PASTA WITH HAM AND PEAS
Great use for leftover ham! Quick and easy, ham and peas with pasta, cream, and Parmesan.

Steps:
- Cook the pasta: Heat 4 quarts of water and 2 Tbsp salt in a large pot for the pasta. Once the water starts to boil, add the pasta and cook at a rolling boil, uncovered, until al dente, cooked through, but still a little firm to the bite (the low end of the cooking times given on the package). Drain, reserving 1 cup of the pasta cooking water.
- Heat butter, add garlic, add ham and peas: While you are cooking the pasta, heat the butter in a medium skillet on medium heat until melted. Add the minced garlic and cook for 1 to 2 minutes. Stir in the ham and the frozen peas.
- Add pasta water, cream, Parm, zest, salt, pepper to make sauce: Stir in 1 cup of the pasta cooking water which will help thaw the peas. Stir in 1/2 cup of cream, Parmesan cheese, salt, pepper, and lemon zest.

- Bring a pan of salted water to the boil, then throw in the pasta. Simmer for 6 mins, add the peas and spring onions, then continue cooking until the pasta is al dente.
- Drain everything well, then tip into a pasta bowl (or back into the saucepan). Stir in the ham, pesto and crème fraîche until well mixed, then enjoy.

- Cook pasta shells according to package directions until al dente. Drain the shells, return them to the pot and toss with 1 teaspoon of the olive oil to prevent sticking.
- Meanwhile, in a large skillet, heat the remaining 2 tablespoons of olive oil. Add the garlic and cook over moderate heat until golden, about 4 minutes. Add the peas and ham and cook until the peas are hot and the ham in lightly browned, about 5 minutes. Add the cream and stock and simmer over moderate heat until thickened slightly, about 5 minutes.
- Stir the cream sauce into the shells. Add the parmesan and dill and season with salt and pepper to taste.

- Bring a large pan of salted water to the boil, then cook the pasta following pack instructions, about 9 mins. Around 3 mins before the pasta is cooked, add the peas.
- Meanwhile, heat the olive oil in a frying pan over a medium heat and fry the onion for 5 mins until soft but not golden. Add the ham, double cream, lemon juice and parmesan, then season and mix well. Remove from the heat.
- Drain the pasta and peas (keeping a mugful of the cooking water) and return them to the pan. Tip in the creamy ham mixture and stir everything together to combine. If the mixture seems a little dry, add some of the reserved cooking water to loosen it a little. Serve with extra parmesan on top, if you like.

SKILLET PASTA WITH HAM AND PEAS

- Melt the butter in a large ovenproof skillet over medium-high heat. Add the leeks, thyme, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring, until the leeks are tender, 8 to 10 minutes. Add the ham and cook until warmed through, about 2 minutes. Add the flour and cook, stirring, until moistened, 1 minute. Add the half-and-half and bring to a boil, then reduce to a simmer and cook until slightly thickened, about 2 minutes. Stir in 1 cup fontina until melted.
- Meanwhile, preheat the broiler and bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente, adding the peas in the last 2 minutes of cooking. Reserve 1/2 cup cooking water, then drain the pasta and peas.
- Add the pasta and peas to the skillet and toss to coat, adding the reserved cooking water as needed to loosen; season with salt and pepper. Top with the remaining 1 cup fontina and the parmesan. Broil until lightly browned, 4 to 5 minutes.

- Cook the pasta following pack instructions, adding 200g of the peas for the final 1 min of cooking. Drain, reserving some of the cooking water.
- Meanwhile, blitz the rest of the peas, mint, half the Parmesan and the crème fraîche until smooth, then season. When the pasta is cooked, tip back into the pan on the heat and spoon in the pea cream, ham and the remaining Parmesan. Stir to coat the pasta evenly, adding the reserved water if it is too thick. Serve immediately, with extra Parmesan, if you like.

PEA AND HAM PASTA SAUCE
I've been making this pasta sauce for years. It's a good way to use up left-over ham and it's fairly quick and colourful. I like it over tortellini, but shells or spirals are OK too.

Steps:
- Heat the oil in a frypan, and saute the onion and garlic over medium heat until softened, about 5 minutes.
- Add the diced ham and saute a further 2 minutes or so.
- Add the tomato paste, and cook stirring for 2 minutes, then pour in the wine or stock.
- If I'm using wine, I like to reduce it a little.
- Now add the crushed tomatoes, peas and freshly ground black pepper and simmer for about 10 minutes.
- No longer though or the peas lose their fresh green colour.
- Add the cream and reheat gently, then stir through the chopped basil before serving.
- Offer Parmesan cheese at the table.
HAM & PEA ALFREDO PASTA
I have also made this with Asparagus or peas and soy bean mixture. Use you choice of fresh or dried pasta. Very rich and VERY good! Leftover sauce is awesome the next day.

- 1.) Fry Mushrooms, Onions, and Garlic until just soft in your favorite oil until just soft.
- 2.) Remove from heat and place in a bowl with Ham and Peas which you will add to the sauce later.
- 3.) On medium low heat, melt Butter and Cream Cheese. Stir to combine and then add Whipping Cream.
- 4.) Turn heat to medium and bring to a soft boil. Add Ham and Pea mixture and bring to a soft boil again. Reduce to simmer and bring your pasta water to a boil.
- 5.) Boil pasta till al dente. Drain and serve with covered with Alfredo sauce.
- 6.) Finish with fresh ground nutmeg or garnish of your choice.
