I watched Paula make these numerous times on her show and I just now got around to making them myself. I have to say these are by far the best cinnamon rolls I have ever made. The dough is so soft and easy to work with (and can you believe she didn't load it with butter?) and the baked rolls are fluffy, flavorful, and perfect! I made the filling 1/2 white sugar-1/2 brown sugar along with the cinnamon since I prefer a darker, richer filling. The recipe says to bake in a preheated oven for 30 minutes, but I put my rolls into the oven and THEN preheated it and they were baked perfectly after being in the oven for about 25 minutes. What can I say? These are perfect!

Number Of Ingredients 16

1/4 ounce yeast
1/2 cup warm water
1/2 cup scalded milk
1/4 cup sugar
1/3 cup butter or 1/3 cup shortening
1 teaspoon salt
1 egg
3 1/2-4 cups all-purpose flour
1/2 cup melted butter, plus more for pan
3/4 cup sugar, plus more for pan
2 tablespoons ground cinnamon
3/4 cup walnuts (optional) or 3/4 cup pecans (optional)
4 tablespoons butter
2 cups powdered sugar
1 teaspoon vanilla extract
3 -6 tablespoons hot water

Steps:

  • Heat oven to 350 degrees F.
  • In a small bowl, dissolve yeast in warm water and set aside. In a large bowl mix milk, sugar, melted butter, salt and egg. Add 2 cups of flour and mix until smooth. Add yeast mixture. Mix in remaining flour until dough is easy to handle. Knead dough on lightly floured surface for 5 to 10 minutes. Place in well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.
  • When doubled in size, punch down dough. Roll out on a floured surface into a 15 by 9-inch rectangle. Spread melted butter all over dough. Mix sugar and cinnamon and sprinkle over buttered dough. Sprinkle with walnuts, pecans, or raisins if desired. Beginning at the 15-inch side, role up dough and pinch edge together to seal. Cut into 12 to 15 slices.
  • Coat the bottom of baking pan with butter and sprinkle with sugar. Place cinnamon roll slices close together in the pan and let rise until dough is doubled, about 45 minutes. Bake for about 30 minutes or until nicely browned.
  • Meanwhile, mix butter, powdered sugar, and vanilla. Add hot water 1 tablespoon at a time until the glaze reaches desired consistency. Spread over slightly cooled rolls.

1 cup sugar, divided, plus more for sprinkling over the pan
1/3 cup melted shortening or butter
1 teaspoon salt
1 egg
3 1/2 to 4 cups flour, divided, plus more for dusting
1/2 cup softened butter, plus more for greasing
2 tablespoons ground cinnamon
3/4 cup raisins or walnuts or pecans (optional)
4 tablespoons butter
2 cups powdered sugar
1 teaspoon vanilla
3 to 6 tablespoons hot water

Steps:

  • In a small bowl, stir the yeast in warm water until dissolved. Set aside.
  • In a large bowl, stir together milk, 1/4 cup of sugar, 1/3 cup melted shortening or butter, salt, and egg. Add two cups of flour and stir until smooth. Stir in the yeast mixture. Add the remaining flour until the mixture turns into a dough.
  • Dust a clean, dry, and flat surface with flour. Knead the dough for 5 to 10 minutes. Add more flour if the dough is too sticky. Transfer the dough to a well-greased bowl and let rise until doubled, about 1 to 1 1/2 hours.
  • Punch down the dough to remove air bubbles. With a rolling pin, roll the dough into a 15x9-inch rectangle. Spread the melted butter over the dough.
  • In a bowl, combine 3/4 cup sugar and cinnamon. Sprinkle mixture over the dough. Top with raisins, walnuts, or pecans, if using.
  • Roll the dough lengthwise towards you and finish with the seam side down so the filling is sealed in. Pinch the edges to seal the roll. Slice into 12 slices.
  • Grease a baking pan with butter and sprinkle with sugar. Place the cinnamon roll slices close together in the pan. Set aside until the dough has doubled in size, about 45 minutes.
  • Bake the puffy cinnamon rolls in a preheated 350 °F oven for about 25-30 minutes or until browned.
  • While the rolls bake, mix the glaze ingredients - butter, powdered sugar, and vanilla - in a small bowl. Add hot water if it's too thick. Spread over warm, cooked rolls and serve!

3/4 cup water water (98 to 105 degrees F)
2 1/2 cups biscuit mix, plus
1/2-1 cup prepared biscuit mix
1 tablespoon sugar
1/4 cup melted butter

Steps:

  • Preheat oven to 400 degrees F.
  • Dissolve the yeast in the water. Put the 2 1/2 cups of biscuit mix in a large bowl; stir in the sugar. Add the yeast mixture, stirring vigorously. Sprinkle the work surface generously with the remaining 1/2 to 1 cup biscuit mix.
  • Turn the dough out onto the surface and knead well, 15 to 20 times. Shape the dough as desired. (I shape heaping tablespoons of dough into balls). Place on a lightly greased baking sheet, cover with a damp cloth, and let rise in a warm place for 1 hour.
  • Just before putting into oven, brush rolls with melted butter. Bake for 12 to 15 minutes, or until golden brown. Brush the rolls again with melted butter while they're hot.

This is a very simple, but oh so delightful spice cake. I saw Paula make this on her show and since I love Love LOVE cinnamon, had to make one. I did already have everything on-hand because I use spice cake mixes for my gingerbread men. I always stock up at the holidays when they're on sale. Next time you need a coffee cake, serve this one!

1 (3 1/2 ounce) package vanilla instant pudding mix
1 cup sour cream
4 eggs, beaten
1/2 cup corn oil

1/2 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F. Grease a 10-inch tube pan.
  • Combine cake mix, instant pudding, sour cream, eggs, and corn oil and beat together well.
  • In a separate bowl, combine sugar, cinnamon, and pecans.
  • Pour half of batter into prepared pan and sprinkle with sugar mixture, reserving a little to sprinkle on top.

1 cup white sugar
2 teaspoons cinnamon
3 (10 count) cans refrigerated biscuits (10 biscuits each)
1/2 cup butter
1 cup brown sugar
cooking spray

Steps:

  • Preheat oven to 325 degrees.
  • Put the white sugar and cinnamon in the pie plate and mix them together with your fingers until they are completely mixed.
  • Remove the biscuits from the tubes.
  • Place each biscuit on the cutting board and cut each one into fourths.
  • Place each piece of biscuit into the cinnamon sugar and shake it all.
  • around until it is coated. (Do a few at a time.).
  • Put the butter and brown sugar into the pot and heat it over low heat until it is mixed together.
  • Stir with the wooden spoon.
  • Turn off the heat.
  • Spray the Bundt pan with cooking spray.
  • Place the biscuit pieces evenly in the Bundt pan.
  • Pour the brown sugar mixture over the biscuits.
  • Bake the biscuits in the oven for 35 minutes.

  • To serve, turn the Bundt pan upside down onto the cake plate.
  • The biscuits should fall right out.
  • Let the monkey bread cool for a few minutes.
  • Pinch off piece to eat.
