PAWPAW BREAD
A wonderful fruit bread made from the largest edible fruit native to America. Ripe in the fall, this tropical fruit grows right here in the USA. Pawpaw can be used in many recipes calling for bananas.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease the bottom of an 8-inch loaf pan with cooking spray.
- Combine sugar and butter in a bowl; beat together until smooth. Beat in eggs. Add pawpaw pulp and water; beat until combined, about 30 seconds. Stir in flour, walnuts, baking soda, salt, and baking powder. Pour into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour 15 minutes. Allow to cool before slicing, about 30 minutes.

INDIANA PAWPAW BREAD
A pawpaw is not a papaya, but a wild fruit that grows on trees in the mid-west. It is the Ohio State Native Fruit and sometimes called an Indiana banana. After finding pawpaws in our neighbors woods, I started the ultimate search for the perfect pawpaw recipe. We found pawpaw pie to be a bit bitter so we tried bread instead. This is an adaptation of a banana bread recipe. Enjoy.

Steps:
- Grease a large loaf pan and preheat oven to 350 degrees.
- Cream butter,sugar,eggs and vanilla with electric mixer.
- Add dry ingredients to creamed mixture.
- Stir in pawpapw puree, mashed bananas and walnuts. Mix until just blended. Do not over mix.
- Pour batter in greased loaf pan.
- Bake at 350 degrees for 1 hour or until knife comes out clean.

PAW PAW BREAD
From "South of the Sahara: Traditional Cooking from the Lands of West Africa" by Elizabeth A. Jackson. This lovely quickbread recipe can easily be doubled. Note: a large fresh papaya will yield about two cups of puree; make sure your papaya is ripe. Also note: papaya is called paw paw in West Africa--and is not related to the North American pawpaw.

- Pre-heat oven to 350 degrees F.
- Butter a 9" loaf pan.
- Beat butter and sugar together until light and fluffy.
- Beat in the eggs one at a time until well mixed.
- Stir in the papaya puree.
- Sift together the flour, spices, salt and baking soda and add to papaya mixture; mix well.
- Stir in the raisins and nuts if you are using them (I like to use raisins that have been soaked in bourbon for this).
- Pour into the prepared pan and bake for about an hour or until tester comes out clean.
- Cool in the pan for about five minutes.
- Run a knife around the edges to loosen the loaf and invert the loaf onto a rack to finish cooling.

PAWPAW CUSTARD
The pawpaw, paw paw, paw-paw, or common pawpaw (Asimina triloba) is a species in the same plant family as the custard-apple, cherimoya, sweetsop, ylang-ylang and soursop. The flavor of the fruit is something like banana custard. The pawpaw is native to the eastern United States and Canada. From the University of Kentucky Extension Service.

Steps:
- Preheat oven to 375°F.
- Mix pawpaw pulp with coconut.
- Layer on bottom of buttered ovenproof casserole dish.
- Heat half and half mixed with the vanilla until bubbles form.
- Beat eggs with salt and sugar and while still beating, pour on the half and half very slowly so as not to curdle the eggs.
- Add the orange rind if using.
- Pour over fruit and place in a pan of hot water.
- Bake in oven for 30 minutes or until custard is set.
- Turn out onto a plate when cool to show off the fruit layer.

- Preheat the oven to 350ºF. Grease a bundt pan or 2 standard-sized load pans (8 x 11) or 5 mini loaf pans. Set aside.
- Whisk together flour, baking soda and salt. Set aside. Cream sugar and butter until light and fluffy. Add eggs one at a time, beating well after each addition. Add the vanilla. Add the pawpaw pulp, and beat to combine. Add the dry ingredients and mix only until the flour is incorporated — don’t overmix.
- Pour batter into prepared pans and place in the oven. (If using mini pans, place them on a sheet pan first.) Bake for 40 to 45 minutes for mini pans or 45 to 60 minutes for the bundt and larger loaf pans. Cake should be brown and should start to leave the sides of the pan.
