1.5 cups almond flour
1.5 tsp baking powder
1 tsp cinnamon
pinch of salt
6 tbsp unsalted butter, softened
2/3 cup granulated sugar
3 eggs
1 tsp vanilla
1/4 tsp grated lemon zest
1/4 cup sour cream
1.5 peaches, sliced 1/4" thin
almond flakes
powdered sugar, for topping

Steps:

  • Preheat the oven to 350°F. Grease a 9-inch cake pan (and, optionally, line the bottom of the pan with parchment paper, otherwise just grease very well).
  • Mix almond flour, baking powder, cinnamon, and salt together in a large bowl; set aside.
  • In another bowl, use a rubber spatula to cream the butter and sugar together until mixed well. Add the eggs, one at a time, and mix well until incorporated. Add the vanilla and grated lemon zest; stir to combine.
  • Add the dry ingredients to the wet ingredients and stir with your spatula until they're all blended together. Add the sour cream and stir until it's fully incorporated.
  • Pour the batter into the greased cake pan (it will be thick). Use your spatula to smooth out the top. Place the peach slices in a radial pattern, starting from the outer edges and working your way in. Sprinkle the top with the sliced or flaked almonds.
  • Bake the cake for approximately 45 to 50 minutes, until a toothpick inserted in the center comes out clean. Run a knife along the edges of the pan and flip out of the pan onto a wire cooling rack. Make sure to flip the cake right side up once it's on the rack so that the top of the cake with the peaches are facing up. Once the cake is barely warm, dust the top with powdered sugar.

Steps:

  • Heat oven to 375°. Spray round pan, 8x1 1/2 inches, with cooking spray. Mix milk, egg, oil and almond extract in large bowl until smooth. Stir in Bisquick and sugar until Bisquick is moistened (batter will be lumpy). Spread batter in pan.
  • Mix peaches and yogurt; spoon onto batter. Swirl lightly with knife. Sprinkle with brown sugar and almonds.

1/4 teaspoon salt
2 teaspoons baking powder
2 tablespoons sugar
3/4 cup whipping (heavy) cream
1 package (3 oz) cream cheese
1/4 cup sugar
1 teaspoon almond extract
1 bag (16 oz) frozen unsweetened sliced peaches, thawed, drained
3 tablespoons sugar
1 tablespoon cornstarch
2 tablespoons sliced almonds

Steps:

  • Heat oven to 375°F. In medium bowl, stir flour, salt, baking powder, 2 tablespoons sugar and the whipping cream just until blended. On lightly floured surface, knead dough 5 or 6 times until smooth. On ungreased large cookie sheet with rim, press dough into 10-inch round, about 1/4 inch thick.
  • In medium bowl, beat cream cheese, 1/4 cup sugar and the almond extract with electric mixer on medium speed until smooth. Spread cream cheese mixture over dough to within 3 inches of edge.
  • Press drained peaches with paper towel to remove moisture. In large bowl, toss peaches, 3 tablespoons sugar and the cornstarch. Arrange peaches on cream cheese mixture. Sprinkle almonds over peaches. Fold 3-inch edge of dough over filling, pleating if necessary.
  • Bake 30 to 35 minutes or until dough is golden brown. Cool 10 minutes. Serve warm or cooled.

1 cup sour cream, at room temperature

1/2 teaspoon kosher salt
1 teaspoon ground cinnamon
3 large, ripe peaches, peeled, pitted, and sliced

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-inch square baking pan.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and 1 cup of the sugar for 3 to 5 minutes on medium-high speed, until light and fluffy. With the mixer on low, add the eggs, one at a time, then the sour cream and vanilla, and mix until the batter is smooth. In a separate bowl, sift together the flour, baking soda, baking powder, and salt. With the mixer on low, slowly add the dry ingredients to the batter and mix just until combined. 2 ½ tsp baking powder
1 tsp cinnamon
¼ cup milk, (or non-dairy milk of choice)
¾ cup brown sugar
½ cup sour cream, (or non-dairy sour cream alternative)
4 tbsp unsalted butter - softened, (or non-dairy alternative)
1 egg, (or egg replacer)
1 tsp vanilla extract
29 oz canned peaches - drained or 2 cups of fresh peaches sliced
1 cup granulated sugar
2 tbsp molasses
2/3 cup flour, (or gluten free all-purpose flour blend)
6 tbsp unsalted butter - softened, (or non-dairy alternative)
½ cup powdered sugar
3 tsp milk, (or non-dairy milk of choice)
1/8 tsp cinnamon

Steps:

  • Preheat oven to 350 degrees and prepare a springform pan with non-stick spray.
  • In a small bowl, combine the flour, baking powder and cinnamon. Set aside
  • In another bowl, combine the milk, brown sugar, sour cream, butter, egg and vanilla until smooth.
  • Then add to the dry ingredients and mix well.
  • Fold in the sliced peaches and pour the batter into your pan.
  • In a small bowl, add the sugar and molasses, mix until crumbly. Chop the butter into chunks and pour into the bowl. Add your flour and using a fork, cut the butter until the mixture is chunky and crumbly.
  • Add crumble topping to top of batter.
  • Bake for 50-60 minutes, test with a toothpick and it's done when your toothpick is clean.
  • Mix the powdered sugar, milk and cinnamon well to make the glaze.
  • Pour glaze over the cake after it's cooled. Enjoy!

3 large peaches
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda

Steps:

  • Gather the ingredients.
  • Peel and thinly slice the peaches and put them on paper towels to remove excess moisture. Set aside.

  • Combine the 1 1/2 cups flour, baking powder, soda, and salt; set aside.
  • In a mixing bowl with an electric mixer, cream the 4 ounces of softened butter with the granulated sugar and 1/4 cup of brown sugar. Beat for about 3 to 4 minutes.

100g golden caster sugar , plus a little extra for sprinkling
few drops of almond extract
25g butter , melted
100g self-raising flour
25g ground almonds
2small peaches
2 tsp peach conserve or apricot jam
1 tbsp flaked almonds
half-fat crème fraîche , to serve

Steps:

  • Preheat oven to 220C/fan 200C/gas 7. In a large bowl, use a hand whisk to mix the eggs, sugar and almond extract together for a minute until foamy. Pour in the melted butter and continue to beat until combined. Gently fold in the flour, ground almonds and a pinch of salt.
  • Halve, stone and slice the peaches. Divide muffin mixture between 6 holes of a non-stick muffin tin. Top each with a blob of conserve or jam and arrange a few slices of peach on top. Scatter over the almonds and a little extra sugar, then bake for 20-25 mins until puffed up and golden. Serve warm with a spoonful of half-fat crème fraîche, or leave to cool. Best eaten the day they're made or frozen whilst still slightly warm for up to 1 month.
