Caramel Apple Cheesecake Bars With Streusel Topping image

1/4 teaspoon nutmeg
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
3 peeled, cored and finely chopped Granny Smith apples
2 large eggs
1/2 cup plus 2 tablespoons divided sugar
2 (8 oz) packages softened cream cheese
1/2 cup caramel topping
1 1/2 cups firmly packed and divided brown sugar
3 cups divided all purpose flour
1/2 cup quick cooking oats
3 sticks softened and divided butter

Steps:

  • Preheat oven to 350 °F.
  • In a medium bowl, combine 2 cups flour and 1/2 cup brown sugar. Cut in 2 sticks butter with a pastry blender until mixture is crumbly. Press evenly into a 13-by-9-by-2 inch baking pan lined with heavy-duty aluminum foil. Bake 15 minutes or until lightly browned.
  • In a large bowl, beat cream cheese with 1/2 cup sugar in an electric mixer at medium speed until smooth. Then add eggs, 1 at a time, and vanilla. Stir to combine. Pour over warm crust.
  • In a small bowl, stir together chopped apples, remaining 2 tablespoons sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture. Sprinkle evenly with Streusel topping. Bake 30 minutes, or until filling is set. Drizzle with caramel topping.

  • In a small bowl, combine 1 cup brown sugar, 1 cup all-purpose flour, 1/2 cup oats and 1 stick softened butter.

3 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 cup butter or 1/4 cup margarine, melted
2 tablespoons finely chopped pecans
3 (8 ounce) packages cream cheese, softened
3/4 cup sugar
3 eggs
3/4 teaspoon vanilla extract
2 1/2 cups chopped peeled apples
1 tablespoon lemon juice
1/4 cup sugar
1/2 teaspoon ground cinnamon
6 tablespoons caramel ice cream topping, divided
sweetened whipped cream
2 tablespoons chopped pecans

Steps:

  • Combine the first five ingredients; press onto the bottom of a lightly greased 9-inch springform pan.
  • Bake at 350 degrees for 10 minutes; cool.
  • In a mixing bowl, beat cream cheese and sugar until smooth.
  • Add eggs; beat on low just until combined.
  • Stir in vanilla.
  • Pour over crust.
  • Toss apples with lemon juice, sugar and cinnamon; spoon over filling.
  • Place cheesecake/pan in a large rectangular baking pan filled with 2 inches of hot water; place in 350 degree oven and bake for 55-60 minutes or until center is almost set.
  • Remove cheesecake from oven and water-filled pan and cool on a wire rack to 10 minutes.
  • Carefully run a knife around edge of pan to loosen.
  • Drizzle with 4 tablespoons caramel topping.
  • Cool for 1 hour.
  • Refrigerate overnight.
  • Remove sides of pan.
  • Just before serving, garnish with whipped cream.
  • Drizzle with remaining caramel; sprinkle with pecans.
  • Store in refrigerator.

1 1/4 cups graham cracker crumbs
1/4 cup butter, melted
1 (9 ounce) package caramels, unwrapped
1 (14 ounce) can sweetened condensed milk
3 tablespoons milk
1 teaspoon vanilla
3 (8 ounce) packages cream cheese
4 eggs
1/2 cup semi-sweet chocolate chips (optional)
2 tablespoons milk (optional)

Steps:

  • Preheat oven to 300°F.
  • Mix the graham cracker crumbs and the melted butter and press into the bottom of a 9" springform pan.
  • Mix the caramels, sweenened condensed milk and 3 tablespoons milk in a large microwave safe bowl, microwave for approximately 5 minutes, stirring well every minute or so until the caramels are melted and the mixture is smooth.
  • Add the vanilla and stir well.
  • Add the cream cheese and mix with an electric mixer until combined then mix on high for a minute or so.
  • Add the eggs one at a time, mixing until well combined.
  • Pour the mixture over the crust and bake for 60 minutes at 300°F.
  • Remove from oven and immediately run a knife around the edge of the pan to help prevent cracking.
  • Cool then chill in refrigerator for several hours before serving.
  • Optional chocolate topping: mix chocolate chips with two tablespoons milk and microwave for approximately 1 minute, stir until smooth and creamy then spread on top of cheesecake.

