Mini shell pasta with a creamy smoked bacon & pea sauce image

This bacon and pea pasta has become a quick dinner classic round mine - five minutes and it's done

6 slices higher-welfare smoked streaky bacon or pancetta
1 small bunch fresh mint
100 g Parmesan cheese
1 organic chicken stock cube, optional
400 g dried mini shell pasta
olive oil
300 g frozen peas
2 heaped dessertspoons half-fat crème fraîche
1 lemon

Steps:

  • Finely slice the bacon. Pick the mint leaves and discard the stalks. Finely grate the Parmesan. Bring a large pan of salted water to the boil and drop in the stock cube (if using). Stir until it's dissolved, then add the mini shells and cook according to the packet instructions. Get a large frying pan over a medium heat and add a good lug of olive oil. Add the bacon to the pan, sprinkle a little pepper over and fry until golden and crisp.
  • Meanwhile, finely chop your mint leaves. As soon as the bacon is golden, add your frozen peas and give the pan a good shake. After a minute or so, add the crème fraîche and chopped mint to the bacon and peas. Drain the pasta in a colander over a large bowl, reserving some of the cooking water.
  • Add the pasta to the frying pan. Halve your lemon and squeeze the juice over the pasta. When it's all bubbling away nicely, remove from the heat. The sauce should be creamy and delicious but if it's too thick for you, add a splash of the reserved cooking water to thin it out a bit. Add the grated Parmesan and give the pan a shake to mix it in.
  • Divide your pasta between plates or bowls, or put it on the table in a large serving dish and let everyone help themselves. Lovely with a simply dressed green salad.

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, cook and stir milk, cream cheese, 1/3 cup Parmesan, butter, pepper and garlic powder in medium saucepan on medium-low heat until cream cheese is completely melted and mixture is well blended. Stir in ham and peas; cook 2 min. or until heated through.
  • Drain pasta; place in large bowl. Add sauce and remaining Parmesan; toss to coat.

4 small leeks (white and light green parts only), thinly sliced
2 tablespoons fresh thyme
Kosher salt and freshly ground pepper
8 ounces ham steak (or leftover ham), cut into 1/2-inch pieces (about 1 1/2 cups)
3 tablespoons all-purpose flour
1 2/3 cups half-and-half
2 cups shredded fontina cheese (about 6 ounces)
6 ounces bow-tie pasta (about 2 1/2 cups)
2 cups frozen peas
1/4 cup grated parmesan cheese

Steps:

  • Melt the butter in a large ovenproof skillet over medium-high heat. Add the leeks, thyme, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring, until the leeks are tender, 8 to 10 minutes. Add the ham and cook until warmed through, about 2 minutes. Add the flour and cook, stirring, until moistened, 1 minute. Add the half-and-half and bring to a boil, then reduce to a simmer and cook until slightly thickened, about 2 minutes. Stir in 1 cup fontina until melted.
  • Meanwhile, preheat the broiler and bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente, adding the peas in the last 2 minutes of cooking. Reserve 1/2 cup cooking water, then drain the pasta and peas.
  • Add the pasta and peas to the skillet and toss to coat, adding the reserved cooking water as needed to loosen; season with salt and pepper. Top with the remaining 1 cup fontina and the parmesan. Broil until lightly browned, 4 to 5 minutes.

4 Tablespoons unsalted butter, divided into 1 and 3 Tablespoons (Note 1)
1 shallot, peeled and diced
2 cloves garlic, peeled and minced
1/2 teaspoon Italian seasoning (Note 2)
1/2 teaspoon salt (Note 3)
1/2 teaspoon black pepper (Note 2)
1 Tablespoon all-purpose flour
2 cups heavy cream (Note 4)
1 cup low-fat mozzarella cheese, shredded
1 cup Gouda cheese, shredded
1 cup frozen peas, thawed
1 cup diced ham (Note 4)

Steps:

  • Prepare the farfalle according to package directions, set aside
  • While pasta cooks, in a saute pan, over medium heat add 1 Tablespoon unsalted butter (Note 1), let melt. Add in diced shallots, saute about 2 minutes to soften shallots.
  • Add in minced garlic, Italian seasoning, salt, and black pepper. Continue to saute another few seconds to blend flavors. (Note 6)
  • Stir in the remaining butter (Note 1), let melt. Whisk in the flour, continue to whisk about 1 minute to blend flavors.
  • Whisk in heavy cream to blend. Cook and stir occasionally, about 5 minutes to thicken sauce.
  • Mix in the shredded cheese combo. Whisk to melt cheese, about 1 minute.
  • Gently stir in the peas, ham, and cooked farfalle. Simmer another minute to blend flavors and warm pasta, stirring occasionally.
  • Taste sauce for seasoning, adjust any, if needed.
  • Serve with chopped fresh parsley, optional.

