PAT'S DO AHEAD PARTY CHICKEN
My husband lived on a street where a neighborhood chef would create dishes, then call the neighbors at all hours. They would stumble over in PJs and tast the latest creation. Then he would throw them all out and go to bed. He was famous for this chicken recipe. I found stuffed it in a cookbook, got the story, tried the dish, got the rave reviews, and am sharing because a relative said "FINALLY, a new Chicken recipe!" Don't be afraid to make this for the family dinner for a trial. Great served with steamed rice and roasted brocolli. If you make chafing pans of this, double the recipe here. You can wing the rest to accomodate any size crowd. The muenster holds up well, and if you are not a mushroom fan, just leave them out!

Steps:
- Cut chicken breasts in half lengthwise, and pound slightly with a meat mallet (having chicken in a durable zipper bag.).
- Place pounded chicken in a bowl, pour scrambled egg over the chicken, stirring to coat chicken. Cover and place bowl in the refrigerator for a 2 or more hours.
- Slice mushrooms. Saute for just a few minutes in melted butter. set aside.
- Dredge chicken pieces in seasoned (or plain) bread crumbs, and place on a platter.
- In an electric skillet, melt enough butter to coat bottom of pan, on med hi heat.
- Fry chicken pieces just until lightly browned, turning to fry other side, and adding butter to the pan as needed. Chicken WILL NOT be DONE at this point.
- Place browned chicken in a 13x9 pan, (or the size to fit your party!).
- Cover chicken with sliced muenster cheese.
- Place sauteed mushrooms over muenster cheese. .
- ** *If desired, you can stop here, cover with foil and refrigerate***.
- AT Cooking time Preheat oven to 350.
- Mix bouillon with boiling water, set aside until dissolved.
- Pour dissolved bullion mixture over the top of the chicken.
- Cover pan with foil.
- Bake 45 minutes with foil on.
- Remove foil and bake 15 additional minutes to brown cheese. (you can also carefully broil for a few minutes here instead, but watch it carefully!).
- Serve with a spoon handy for the wonderful sauce.

SHOW-OFF ROAST PORK
My favorite do-ahead party dish. Excellent taste, very easy to make, and perfect for everything from a casual to a formal dinner party, or even a buffet. It's great served with braised belgian endive or lightly sauteed broccoli rappe, green salad, wine, and even pasta. Versatile and easy dish. My go-to dish when we've got friends coming over, and I can't think of what to make.

Steps:
- Mix together butter, prosciutto, garlic, rosemary, parmesan, and black pepper and set aside (can be made in advance and refrigerated up to one day, but warm to room temperature before proceeding).
- Preheat oven to 350 degrees F.
- Cut slits about an inch or so long and a half inch or so deep all over the top of the roast.
- Spread butter mixture over the roast, using the handle of a spoon to get it into the slits you made earlier (very important).
- (At this point, you can wrap roast in plastic and refrigerate overnight and up to 1 day.) Put prepared roast in a roasting pan, pour wine slowly over it, and cook for about 1 1/4 to 1 1/2 hours, depending on the size of the roast, basting about every 30 minutes or so with pan drippings.
- Remove from oven, cover with aluminum foil and let rest for about 15 minutes.

- In a greased 13-in. x 9-in. baking dish, arrange beef slices to evenly cover bottom of dish. Top with chicken breasts. Combine the soup and sour cream; pour over chicken. , Bake, uncovered, at 350° for 35 minutes or until the chicken juices run clear. Serve over rice if desired.

This is an easy, yet simply elegant recipe that is one of my mother's specialties ! The extra sauce is great served over rice or noodles.

- Wrap each breast in 1/2 piece of bacon Line bottom of casserole dish with chipped beef.
- Mix together sour cream and soup.
- Place chicken in dish.
- Add sauce over top.
- Bake at 375 degrees for 3 hours.
- *Tip*:mouth-watering tender if prepared night before--bake next day.
MOM'S DINNER PARTY CHICKEN
My mother liked to entertain when I was growing up and she gave a lot of dinner parties. This wonderful recipe was one of her favourite dishes because it could be prepared ahead of time and popped into the oven shortly before her guests arrived;and she always served it with her savoury Company Rice. I now make it for my family and friends on special occasions.

Steps:
- Brown chicken in margarine in large frying pan, a few pieces at a time.
- Line a large baking dish big enough to hold chicken with aluminum foil, shiney side up.
- Place browned chicken in pan.
- Cover each chicken piece generously with margarine (I use about a 1/2 to 1 tablespoon per each piece).
- Mix the 2 tins of cream of mushroom soup and the tin of milk together and wisk until smooth.
- Pour over chicken and bake, uncovered, at 350 for 1 hour.
- Meanwhile, cube the 4 slices of bread and toast in margarine in frying pan with almonds until bread and almonds are nicely browned.
- Remove chicken from oven.
- Sprinkle sherry over chicken;sprinkle almonds and toasted bread cubes evenly over all.
- Return to oven, and cook for another 30- 45 minutes longer or until done (If you find the chicken getting a little dry add more sherry and milk).
