of the dough over the fruit, pleating the dough, then dot the fruit filling with the butter pieces. Lightly brush the dough with the beaten egg, and sprinkle with sugar.

FUZZY NAVEL "PEACH CREAM" PIE

- In a small size mixing bowl, mix flour, butter and pecans until smooth.
- Spread in a 9 - 10 inch pie pan, bringing dough up the sides;.
- And bake at 350 degree F. in a preheated oven for 30-35 minutes,.
- Or until golden brown. Let cool completely before filling.
- In a medium size sauce pan, mix the next 6 ingredients with a whisk, (not the rum and peaches).
- Bring to a boil until thickened. Now add 1/2 cup rum, whisk into Jell-O mixture until well incorporated. Set aside.
- In a medium size mixing bowl, add drained sliced peaches (diced into small chunks). Then pour Jell-O mixture over peaches and gently fold in until peaches are completely coated.
- Place bowl of coated peaches in the refrigerator for 1 hour or until mixture is cool.
- In a medium size mixing bowl, blend together cream cheese and powdered sugar until creamy. Fold in whipped cream slowly.
- Spread cream cheese mixture on the bottom and up the sides of the cooled pie crust, making a well in the middle for the Jell-O.
- Add Jell-O/peach mixture to the center of the cream cheese mixture, (inside the well) and spread until smooth and even.
- Cover and let set for 2-3 hours. Top with whipped cream, optional.
- Serve cold. Makes 8 slices.
- Cook's Notes: This recipe can be made "Kid Friendly" by omitting the rum and adding another 1/2 cup (nonalcoholic) Fuzzy Navel mix instead, while boiling the Jell-O mixture. (If you can't find "Fuzzy Navel" mix, you can use any peach flavored Daiquiri, Margarita mixes or peach liqueur to add more flavor for the adults ).

The daughter of a friend gave me this recipe. I've been making cobblers all my life but nothing tops this. By far the best cobbler I've ever made. - Spray a 9 x13 pan with pam. Lay one can of crescent rolls on bottom of pan and mash to seal edges. Mix softened cream cheese with sugar and spread on top of rolls. - Heat the oven to 350 degrees. In a medium bowl, whisk together the graham cracker crumbs, granulated sugar, cinnamon and salt. Add the butter and toss until the crumbs are evenly moistened. Transfer the mixture to a 9-inch pie plate and press into an even layer on the bottom and up the sides of the pie plate, packing the crust lightly with the bottom of a measuring cup. Place the pie plate on a sheet pan and bake for 10 to 12 minutes, until set, then cool completely.
- In a large mixing bowl, combine the cream cheese and confectioners' sugar. Using an electric mixer, beat on low speed until combined, then raise the speed to high and whip until the mixture is smooth and creamy. Add the heavy cream and vanilla, and beat on high speed until the mixture forms stiff peaks. Scrape the filling into the cooled crust, smooth the top, and chill for at least 2 hours, or overnight, until set. (Cover with plastic wrap if chilling the pie overnight.)
- Meanwhile, bring a large pot of water to a boil and fill a large bowl with ice water. - Chill uncooked pie crust (in pie pan) in the freezer for 15 minutes.
- Combine the peaches, 2 tablespoons sugar and flour in a mixing bowl; mix well then set aside.
- Combine the egg yolks and 2/3 cups sugar in the top of a double boiler set over, barely simmering water.
- Whisk the yolks until they are thick and lemon-colored (about 7-8 minutes).
- Remove from heat and whisk in the cream and vanilla.

- In medium bowl, combine cold butter, flour, 2 teaspoons granulated sugar and the salt; toss to coat butter. Using fingers or pastry blender, pinch butter into flour until coarse crumbs form. Begin adding ice water 1 to 2 tablespoons at a time, mixing with fork or spoon just until dough comes together when pinched between fingers.
- Turn dough out onto lightly floured surface; knead a few times just to bring dough together. Divide dough in half; shape into 2 flattened disks. Wrap each disk well in plastic wrap; refrigerate at least 30 minutes.
- In medium bowl, beat cream cheese, 3 tablespoons brown sugar and the egg yolk with whisk or electric mixer until well combined. In another medium bowl, toss peaches, cornstarch and 2 to 4 tablespoons brown sugar to taste. Set Filling aside while rolling and cutting dough.
- Heat oven to 400°F. Line 2 cookie sheets with silicone nonstick baking mat or cooking parchment paper; set aside. In small bowl, beat egg and milk with whisk for egg wash; set aside.
- Roll out dough, 1 disk at a time, to 1/4- to 1/8-inch thickness. Using 3-inch round cutter or upside-down drinking glass, cut out rounds of dough (about 16 per disk). Repeat with remaining dough disk. Place half of the dough rounds on the 2 cookie sheets, leaving room between each (8 per sheet).
- Divide cream cheese mixture evenly among rounds. Divide peach mixture evenly among each cream cheese-topped dough round. Lightly brush edge of each dough round with egg wash. Top each with second dough round to cover filling. (This may take some rearranging of peach chunks but don't stress, just call them "rustic".) With fork, seal edge of each pie; poke a few holes in top of each to allow steam to escape and prevent pie from exploding during baking. Brush tops of pies with egg wash; sprinkle with granulated sugar.
- Bake in center of oven, 1 sheet at a time, 20 to 25 minutes or until bottoms of pies are golden brown and sugared tops are slightly crackled and beginning to turn golden. Remove from oven; cool at least 10 minutes before serving.

- Stir together crumbs, cinnamon and brown sugar; stir in melted butter.
- Pour crumb mixture into 9-inch pie plate.
- Press firmly in bottom and up sides.
- Bake at 350F for 15 minutes.
- Cool.
- Lift peach halves from juices (reserve juices).
- Drain.
- Arrange, cut sides down, in pie crust.
- Beat together till fluffy the cream cheese, sugar, vanilla and 1/4 cup of the peach juice.
- Spoon evenly over peach halves.
- Sprinkle almonds over top.
- Bake at 350F for 35-40 minutes.
- Microwave Method: (use a microwave safe pie plate!).
- Microwave crust on medium for 4 minutes.
- Cool.
- Microwave pie on medium for 15-20 minutes till cream cheese mixture looks set.
- (Microwave 2-3 minutes longer if needed.) Rotate pie 2 or 3 times while cooking.