  • Place a large pot of water on the stovetop to boil. Add a hefty pinch of salt. Boil the pasta according to the directions on the package. I tried to copy a wonderful dish I had at a small local Italian restaurant and this one turned out WONDERFUL (for a lot less money too!) The flavors are excellent and it's a totally new way to use up leftover ham. The crispy ham reminds me of pancetta. This is a very forgiving recipe and many different vegetables can be added to your liking, try sauteed zucchini with the peas, or mushrooms, broccoli, etc.

4 cups penne pasta, uncooked
1 cup peas, frozen petite
1 1/2 cups ham, chopped small
2 cups milk
4 tablespoons flour
1 tablespoon butter

8 ounces cream cheese, lite is wonderful in this
1/2 cup parmesan cheese

Steps:

  • Bring large pot of water to boil and add pasta, cooking to al dente.
  • Add peas last 2-3 minutes to pasta.
  • Scoop out 1 cup pasta water, then drain, and place in a large serving dish.
  • Whisk flour into milk (or shake together in a jar) till mixed well.
  • In skillet, pour olive oil in and add ham, cook over medium heat, stirring occasionally until ham is crispy. Remove to paper towel to drain.
  • In sauce pan, melt butter (or use more olive oil) and saute garlic over medium low for about 2-3 minutes (if you love garlic, feel free to add more!).
  • Whisk in milk/flour mixture and add chipped cream cheese, whisking till melted into sauce smoothly. Add Parmesan cheese and whisk till incorporated.
  • In large dish with pasta and peas, toss in crispy ham, and any other vegetables you want (optional).
  • Pour sauce over pasta and mix, pouring in pasta water till nice and creamy.
  • Top with more parmesan and fresh ground pepper.
  • serve immediately with tossed salad and garlic bread. YUM!

350g / 12.5 oz pasta
1 vegetable stock cube
150g / 5 oz frozen peas
120g / 4 oz cream cheese
100g / 3.5 oz cooked ham, chopped
1/2 tsp garlic granules
salt and pepper to taste

Steps:

  • Add the pasta and stock cube to a large pan, cover with boiling water and cook according to the pasta package instructions. The stock cube helps to add some flavour to the pasta while it cooks.
  • For the last 3 minutes of cooking, add the frozen peas to the pot. Then drain but retain a small cup of the pasta water for the sauce.
  • Add in the cream cheese and add a splash of the retained pasta water. Mix until the cheese has melted and you get the right consistency of sauce. Add more pasta water if necessary.
  • Add in the ham and garlic granules and mix again.
  • Season to taste with salt and pepper and serve immediately with some green veg or salad.

I've been making this pasta sauce for years. It's a good way to use up left-over ham and it's fairly quick and colourful. I like it over tortellini, but shells or spirals are OK too.

2 tablespoons oil
1 clove garlic, crushed
1 small onion, finely chopped
250 g diced ham
2 tablespoons tomato paste
1/2 cup white wine or 1/2 cup chicken stock
1 (440 g) can crushed tomatoes
1 cup frozen peas, defrosted under running hot water
fresh ground black pepper
1/2 cup light cream
2 tablespoons chopped basil
parmesan cheese, shaved or grated to serve

Steps:

  • Heat the oil in a frypan, and saute the onion and garlic over medium heat until softened, about 5 minutes.
  • Add the diced ham and saute a further 2 minutes or so.
  • Add the tomato paste, and cook stirring for 2 minutes, then pour in the wine or stock.
  • If I'm using wine, I like to reduce it a little.
  • Now add the crushed tomatoes, peas and freshly ground black pepper and simmer for about 10 minutes.
  • No longer though or the peas lose their fresh green colour.
  • Add the cream and reheat gently, then stir through the chopped basil before serving.
  • Offer Parmesan cheese at the table.