2 1/2 cup all purpose flour
1/2 cup packed light brown sugar
3/4 teaspoon salt
1/2 cup (1 stick) softened unsalted butter
2 (8 oz) packages at room temperature fat free cream cheese
1/3 cup granulated sugar
1 large egg
1 large egg white
1 teaspoon vanilla extract
2 cored and finely chopped Granny Smith apples
1/2 cup old-fashioned rolled oats
1/4 cup packed brown sugar
2 tablespoons canola oil
3/4 teaspoon ground cinnamon
pinch nutmeg
1/4 cup fat-free caramel sauce

Steps:

  • Preheat the oven to 350 °F. Line a 9 x 13-inch baking pan with foil, allowing the foil to extend over the rim of the pan by 2 inches. Spray the foil with nonstick spray.
  • Pulse 2 cups flour, light brown sugar, and 1/2 teaspoon salt in a food processor until combined. Add the butter and pulse until crumbly. Transfer the mixture to the baking pan, pressing firmly to form an even layer. Bake until the crust is set, about 15 minutes. Transfer to a rack.
  • Meanwhile, with an electric mixer on medium speed, beat the cream cheese in a large bowl until smooth. Gradually beat in the sugar until blended. Beat in the egg, egg white, and vanilla until combined. Pour the filling evenly over the warm crust. Sprinkle the chopped apples evenly over the filling.
  • To make the topping, using a fork, stir together 1/2 cup flour, oats, brown sugar, oil, cinnamon, 1/4 teaspoon salt, and nutmeg in a small bowl until crumbly. Sprinkle evenly over the chopped apples. Bake until the filling is set and the topping is lightly browned, about 25 minutes. Let cool completely in the pan on a rack. Drizzle with the caramel sauce. Refrigerate at least 1 hour or up to 8 hours. Lift out using the foil as handles. Cut into 24 bars.

2 tablespoons granulated sugar
1 1/2 cups graham crackers, crushed
1/4 teaspoon cinnamon
16 ounces cream cheese, softened
2 1/2 tablespoons butter, softened
1 cup granulated sugar
2 eggs
1 cup sour cream
1 tablespoon cornstarch
1 teaspoon vanilla
2 large granny smith apples, sliced
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup water
1/4 cup granulated sugar
1/2 cup light brown sugar, packed
1/4 cup flour
1/2 teaspoon cinnamon
3 tablespoons butter, cold
1/4 cup walnuts, chopped
1/4 cup caramel ice cream topping
1 pint heavy whipping cream
3 tablespoons granulated sugar
1/2 teaspoon vanilla

Steps:

  • In a small bowl mix together ingredients for crust. Pour into a 9 inch spring form pan and press down. I use the bottom of a measuring cup. Set aside. In a medium sauce pan and ingredients for apple filling. Mix and cook on low for 10 to 12 minutes stirring occasionally. While your apples are cooking cream together cream cheese and butter for at least five minutes until light and fluffy. Add sugar, eggs, vanilla and cornstarch mix completely. Add sour cream. Only mix until sour cream is combined. Do not over mix this will create air pockets in your cheesecake. Pour half of cheesecake mixture over the crust and layer with apples. Drizzle with a little caramel. Pour remaining batter over the top of the apples and sprinkle with brown sugar topping. Bake at 350 for 35 minutes. Turn off the oven and leave cheesecake in oven for an additional 15 minutes. Refrigerate for at least two hours. While cheesecake is chilling beat heavy whipping cream and 3 tablespoon granulated sugar and 1/2 teaspoon vanilla to stiff peaks. After cheesecake is set up remove from pan and drizzle with remaining caramel. Decorate with whipping cream and serve.
