Steps:
- Heat the butter and oil in a large skillet over medium heat. Add the garlic and onions and saute for a minute or so. Pour in the tomato sauce, add sugar, salt and pepper to taste and stir. Cook over low heat for 25 to 30 minutes, stirring occasionally.
- Cook the pasta according to the package directions. Drain, reserving 1 cup of pasta water.
- Remove the sauce from the heat and stir in the cream. Add cheese to taste, then check the seasoning. Stir in the pasta and thin with a little pasta water if needed. Add the chopped basil and serve immediately.

- In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Heat olive oil in a large skillet over medium high heat. Add sausage, and cook, stirring frequently, until sausage is lightly browned, about 3-4 minutes; set aside. To make the cream sauce, melt butter in a large skillet over medium heat. Add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in chicken broth and cook, whisking constantly, until incorporated, about 1-2 minutes. Stir in heavy cream, sun dried tomatoes, Parmesan, oregano, basil and red pepper flakes until slightly thickened, about 1 minute. Season with salt and pepper, to taste. Stir in pasta and sausage until well combined, about 1-2 minutes. Serve immediately, garnished with parsley, if desired.

- Melt the butter in a pan then add the onion. Cook until soft and translucent.
- Add the garlic, basil and dried herbs (if using) and cook for another 30 seconds.
- Pour in the cream and allow to come to a simmer. Simmer for 5-7 minutes until the sauce covers the back of a spoon easily.
- Transfer sauce to a food processor or blender (or use an immersion blender) and blend until smooth.

PASTA SERVED WITH AVOCADO SAUCE WITH SUN-DRIED TOMATOES
This is a lovely, creamy sauce and the sundried tomatoes break up the avocado flavour nicely. This recipe responds well to adjusting the proportions to taste. The weight for the sundried tomatoes is their dehydrated weight- I use about half a pack. If using smaller avocados, I find 4 works best to make the sauce thick enough. To make this dish vegetarian, use a vegetable stock cube instead of chicken.

- Finely chop the sundried tomatoes and set aside.
- Halve the avocados and remove the pits and peel. Coarsely chop the flesh.
- Melt the butter in a saucepan and add the garlic. Cook for 1 minute.
- Add the cream and chopped avocados. Increase the heat (but don't let the cream boil), stirring constantly and breaking up the avocado flesh with a spoon or fork. Crumble in the stock cube for flavour.
- Meanwhile, set the pasta to cook as per instructions (if using dried pasta, start boiling it earlier).
- When the avocado has blended in, add the sundried tomatoes. Season with salt and pepper if preferred.
- When cooked and drained, divide the pasta among four bowls and spoon the sauce over the top.
- Sprinkle with grated parmesan and serve immediately.

- Boil the pasta in enough water according to the instructions on the package.
- A few minutes after you started the pasta, start cooking the onion in the olive oil in a large saucepan.
- Add the garlic and carrot and continue to cook over a medium-low flame for another 5 minutes or so.
- Add the zucchini and grilled peppers and continue to cook.
- Add the spices (pepper and oregano).

- Cook pasta until al dente.
- Meanwhile, heat oil reserved from tomatoes in heavy large skillet over medium heat.
- Add garlic and cook 30 seconds.
- Add sun-dried tomatoes, crushed tomatoes, olives and sugar and bring to boil.
- Reduce heat and simmer until sauce thickens slightly, about 4 minutes.

CREAMY SUN-DRIED TOMATO CHICKEN PASTA

- Get all the prep done before you start cooking: cut the chicken into bite-sized pieces, mince the garlic and chop the sun-dried tomatoes into strips.
- Bring a large pot of generously salted water to a boil and cook pasta until al dente. Drain, reserving 1/4 cup of cooking water.
- Heat oil and butter in a large skillet over medium high heat. Add chicken, cook until it starts to brown. Stir in spices, cook until crispy and golden brown. Reduce the heat to medium low and add garlic, cook until fragrant, about 2 minutes.
- Pour in chicken broth, stir with a wooden spoon to dissolve the brown bits on the bottom of the skillet, simmer for 2 minutes. Add sun-dried tomatoes, cook for 1 minute.
- Pour in cream, bring to a boil. Stir in cream cheese and simmer until sauce starts to thicken. Toss with pasta, simmer for 1 minute. Adjust salt and add a splash of cooking water to thin out the sauce.

- Bring 6 cups of water to a boil in a 3-quart sauce pan. Add the tomatoes and simmer for 2-3 minutes. Remove pan from heat and set aside.
- In another 3-quart saucepan, soften the onions in the oil over medium heat for 5-7 minutes, then add carrots, garlic, cinnamon, orange peel, black pepper, cayenne and salt.
- Reduce heat to low, cover the pan, and simmer for 20 minutes.
- Drain tomatoes and add them to the onion mixture along with 6 cups of fresh water. Raise heat to high and bring sauce to a boil.
- Reduce heat to low and simmer, uncovered, for 10 minutes.

- Note: if using sun-dried tomatoes in oil (in a jar), make sure to drain sun-dried tomatoes from oil, before using them. Reserve 2 tablespoons of this drained oil for sauteing as described below:
- In a large skillet, saute minced garlic and sun-dried tomatoes (drained from oil) in 2 tablespoons of oil (reserved from the sun-dried tomatoes jar - see note above) for 1 minute until garlic is fragrant.
- Add shrimp, sprinkle with a small amount of salt, paprika, and cook on medium heat for about 2 more minutes.

- In a large pan, heat 1 TBS of the sun-dried tomato oil. Add shrimp to the pan and cook on both sides until just pink. (about 2 mins) Remove the shrimp from the pan and set aside.
- To the same pan, add a bit more oil or butter, cook garlic, shallots and oregano until fragrant and begin to change colours. Add the tomato paste and allow to caramelize a few minutes. This will further enhance the tomato flavour and add a nice sweetness. About 3 minutes. Add the sun-dried tomatoes (chopped or whole) stir to combine and add the vodka. Bring to a boil and let that simmer 10 minutes until the alcohol has cooked down. Scrape the bottom of the pan with a rubber spatula or wooden spoon to get all those brown bits.
- Once the vodka has been added and is cooking down it's time to cook the pasta. To the hot water add a generous amount of salt and toss in pasta. Cook al dente. Should be about 7 minutes. Check the noodles at this point to see if their fully cooked. Scoop out a bit of pasta water and reserve that for the sauce.