Steps:

  • In a large pot of boiling water, cook the pasta according to package instructions, stirring frequently, until al dente.
  • Meanwhile, in a large 12-inch saute pan, set over medium-high heat, add the olive oil and the butter, stirring gently until the butter melts. Add the onions and saute until translucent, about 3 minutes. Add the garlic to the pan and saute until fragrant, about 30 seconds. Place the diced ham in the pan and saute for 1 minute.
  • Deglaze the pan with wine and cook until it is reduced, about 30 seconds. Add the cream, peas, salt and pepper and reduce the cream by half, about 4 to 5 minutes.
  • Drain the pasta well and transfer to a large heat resistant bowl. Pour the sauce over the pasta and sprinkle with the cheese and the parsley. Toss gently with tongs until the pasta is coated with sauce. Serve hot.

16 ounces large shell pasta or other short tube pasta
1 tablespoon olive oil
1 tablespoon butter
2 shallots, sliced
2 tablespoons garlic, chopped (You can start with one, if you like, we love the fresh garlic flavor in this pasta recipe!)
1 pound cooked ham, diced
10 ounce bag frozen peas and carrots
1 tablespoon flour
1 cup heavy cream
1/2 cup grated parmesan cheese
Kosher salt and fresh black pepper to taste
1 ounce cream cheese, softened

Steps:

  • Bring a large pot of water to a boil to cook the pasta. Cook according to the package directions and drain. Spray the bottom of the pot with non-stick cooking spray and then pour the cooked pasta back into the pot and cover to keep warm.
  • Heat the olive oil and butter in a large skillet over medium heat. Add the shallot and cook for 2-3 minutes to soften, then add the garlic and cook for one minute longer. Add the leftover ham and frozen peas and carrots to the skillet and cook for 4-5 minutes until the frozen vegetables are warmed through.
  • Sprinkle the flour into the skillet and stir to combine until the flour is completely mixed in with the ham and vegetables. Slowly pour in the cream, stirring as you go. Add the parmesan cheese, stir and bring to a simmer.

Even if you're new to cooking you can tackle this ham and pea pasta with confidence, as a sauce like this requires little more than warming through to come together. The cream adds a touch of luxury to this supper for one. Each serving provides 1140 kcal, 38g protein, 86g carbohydrates (of which 7g sugars), 69g fat (of which 42g saturates), 11g fibre and 1.5g salt.

100g/3½oz dried pasta shapes
100g/3½oz frozen peas
knob of butter or splash of olive oil
1-2 spring onions, white and green parts separated and finely sliced
100ml/3½fl oz double cream
25g/1oz Parmesan, finely grated, plus extra to serve
1 thick-cut slice of ham, diced
½ lemon, zest and juice
salt and freshly ground black pepper

Steps:

  • Bring a large saucepan of salted water to the boil. Tip in the pasta and cook for 9-11 minutes until done to your liking, adding the frozen peas for the final minute.
  • Meanwhile, heat a knob of butter or splash of oil in a frying pan, add the spring onion whites and fry for a minute until just softening. Turn off the heat and set aside until the pasta is cooked.
  • Drain the pasta and peas, reserving a ladleful of the cooking water, and tip into the frying pan. Add the cream, Parmesan and ham with 3 tablespoons of the pasta water. Stir over a low-medium heat until the cream starts to bubble, then turn the heat down and stir briefly until the sauce is clinging to the pasta. (If you overcook it and it starts looking dry, add a little more of the pasta water.)
  • Stir in the lemon zest and spring onion greens, then season with salt, pepper and lemon juice to taste. Serve immediately with extra Parmesan.

200 grams farfalle pasta (or other short pasta)
100 grams frozen petits pois
150 millilitres double cream
150 grams diced ham
2 tablespoons grated Parmesan cheese

Steps:

  • Cook the pasta according to packet instructions in plenty of salted boiling water, and then after 5 minutes add the peas to the pasta water. When the pasta is cooked, drain with the peas. Put the dry pan back on the heat with the cream, ham and Parmesan and warm it through. Add the pasta and peas back to the pan, tossing everything together well.
