FROZEN LEMONADE PIE

Steps:
- For the crust: Preheat the oven to 350 degrees F.
- In medium bowl, stir together the cracker crumbs, sugar and the melted butter until combined and resembles a wet sand mixture. Pour into a pie plate and press the mixture firmly along the bottom and sides. Bake for 7 to 8 minutes. Remove from the oven and let cool completely.
- For the filling: In a large bowl, add the sweetened condensed milk and whipped topping. Fold the two together gently until combined, being careful to keep the mixture light and fluffy. Add the lemonade concentrate and continue to gently fold. Be sure to avoid letting the mixture get too liquid-y. Pour the filling into the pie crust. Place in the freezer to chill overnight.
- Sprinkle with a little candied lemon peel and serve!
PAULA DEEN'S LEMON SALAD DRESSING
I just saw this recipe on her show, and had to try it out! It is delicious, refreshing, and brightens up any salad. Simple ingredients that you always have on hand. No need to buy premade bottled dressing when you can make it for cheap at home, and tastes much better!!!

- In a glass jar with a tight lid, combine lemon juice, oil, sugar, garlic, and Dijon mustard.
- Season with salt and pepper.

PAULA DEEN'S SPIKED CRANBERRY LEMONADE

- In a medium saucepan, bring 6 cups water to a boil.
- Add the tea bags, remove from the heat, and let steep for 20 minutes. Discard the tea bags.
- In a pitcher or serving bowl, combine the tea, lemonade concentrate, sugar, almond extract, and enough water to make 1 gallon. Stir.
- Garnish with sliced lemons, if desired. Enjoy!

PAULA'S LEMON CAKE (PAULA DEEN)

- Preheat oven to 350 degrees F. Grease and flour 3 (9-inch) cake pans.
- To make the cake: Using an electric mixer, cream butter until fluffy. Add sugar and continue to cream well for 6 to 8 minutes. Add eggs 1 at a time, beating well after each addition. Add flour and milk alternately to creamed mixture, beginning and ending with flour. Add vanilla and continue to beat until just mixed. Divide batter equally among prepared pans. Level batter in each pan by holding pan 3 or 4-inches above counter, then dropping flat onto counter. Do this several times to release air bubbles and assure you of a more level cake. Bake for 25 to 30 minutes or until golden brown. Cool in pans 5 to 10 minutes. Invert cakes onto cooling racks. Cool completely.
- To make the frosting: Place sugar, cream of tartar or corn syrup, salt, water, and egg whites in the top of a double boiler. Beat with a handheld electric mixer for 1 minute. Place pan over boiling water, being sure that boiling water does not touch the bottom of the top pan. Beat constantly on high speed with electric mixer for 7 minutes. Beat in vanilla.
- To make the filling: Place the ingredients in the double boiler over boiling water. Don't let top pan touch the water. Cook and stir until mixture begins to gel or thicken. Remove from heat and allow to cool.
- To assemble, add 1 tablespoon of filling to the cake pedestal. Run hands along the side of the cake to remove excess crumbs. Place the cake layers on the pedestal, spreading filling between the layers and on top. Spread the sides and top of the cake with the remaining filling. Frost top and sides of cake with frosting. Garnish with a lemon wedge and a sprig of mint.
VANILLA LEMONADE
This is a Paula Deen recipe that combines the great taste of lemonade with vanilla beans. Wonderful drink for hot summer days. You will really like this simple recipe. Prep time does not include cooling time.

- In a medium saucepan, combine 2 cups water, sugar, and vanilla bean and bring to a boil over medium-high heat; boil for 2 minutes.
- Remove from heat, and cool completely.
- Stir in lemon juice and remaining 2 cups water; refrigerate.
- Serve chilled over ice. Garnish with maraschino cherries, fresh mint, and lemon slices, if desired.
