BAKED BRIE EN CROUTE
This MY tweaked version of a recipe by Paula Deen (She rocks my world!) AND, this is quite similar to the appetizer at THE CAV that we fell head over heels in LOVE with! I am often torn with brie between "rind" or NO RIND". Speaking from experience, this appetizer needs the rind, or it will simply be volcanic OOZE all over you baking sheet! So, I slice off just the TOP rind in order for the preserves and yummy toasted nuts to blend into the cheese. Also, please feel free to use ANY flavor of fruit preserve that suits your tastes. I listed apricot and strawberry because that's what I have used in the past! : >

Steps:
- Preheat oven to 375°F.
- Defrost puff pastry for approximately 15 to 20 minutes and unfold.
- In a saucepan, melt the butter over medium heat.
- Saute the walnuts in the butter until golden brown, approximately 5 minutes.
- Add the cinnamon and stir until walnuts are coated well.
- Carefully slice the top rind ONLY off of the brie round.
- Spread your choice of fruit preserves over the top of the brie.
- Then place the walnut mixture on top of the Brie ad fruit and sprinkle the brown sugar over the top.
- Lay the puff pastry out on a flat surface.
- Place the brie in the center of the pastry.
- Gather up the edges of the brie, pressing around the brie and gather at the top.
- Gently squeeze together the excess dough and tie together with a piece of kitchen twine.
- Brush the beaten egg over top and side of Brie.
- Place Brie on a cookie sheet and bake for 20 minutes until pastry is golden brown.
- Serve with crackers.
BRIE EN CROUTE
Steps:
- Heat the oven to 400 degrees F. Beat the egg and water in a small bowl with a fork or whisk.
- Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 14-inch square. Cut off the corners to make a circle. Sprinkle the almonds and parsley in the center of the circle. Top with the cheese. Brush the edge of the circle with the egg mixture. Fold the pastry up over the cheese to cover. Trim the excess pastry and press to seal. Brush the seam with the egg mixture. Place seam-side down onto the baking sheet. Decorate the top with pastry scraps, if desired. Brush with the egg mixture.
- Bake for 20 minutes or until the pastry is golden brown. Let stand for 45 minutes. Serve with the crackers.
PAULA DEEN'S BRIE EN CROUTE #2
I was looking to use up some Brie cheese and found this recipe on Food Network. She made this recipe for the "Engagement Brunch" show. After receiving my 1st review, I went to the recipe and now found a video of her making this recipe and it is different than what the posted directions are for it. Steps:
- Preheat oven to 375 degrees F.
- Defrost 1 sheet of puff pastry for approximately 15 to 20 minutes and unfold (place remaining sheet in freezer for later use).
- Melt butter in a saucepan over medium heat.
- Saute nuts in butter until golden brown, approximately 5 minutes.
- Place nuts on top of Brie and spread jam on top of nuts.
- Gently roll pastry with a rolling pin to increase the size of the sheet 1 to 2 inches in each direction.
- Brush both sides of the sheet with beaten egg.
- Center the wheel of Brie on top of the pastry sheet.
- Bring all four corners of the sheet together above Brie and twist slightly to form a "bundle."
- Tie gathered pastry with kitchen/cooking string (tie string in the form of a bow), arranging pastry until you are satisfied with the "bundle" shape.
- Place "bundle" on an ungreased cookie sheet and bake for 20 to 25 minutes until pastry is golden brown.
- Serve with top-quality crackers.
BRIE EN CROUTE
This pastry-wrapped cheese takes only minutes to make. Brie is topped with walnuts, cinnamon & brown sugar & then wrapped in pastry before baking. Serve with crackers.

- Preheat oven to 400°F
- In a small bowl, mix together the walnuts, 1 1/2 tbsp of butter, rosemary and cayenne; set aside.
- Unfold the pie crust on a greased baking sheet and spoon the walnut mixture into the center of the dough.
- Spread into a 5" circle.
- Place the brie on top of the walnut mixture and fold the dough over the brie, starting at two opposite sides, bringing to the center and pinching to seal.
- Fold in remaining pastry ends to the center, crimping as necessary, and press to seal.
- Invert brie onto a baking sheet and brush the top with the remaining melted butter.
- Bake for 20 to 25 minutes, or until the pastry is browned.
- Cool to room temperature before serving with toasted slices of French baguette and fruit chutney.

PAULA DEEN'S CRANBERRY BRIE

- Allow the puff pastry to thaw approximately 30 minutes.
- Preheat the oven to 400.
- In a small bowl, beat the egg with 1 teaspoon water to make an egg wash. Set aside.
- Lightly flour a large cutting board. Roll out the pastry to a 14" square. Cut off the corners to make a modified circle shape, reserving the cut pieces to make decorative shapes later.
- Spread the apricot preserves on the circle of dough, leaving a 2" margin around the edges.
- Soak the dried cranberries in the orange juice for approx 5 minutes, until they have absorbed some liquid and softened. Drain the excess juice.
- Arrange the cranberries on top of the apricot preserves. Arrange the almonds evenly on the cranberries. Place the brie on top.
- Brush the edges of the pastry with the egg wash. Fold up to completely seal the brie in the pastry, using additional egg wash if necessary, and pinching to help "glue" the edges together.
- Lightly grease a baking sheet or spray with vegetable oil spray. Place the brie seam side down on the sheet. Use small cookie cutters to cut out decorative shapes from the leftover pastry and place on the top. Brush with remaining egg wash.
- Bake for 20 minutes.
- Transfer to a serving plate. Allow to sit for at least 30 minutes before serving! If you cut into it too early, the cheese will run out onto your serving plate.
- Serve with water crackers.

- Preheat oven to 350°F
- Line a rimmed baking sheet with parchment.
- Unroll dough and place on lined baking sheet.
- Press seams together to form a rectangle.
- Place brie in the middle of dough.
- Brush edges lightly with beaten egg, and then wrap around brie, leaving the brie uncovered in the center. It should look like a volcano.
- Bake in a preheated oven for 20-25 minutes.
- Combine the jam and hot pepper sauce, if using.
- Spoon jam into well on top of brie, and sprinkle with toasted nuts.
- Let set at least 30 minutes before serving so cheese can reform.
