FRESH PEACH & CHERRY COBBLER



Fresh Peach & Cherry Cobbler image

Once you try this cobbler, each year you will anxiously await peach and cherry season. And it will be worth the wait ... because this cobbler is that good! Sweet, tart and oh so tasty!

Number Of Ingredients 12

4 c fresh peaches (peeled and sliced thickly)
2 c fresh bing cherries (pitted & halved)
1/2 c water
1 stick real unsalted butter ( or 8 tablespoons)
2 c all purpose flour
1 1/2 tsp baking powder
1 tsp baking soda
1 1/2 c milk
1 c brown sugar
1 c sugar
pinch salt (optional)
cinnamon (optional)

Steps:

  • 1. Preheat oven to 350.
  • 2. Combine the Peaches, Cherries, Brown sugar, and water in a saucepan and mix well.
  • 3. Bring to a boil and simmer for 10 minutes. Remove from the heat. Reserve a half cup of liquid.
  • 4. Put the butter in a 9x13 baking dish and place in oven to melt.
  • 5. In a bowl sift sugar, flour, baking soda, baking powder, and a pinch of salt.
  • 6. Slowly whisk in milk & half cup of the reserved peach/cherry liquid to dry ingredients.
  • 7. Pour mixture over melted butter in your baking dish. Do not stir.
  • 8. With a slotted spoon, put fruit on top evenly then gently pour the remaining liquid over the top of the fruit.
  • 9. Sprinkle the top of the fruit with cinnamon if using.
  • 10. Bake for 30 to 45 minutes or until crust has risen to the top and is golden. *Tip* Place a pan under your dish just in case any juices want to escape!
  • 11. Optionally you can sprinkle sugar over the top of the crust. (My Gram always use to)
  • 12. Enjoy warm with a nice scoop of ice cream, or let it cool down in the fridge. =)

4 cups sliced fresh peaches
½ cup all-purpose flour
½ cup brown sugar
½ cup cold butter
1 teaspoon ground cinnamon
¼ teaspoon salt
1 cup rolled oats

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange peaches evenly in an 8x8-inch baking dish.
  • Mix flour, brown sugar, butter, cinnamon, and salt in a bowl using a pastry cutter until evenly crumbled. Fold oats into flour mixture; sprinkle and press topping into peaches.
  • Bake in the preheated oven until topping is lightly browned, about 30 minutes.

1 (16 ounce) can peaches, sliced (in heavy syrup)
1 (8 3/4 ounce) can pitted dark sweet cherries, in heavy syrup
1 teaspoon cornstarch
1/2 teaspoon lemon juice
6 tablespoons butter
1 1/2 cups quick-cooking oats, uncooked
2 tablespoons honey

Steps:

  • Drain peaches, reserving syrup. Drain cherries and set aside.
  • In 2-quart saucepan over medium-high heat, heat cornstarch, lemon juice and reserved peach syrup to boiling. Reduce heat to medium-low and add drained peaches and cherries. Cover and simmer 5 minutes or until heated through, stirring mixture occasionally.
  • Spoon peach-cherry mixture into 6-dessert bowl.
  • With paper towels, wipe saucepan clean. In same saucepan over medium heat, heat butter, then add uncooked oats and cook until lightly browned (about 4 minutes), stirring occasionally.
  • Add honey to oat mixture and toss until oats are well coated.
  • To serve, sprinkle warm oat-honey mixture over peach-cherry mixture in dessert bowls.

1 (21 ounce) can cherry pie filling
½ cup all-purpose flour
½ cup rolled oats
⅔ cup brown sugar
¾ teaspoon ground cinnamon
¾ teaspoon ground nutmeg
¼ cup chopped pecans
⅓ cup melted margarine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.) Lightly grease a 2 quart baking dish. Pour pie filling into the dish, and spread evenly.
  • In a medium bowl, mix together flour, oats, sugar, cinnamon, and nutmeg. Mix in melted margarine. Spread over pie filling, and sprinkle with chopped pecans.
  • Bake in the preheated oven for 30 minutes, or until topping is golden brown. Allow to cool 15 minutes before serving.
